HAM AND CHEESE PASTA BAKE

Ham and Cheese Pasta Bake image

Creamy, cheesy Ham and Cheese Pasta Bake - with parmesan, mozzarella, and ham. This cheesy pasta is comfort food at it's best and a delicious weeknight meal.

Provided by Elise Bauer

Categories     Dinner     Casserole     Comfort Food

Time 45m

Yield 6

Number Of Ingredients 17

12 ounces fusilli pasta
Salt for pasta water
4 tablespoons butter
2 cloves garlic, minced,
4 tablespoons flour
2 1/2 cups milk
1/2 cup heavy whipping cream
1 cup water
1/4 teaspoon ground nutmeg (more to taste)
1 teaspoon ground black pepper (more to taste)
1 teaspoon Italian seasoning (or a mix of dried oregano, thyme, and basil)
3/4 teaspoons salt (more to taste)
3 ounces (about 1 cup, packed) shredded or grated Parmesan cheese
4 ounces (about 1 cup, packed) shredded Mozzarella cheese
10 ounces diced ham (about 2 cups)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh green onion greens or chives

Steps:

  • Make pasta: Put a big pot of salted water onto boil on high heat for the pasta (4 quarts, 2 tablespoons salt). While the pasta water is heating, prep the other ingredients. Once the water has reached a rolling boil, add the pasta and stir so it doesn't stick to the bottom of the pan. Let the water return to a rolling boil and cook, uncovered, for 9 to 10 minutes, until the pasta is "al dente", cooked through but still slightly firm to the bite.
  • Make roux: Melt the butter in a large (3 to 4 quart), thick-bottomed pot on medium heat. Add the minced garlic. Let the garlic sizzle for a few seconds. Add the flour and whisk so that any lumps are dissolved. Let the roux (flour and butter) bubble and cook for a minute or two.
  • Make the sauce: Slowly add the milk and cream, a quarter cup at a time, whisking until incorporated after each addition. Increase the heat to medium high. Add 1⁄4 teaspoon of ground nutmeg and 1⁄2 teaspoon of ground black pepper. (You may want to increase these later to taste.) Add 1⁄2 teaspoon of Italian seasoning. Add half of the shredded Mozzarella and Parmesan cheeses, whisking until melted and incorporated into the sauce. Add 3/4 teaspoon of salt (again, you may want to increase this to taste). Stir in 1 cup of water (can use pasta cooking water if you want).
  • Preheat oven to 400°F
  • Combine pasta with sauce, ham, parsley, onion greens: Drain the cooked pasta and add it to the sauce. Add the ham. Add the chopped parsley and onion greens or chives. Gently stir to combine. Taste, and add more nutmeg, salt, pepper, or Italian seasoning to taste.

Categories     Main course

Yield Serves 1

Number Of Ingredients 9

100g/3½oz dried pasta shapes
100g/3½oz frozen peas
knob of butter or splash of olive oil
1-2 spring onions, white and green parts separated and finely sliced
100ml/3½fl oz double cream
25g/1oz Parmesan, finely grated, plus extra to serve
1 thick-cut slice of ham, diced
½ lemon, zest and juice
salt and freshly ground black pepper

Steps:

  • Bring a large saucepan of salted water to the boil. Tip in the pasta and cook for 9-11 minutes until done to your liking, adding the frozen peas for the final minute.
  • Meanwhile, heat a knob of butter or splash of oil in a frying pan, add the spring onion whites and fry for a minute until just softening. Turn off the heat and set aside until the pasta is cooked.
  • Drain the pasta and peas, reserving a ladleful of the cooking water, and tip into the frying pan. Add the cream, Parmesan and ham with 3 tablespoons of the pasta water. Stir over a low-medium heat until the cream starts to bubble, then turn the heat down and stir briefly until the sauce is clinging to the pasta. (If you overcook it and it starts looking dry, add a little more of the pasta water.)
  • Stir in the lemon zest and spring onion greens, then season with salt, pepper and lemon juice to taste. Serve immediately with extra Parmesan.

1/2 cup grated parmesan cheese
Kosher salt and fresh black pepper to taste
1 ounce cream cheese, softened

Add the leftover ham and frozen peas and carrots to the skillet and cook for 4-5 minutes until the frozen vegetables are warmed through.
  • Sprinkle the flour into the skillet and stir to combine until the flour is completely mixed in with the ham and vegetables. Slowly pour in the cream, stirring as you go. Add the parmesan cheese, stir and bring to a simmer.
  • Simmer the sauce for 5 minutes until thickened, then stir in the cream cheese until it's completely melted into the sauce.
  • Pour the sauce over the pasta and stir to combine. Serve with more parmesan cheese and fresh black pepper if desired.

PASTA WITH HAM, PEAS AND CREAM

Pasta With Ham, Peas and Cream image

When my children were younger, this was always one of their favourite teas and is now one of their favourite suppers. It serves 2 or 3 children - double quantities for teenagers and above. For US cup measures, use the toggle at the top of the ingredients list.

Provided by Nigella

Yield Serves: 2-3 children

Number Of Ingredients 5

200 grams farfalle pasta (or other short pasta)
100 grams frozen petits pois
150 millilitres double cream
150 grams diced ham
2 tablespoons grated Parmesan cheese

Steps:

  • Cook the pasta according to packet instructions in plenty of salted boiling water, and then after 5 minutes add the peas to the pasta water. When the pasta is cooked, drain with the peas. • Cook pasta according to package directions – only cooking until al dente since pasta will continue to cook and soak up liquid when added to the skillet.
  • While the pasta is cooking, in a large skillet, heat butter and olive oil over medium heat until butter is melted. Add pepper, onion, and garlic and cook until vegetables are tender, about 4-6 minutes. Add ham, basil and oregano and continue to cook, stirring occasionally, for another 2-3 minutes. Stir in broth (or stock) and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for about 10 minutes or until liquid is reduced by half (at first it looks like it will be way to “brothy” but never fear, if you are patient, it will reduce!).
  • Stir drained pasta into ham and vegetable mixture. Add 1/2 cup parmesan cheese and toss. Sprinkle parsley and remaining parmesan cheese over the top of the pasta. Serve immediately.
