BAKED BRIE WITH APRICOT PRESERVES



Baked Brie with Apricot Preserves image

A sweet, savory dish that's filled with oooey gooey brie and sweet apricot preserves.

Number Of Ingredients 4

8 oz. brie
1 sheet thawed puff pastry
2-3 tbsp apricot preserves (you can use any kind you'd like!)
1 beaten egg

Steps:

  • Preheat oven to 400 degrees.
  • Roll out your sheet of thawed puff pastry. Spread out on counter top with flour under it in needed. Roll out the pastry until the edges are even, just enough to get the crinkles out at the ends.
  • Place brie in the center of the pastry. Add 2-3 tbsps of apricot preserves to completely cover the top of brie.
  • Wrap the brie up neatly - one side at a time.
  • Beat one egg. Brush onto pastry until fully covered.
  • Move onto lined baked sheet and bake for 35 minutes. Let it cool for 10 minutes.
  • Serve hot with crackers, fruit, or just eat with a fork! Enjoy.

6 slices black forest ham
½ (8 ounce) wedge Brie cheese, sliced
2 tablespoons apricot preserves
1 tablespoon Dijon mustard
4 thick slices Italian bread
1 tablespoon olive oil

Steps:

  • Assemble the sandwiches by layering the ham, brie cheese, apricot preserves, and mustard in equal amounts on two pieces of bread, topping with the remaining two slices of bread. Brush the top of each sandwich with olive oil.
  • Heat a grill pan over medium heat. Once the pan is hot, lie the sandwiches, oiled side down, in the pan. Brush the top of each sandwich with oil. Cook each side until the bread is golden brown, about 3 minutes per side.

Note: the apricot preserve is a pretty strong flavor. So, use wisely. So, this was quite experimental for me. I apologize that there's no photo. I ate it before I thought to take a picture. This turned out really good, I think. A little heavy on the preserves on the first attempt, but a good blend of sweet and savory.

2 medium eggs
salt and pepper (to taste)
triple creme brie cheese
2 slices ham (thin slices)
apricot preserves
olive oil

Steps:

  • In a bowl, scramble up one jumbo egg with some a little almond milk and salt/pepper to taste. Also, cut some thin pieces of triple creme brie, about 1/8" x 1" pieces. Enough to go about 80% the length of the omelette.
  • Fry some thinly sliced ham (I used store brand sandwich meat, Black Forest Ham because it was what I had). Set ham aside.
  • With skillet on medium heat, soak a paper towel with olive oil and wipe the surface of the skillet.
  • Pour egg into skillet.
  • Almost immediately lay the cheese, then ham, then a thin layer of apricot preserves.
  • Do not cook all the way through (this will ensure that the egg doesn't get too crispy to fold). Fold into omelette, and leave just long enough for the cheese to start to melt.
  • Serve with bacon, of course.

Folks will think you fussed over this pretty appetizer, but it took our Test Kitchen only minutes to top a round of smooth and creamy brie with warm sweet apricots. This is one easy appetizer certain to make any occasion "special."

1/2 cup chopped dried apricots
2 tablespoons brown sugar
2 tablespoons water
1 teaspoon balsamic vinegar
Dash salt
1/2 to 1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
1 round Brie cheese (8 ounces)
Assorted crackers

Steps:

  • Preheat oven to 400°. In a small saucepan, combine first five ingredients; bring to a boil. Cook and stir over medium heat until slightly thickened. Remove from heat; stir in rosemary. , Trim rind from top of cheese. Place cheese in an ungreased ovenproof serving dish. Spoon apricot mixture over cheese. Bake, uncovered, until cheese is softened, 10-12 minutes. Serve warm, with crackers.

4 thin slices raisin-pumpernickel bread
2 tablespoons apricot preserves
1 tablespoon Dijon mustard
1/4 pound Virginia ham, thinly sliced

Steps:

  • Spread one bread slice with half of the preserves. Spread another slice with half of the mustard. Fill with half of the ham slices and close. Repeat, using the remaining bread, preserves, mustard and ham. Trim the crusts from the 2 sandwiches. Cut each one into 4 finger-sized portions.

Here's what you need: butter, white onion, salt, fresh thyme, large croissants, apricot preserve, wheel of brie, Castle Wood Reserve® Uncured Honey Ham, baby arugula, strawberries

1 tablespoon butter
½ white onion, thinly sliced
1 pinch salt
1 sprig fresh thyme
2 large croissants
4 tablespoons apricot preserve
½ wheel of brie, sliced
10 slices Castle Wood Reserve® Uncured Honey Ham
1 cup baby arugula
2 strawberries, cut on half, for garnish

Steps:

  • Preheat the oven to 350ºF.
  • Melt butter in a medium pan over medium heat. Add onion and salt and cook until onion is golden brown, about 10 minutes. Add in the sprig of thyme and cook for another 2 minutes.
  • Slice croissants in half and place on a parchment-lined baking sheet, cut side up. Spread apricot preserves on the top half and place 3 pieces of brie cheese. On the bottom croissant half, place caramelized onions and folded slices of Castle Wood Reserve® Uncured Honey Ham. Repeat with the other croissant.
  • Bake open-face for 10 minutes.
  • Remove from the oven and add arugula. Close the sandwiches and serve with a skewered strawberry for a garnish.
  • Enjoy!
