HAM AND BROCCOLI ROLL-UPS
WHEN our two children went away to school, I had to learn how to adjust my recipes for just my husband and me. There were too many leftovers! I started gathering recipes with smaller amounts, and my daughter was on the lookout for me, also. This is one she sent, and I make it often. -Eleanor Carroll, Ellicott City, Maryland

Steps:
- In a small saucepan, melt butter; stir in flour. Stir in the mustard, horseradish, Worcestershire sauce, onion and salt. Combine the pineapple juice, milk and egg yolk. Gradually stir into butter mixture. Bring to a gentle boil; cook until thickened. Remove from the heat and set aside. , Top each piece of ham with a cheese slice and two to three broccoli spears. Spoon 1 tablespoon sauce over broccoli. Roll-up, securing with toothpicks if necessary. Place, seam side down, in a greased shallow baking dish. Top with remaining sauce. , Cover and bake at 350° for 15-20 minutes or until heated through. Discard toothpicks.

Steps:
- Place broccoli in boiling water until it just comes apart and drain.
- Place a slice of swiss cheese on top of a slice of ham.
- Divide broccoli into 8 equal parts and place on ham and cheese slices.
- Roll up.
- Place in baking dish, seam side down.
- Mix soup, sour cream, and mustard and spoon over broccoli rolls.
- Bake at 350~ about 20 - 30 minutes.

BROCCOLI, HAM AND CHEESE CASSEROLE
I had the broccoli, ham and cheese, but no cream soup, so I took a couple existing recipes and improvised. Also, I used Jarlsberg cheese, but Swiss or any favorite cheese could be used.

Steps:
- Preheat oven to 350 degrees F.
- Cook onions in butter until almost soft, add garlic and cook all until soft.
- Sprinkle flour over butter/onion mixture, stir to form a roux.
- Slowly pour in milk and broth. Stir until somewhat thickened. Add cheese, salt and pepper. Continue to stir until thickened.
- Spread ham, broccoli and rice in 9x9 glass casserole pan (or similar).
- Pour cheese mixture over top.
- Bake for 15 minutes.
- Sprinkle fried onions on top. Bake for another 15 min until cheese is bubbling but not burnt!
- Note: I was out of milk and didn't want to cook rice or broccoli ahead of time. I did the onion - flour steps the same, then upped the liquid (3 Cups broth) and just added the raw rice and broccoli to the pan, let the mixture of stuff come to a boil, then simmered for a few minutes; stirred in the cheese; sprinkled the onions on top; baked for 20min. Yum!
BROCCOLI HAM RING

- Unroll crescent roll dough and place triangles on a 12-in. pizza pan, forming a ring with pointed ends facing outer edge of pan and wide ends overlapping. THis recipe came from the Junior League of Cobb-Marietta, Georgia. The name of the cookbook is "Georgia on My Menu". I got it out of our Georgia Magazine, September 2004. DH does not like horseradish so I decreased the amout to 1 teaspoon. (he never knew it was used...hehehe)

Steps:
- Preheat oven to 350 degrees.
- Place one slice of cheese on top of each slice of ham; top with 1 to 2 spears of broccoli and set aside.
- In medium saucepan, melt butter, blend in flour, salt horseradish, mustard, Worcestershire and onion.
- Combine egg youlks and pineapple juice; gently stir into butter mixture.
- Stir in milk and cook over low heat, stirring constantly until thick and bubbling.
- Spoon 1 tablespoon sauce over broccoli; roll ham and cheese around broccoli and secure with wooden toothpick.
- Place roll-ups in baking dish; cover and cook at 350 degrees for 25 to 30 minutes.
- Spoon remaining hot mustard sauce over ham rolls just before serving.

- Cook broccoli in microwave for about 5 1/2 minutes Drain. In a bowl, combine soup, bread crumbs, cheese , onion, pimientos and thyme. Add broccoli, mix well. Spoon 1/4 cup onto each ham slice. - Lightly grease/spray a 13 x 9 baking dish.
- In a large bowl, toss together the ham, broccoli, onions, red pepper, cheeses and dry mustard powder.

Steps:
- Cook broccoli until tender. (In a steamer basket for about 5-8 minutes). Rinse in cold water and drain well.
- In a bowl, combine the broccoli, cheese, ham, onions, nutmeg, salt and pepper.
- Lay out 2 pastry rounds (Pillsbury pie crusts are my favorite to use). Cut each in half. Place about 1 1/2 cups filling on one side of each half. Flatten filling with a spoon.
- Combine the egg and milk. Brush some over the pastry edges. Fold pastry over filling. Seal edges and press with tines of fork. Prick top of pastry with fork to vent.
- Place on baking sheet. Brush with egg mixture. Bake at 400 degrees for 18-22 minutes or until golden brown. Let stand 5 minutes before serving.
