BABY BACK RIBS

1 cup turbinado sugar, ground
1/4 cup kosher salt
6 tablespoons Spanish paprika
4 tablespoons chili powder
2 tablespoons granulated garlic
1 tablespoon onion powder
2 teaspoons ground cumin
2 teaspoons ground mustard
1 1/2 teaspoons cayenne pepper
1 teaspoon black pepper, coarse ground
One 2.25-pound slab of baby back pork ribs (also known as loin-back ribs)
2 tablespoons yellow mustard
2 tablespoons BBQ sauce, for glazing, optional

Steps:

  • For the rub: The day before cooking, mix the turbinado sugar, salt, paprika, chili powder, granulated garlic, onion powder, ground cumin, ground mustard, cayenne pepper and black pepper together.
  • For the ribs: Take a slab of ribs and turn over so the curved side is up. Using your fingernail or a knife, pry under the membrane until you can put your finger under it and then pull it off.
  • Sprinkle this side of the ribs with about 1 tablespoon rub, and then about 1 tablespoon yellow mustard. Use the mustard to help evenly distribute the seasoning. Turn the ribs over and repeat the process. Cover and store in the refrigerator overnight.
  • To cook, start a smoker and bring the temp to 200 degrees F. Use apple or cherry wood chunks to provide smoke and flavor. Place the ribs in the smoker, curved side down. Smoke for 2 hours at 200 degrees F, and then raise the temperature to 250 degrees F for about 2 1/2 hours. Check for tenderness by testing if the bones will pull apart with a slight bit of pressure. If they are still tough, allow to cook for another 30 minutes.
  • Remove from the smoker. For dry-style ribs, sprinkle with about 1 tablespoon rub. For wet-style ribs, glaze with the BBQ sauce.

1 slab baby back ribs
1/2 cup Tang orange crystals (Orange Drink Flavoring)
1 tablespoon vinegar
8 -12 fluid ounces soy sauce (Low Sodium)

Steps:

  • Cut slab of ribs into sections of 2-3 ribs.
  • Measure and pour 1/2 cup of Tang into large bowl.
  • Measure and pour 1 tbsp of vinegar into large bowl.
  • Measure and pour 8-12 fl oz of soy sauce into large bowl.
  • Mix all ingredients in large bowl together until Tang crystals dissipate.
  • Place sections of ribs into bowl and if necessary, add more soy sauce to cover all sections of ribs.
  • Preferably let marinate overnight or at least 3 hours for best flavor.
  • Pre Heat over to 275 degrees F.
  • Place ribs into cooking pan meat side down and cover with tin foil.
  • Place covered cooking pan onto middle rack in oven.
  • Cook for 2 hours.
  • Take pan out, uncover ribs, drain pan, flip ribs over to make them meat side up.
  • (Optional) If you desire to add any other sauce, do so now. I personally enjoy these ribs without sauce, but to each their own!
  • Cook for 30-45 more minutes until ribs are done. Each slab can vary in size so cooking time will too. Check by trying to cut meat off of rib, if it practically falls, then they are ready!

I copied this recipe from the internet quite some time ago and just now getting around to trying it. While I prefer to grill my ribs outside, the weather today wasn't cooperating so we gave this one a shot. We thought the sauce was pretty tasty and even though we prefer our ribs off the grill, this is a great recipe for the crock pot.

1 1/2 cups root beer
1 cup ketchup
1/2 cup orange juice
2 tablespoons molasses
3 tablespoons Worcestershire sauce
2 garlic cloves, minced
3 tablespoons onions, minced
1/2 teaspoon paprika
1/4 teaspoon ginger
3 drops hot sauce
2 tablespoons cornstarch
1 -2 baby back rib rack
salt, to taste
pepper, to taste

Steps:

  • Mix root beer, ketchup, orange juice, molasses, Worcestershire sauce, garlic, onion, paprika, ginger and hot sauce in a medium sauce pan. Whisk in 2 tbsp cornstarch and bring to a boil. Simmer a few minutes until thickened slightly.
  • Remove fatty membrane from underside of ribs and season with salt and pepper.
  • Place ribs in crock pot (you may have to cut each rack in half so they will fit) and cover with sauce. Cook on low for 4-5 hours. Move ribs around every hour or so, so they all have a turn being submerged in the sauce.

1/2 rack baby back ribs
1 cup guajillo chili powder
1 cup kosher salt
3/4 cup black pepper, cracked
1/2 cup ground cumin
1/4 cup fresh rosemary, finely chopped
1/4 cup fresh thyme leave, finely chopped
1/4 cup garlic powder
1 cup white sugar

Steps:

  • Hardwood chips or chunks of whole pecan wood should be used.
  • Prepare the grill for indirect heat: If you don't have a smoker with an offset box, you can build a fire on one side of your grill and then put a piece of foil on the opposite side of the grill. This will create indirect heat.
  • Prepare the ribs: Remove the thin, papery membrane skin from the back of each rack of ribs by pulling it off in a sheet with your fingers, using the corner of a kitchen towel to gain a secure grip, or with pliers.
  • Prepare the rub: In a bowl, whisk together chile powder, salt, pepper, cumin, rosemary, thyme, garlic powder, and sugar.
  • Generously season ribs with the mixture, rubbing onto both sides of the rack.
  • Place the ribs, bone-side down, on foil to cook with lid closed. Cover the grill and keep the temperature of the grill at a constant 225-degrees. Cook the ribs for about 3 to 4 hours or until tender.

6 lbs well trimmed pork baby back ribs, cut into 3 to 4 rib sections
2 tablespoons sugar
2 tablespoons fresh lemon juice
1 tablespoon salt
1 tablespoon vegetable oil
2 teaspoons black pepper
2 teaspoons dried thyme leaves
3/4 teaspoon ground cinnamon
3/4 teaspoon nutmeg
3/4 teaspoon allspice
1/2 teaspoon ground red pepper
2 tablespoons butter
1/2 cup finely chopped onion
1 1/2 cups ketchup
1 cup red currant jelly
1/4 cup apple cider vinegar
1 tablespoon soy sauce
1/4 teaspoon ground red pepper
1/4 teaspoon ground black pepper

Steps:

  • For seasoning rub, combine all ingredients except ribs and barbecue sauce ingredients in a small bowl; stir well. Spread over all surfaces of ribs; press with fingertips so mixture adheres to ribs. Cover; refrigerate overnight.
  • Prepare grill for indirect cooking. While coals are heating, prepare barbecue sauce.
  • For barbecue sauce, melt butter in medium saucepan over medium-high heat. Add onions; cook and stir until softened. Stir in remaining sauce ingredients. Reduce heat to medium-low; simmer 20 minutes, stirring often.
  • Place seasoned ribs on grid directly over drip pan. Grill, covered, 1 hour, turning occasionally. Baste ribs generously with barbecue sauce; grill 30 minutes more or until ribs are tender and browned, turning occasionally.
  • Bring remaining barbecue sauce to a boil over medium-high heat; boil 1 minute. Serve ribs with remaining sauce.
  • OVEN DIRECTIONS:.
  • Preheat oven to 350*. Prepare ribs as directed in step 1. Place ribs in foil-lined roasting pan. Cover with foil; bake 1 hour. Uncover, baste with barbecue sauce. Bake, uncovered, 30 minutes more. Contine as directed in step 5.

1/4 cup apple cider vinegar
1 cup store bought barbecue sauce, additional for serving

Steps:

  • Generously season the ribs with salt and pepper.
  • Pour the apple cider vinegar and 1 ½ cups of water in the base of the Instant Pot.
  • Insert the rack and place ribs on top. Seal lid on top and cook on high pressure for 20 minutes. Allow the Instant Pot to vent for about 10 minutes before removing the ribs from the pot.
