SKINNY SKINS (BAKED POTATO SKINS)

Steps:
- Wrap potatoes in aluminum foil and bake at 400 degrees for approximately 45 minutes, or until tender.Let potatoes cool. When cool, cut potatoes in half lengthwise. Use a spoon to scoop out most of the soft center and place in bowl. Set aside.
- Brush the potato skin halves lightly with olive oil or spray with canola oil and place them flat side down on a baking sheet. Put the skins in the oven at 400 degrees and cook until hot and crunchy, approximately 10-15 minutes. Add cucumber, celery, tomato, mushrooms and 3/4 of the chives to the potatoes. Add olive oil, vinegar, salt and pepper. Toss well.
- Pull the potato skins out of the oven. Fill each potato skin with the potato salad mixture. Top each with a dollop of sour cream, blue cheese crumbles, turkey bacon (if using), remaining chives and a grind of black pepper. Serve immediately.

Baked potatoes and pizza are both crowd-pleasers, so why not have them together?? These easy-to-make appetizers are a winner especially to nosh on while you and your friends and family are watching the Olympic games. You can make then to your taste with the variations given.

- Prick potatoes all over with a fork. Place on a baking sheet in a 400F oven for about 1 hour or until tender. Alternatively, cook in microwave on high for about 10 minutes.
- Let potato cool slightly until they can be handled.
- Using a serrated knife, cut each potato in half and scoop out some of the potato, leaving about 1/2-inch wall all around.
- Reserve the inside of the potato for another use. Plae potato halves onto parchment paper-lined baking sheet.
- Spread each with pizza sauce. Top with pepperoni and mushrooms, and sprinkle with cheese.
- Alternatively, drizzle with butter and top with bacon and sprinkle with Tex-Mex cheese.
- Place baking sheet in a 400F oven for about 20 minutes or until a golden and crisp.
- Sprinkle with with hot pepper rings or gren onion, if using.

" PIZZA PAN" POTATO SKINS
There's a pub we go to that makes their own french fries, and instead of throwing out the skins, they fry them up and bake them with toppings in a pizza pan. They bring them sizzling to your table in the pizza pan with sour cream for dipping. Dare I say that they are better than the french fries? Not a low calorie item but so good. This is my attempt to duplicate them.

- Preheat oven to 375°F.
- Cook the diced bacon until crispy, remove from bacon fat and drain on paper towel.
- Forget everything you were ever taught about peeling potatoes, and peel them with a knife leaving a good bit of potato on the skin.
- Retain center of potatoes for another recipe, or slice them into wedges and cook in the same manner as the potato skins.
- Deep fry the potato skins until crispy and golden.
- Drain thoroughly and salt to taste.
- Spread the potato skins evenly on a pizza pan.
- Sprinkle evenly with the green onions, cheese and bacon.
- Bake for 10-15 minutes until hot and cheddar is melted.
- Serve hot with sour cream for dipping.

- Prepare your potato skin shells if not done already. See link for recipe and instructions in notes below.
- Cut your olives. For four spider web potato skins: cut two olives in half lengthwise. These are the bodies. Set aside. Cut another four olives to make the legs. First cut them in half lengthwise, then cut each half into four strips. You will have 8 "legs" per olive total, and eight legs for each body. Set aside. For four mummies: Cut three olives into thirds crosswise so you get three rings or circles per olive. This will give you nine rings (one extra). Set aside.
- Cut your cheese. For the four mummies: stack two slices of provolone. Cut them in half and stack. Cut the cheese on the short side (versus the longer way) into 1/2" strips. Set aside. For the four spider webs: stack two slices of provolone. Cut the cheese slices into 1/4" strips, some a touch wider and some a touch thinner to give you variety. Set aside. For the four ghosts: freehand cut a ghost shape with a knife in each slice. Set aside the scraps for use later. Alternatively, you can also use a ghost cookie cutter.
