Steps:

  • Dice ham into 1/2-inch cubes.
  • Combine ham and cheese with macaroni, celery, onion and pickle.
  • Mix mayonnaise and mustard; then stir into macaroni mixture, mixing well.

1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

1 (10 ounce) package frozen peas, cooked and drained
3/4 cup sour cream
3/4 cup mayonnaise
1/4 cup lemon juice
1/2 cup grated parmesan cheese
2 teaspoons tarragon
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon liquid hot pepper sauce (if you want a zing)

Steps:

  • In large bowl combine, macaroni, ham, cheese cubes and peas.
  • In smaller bowl, mix, sour cream, mayo, lemon juice, parmesan, and seasonings.
  • Pour dressing over macaroni mix and toss to blend well.
  • Cover.
  • Refrigerate several hours.
  • Remove 30 minutes before serving.
  • Toss gently to mix.

1 c. mayonnaise
1 T. white vinegar
1 tsp. granulated sugar
1/2 tsp. salt
1/4 tsp. pepper

Steps:

  • Cook macaroni in boiling salted water according to package directions. Drain well.
  • Place warm macaroni in a large bowl; toss with 2 tablespoons vinegar.
  • Stir in cubed cheese, ham, peas, and onion. Set aside to let noodles absorb the vinegar.

1/3 cup sour cream
6 ounces cooked ham, cut into 1/3-inch cubes

2 ribs celery, with leaves, diced

Steps:

  • To mellow the minced onion, soak it in cold water while you make the salad.
  • Bring a large pot of cold water to a boil over high heat and salt it generously. Add the macaroni and boil, stirring occasionally, until al dente, about 8 minutes. Drain the macaroni in a colander, put in a serving bowl, and toss with the milk. Allow the macaroni to cool slightly while you make the dressing.

3 tablespoons vegetable oil
salt
6 onions, chopped
3 green bell pepper, chopped
2 carrots, chopped
12 eggs
½ pound cooked ham, diced
3 cloves garlic, crushed

3 tablespoons balsamic vinegar
salt and pepper to taste

Steps:

  • Bring a very large pot of lightly salted water with oil to a boil. Add macaroni and cook for about 30 minutes or until al dente; drain.
  • Place eggs in a large saucepan and cover with cold water. Over medium heat, bring water to a boil. Lower heat and simmer for 12 to 17 minutes. Immediately remove from heat and plunge in cold water. Remove from water, peel and chop.

  • Preheat oven to 375 degrees. In a large pot of boiling salted water, cook pasta until al dente; drain and reserve. Meanwhile, in a 5-quart heavy pot, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 3 to 5 minutes. Whisk in flour to coat onion. In a slow steady stream, whisk in milk until there are no lumps.
  • Cook, whisking often, until mixture is thick and bubbly and coats the back of a wooden spoon, 6 to 8 minutes. Stir in cayenne, if using, and 1 cup each yellow and white cheddar cheese. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
