3 avocados, halved and pitted
2 large jalapenos, halved and seeded
2 medium cloves garlic, ground into a paste with kosher salt or grated
1 small red onion, finely chopped
Juice of 1 lemon
Juice of 1 lime
Salt

Steps:

  • Heat a grill pan to medium heat and place the avocados and jalapenos in the pan cut-side down. Grill until the avocados and jalapenos start to char, 3 to 5 minutes.
  • In a medium bowl, douse the garlic and onions with the lemon and lime juices. Season liberally with salt and set aside to allow the flavors to marry.
  • Scoop the avocado flesh from the skins. Place a metal cooling rack over the bowl. Working with one half at a time, place the avocado cut-side down on the rack and press down, pushing it through the rack. The rack will dice it as its being added to the bowl. Repeat for the remaining halves. Finely chop the jalapenos and add to the guacamole. Mash with a fork until fairly smooth. Adjust the salt, and then serve.

12 medium tomatillos (about 1 1/4 pounds), husked, rinsed
1/2 cup finely chopped white onion
1/2 cup finely chopped fresh cilantro
4 serrano chiles, seeded, minced (about 2 tablespoons)
2 tablespoons fresh lime juice
2 pounds avocados (about 3 large), peeled, pitted, coarsely chopped

Steps:

  • Preheat broiler. Line rimmed baking sheet with foil. Place tomatillos on prepared baking sheet. Broil until tomatillos are just blackened in spots and tender, about 8 minutes per side.
  • Combine onion, cilantro, chiles, and lime juice in large bowl. Add roasted tomatillos and any juices from baking sheet to onion mixture. Using fork, mash coarsely. Add avocados and mash with fork until mixture is very coarsely pureed and some chunks remain. Season guacamole to taste with salt. (Can be made 4 hours ahead. Cover and chill.)

2 tablespoons lime juice
2 teaspoons ground cumin
3/4 teaspoon salt
Tortilla chips

Steps:

  • In a large bowl, combine onion, tomatoes, pepper and 1 tablespoon oil; gently toss to coat. Grill, covered, over medium-high heat or broil 4 in. from heat until tender and charred, turning occasionally, 6-8 minutes. Brush avocados with remaining oil. Grill or broil avocados, cut side facing the heat, until charred, 4-6 minutes. Cool vegetables completely., Chop onion, tomatoes and pepper; set aside. Peel avocados; transfer to a large bowl and mash with a fork. Stir in vegetables, cilantro, lime juice, cumin and salt. Serve immediately with chips.

2 tablespoons vegetable oil
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1 teaspoon cracked black peppercorns
1 teaspoon ground cumin
3/4 teaspoon salt, plus more to taste
1 large red onion, peeled and cut into 1/4-inch thick slices
3 avocados
1 large tomato
2 cloves garlic, peeled and minced
3 Serrano chilies, chopped
3 tablespoons chopped fresh cilantro
Fresh lime juice to taste

Steps:

  • In a small bowl, combine the oil, lemon juice, vinegar, pepper, cumin and 3/4 teaspoon salt. Place in a shallow dish, add the onion and let marinate for 1 hour. Heat a grill until hot. Drain the liquid from the onion and place on a grill. Grill for 3 minutes per side. Coarsely chop.
  • Peel, seed and cut the avocados into 1/2-inch dice. Dice the tomato. Combine the grilled onion, avocados, tomato, garlic, chilies and cilantro. Season to taste with salt and lime juice. Keep at room temperature until ready to serve.

2 garlic cloves, coarsely chopped
1 1/2 teaspoons coarse salt
1 small white onion, coarsely chopped

6 -8 medium tomatillos, husks removed, rinsed and cut into quarters (about 1/2 pound)
1 ripe Hass avocado
12 -15 sprigs cilantro, finely chopped

Steps:

  • In a food processor or blender (or with mortar and pestle), process garlic and salt to a paste.
  • In the processor or blender, place onion, jalapenos and tomatillos and pulse to make a slightly chunky mix. Remove to bowl.
  • Halve and pit avocado and scoop out flesh. Chop finely and add to other ingredients. Add cilantro and mix well.
  • Serve with tortilla chips or as a condiment for meat, fish, poultry, burritos or quesadillas.
  • Makes about 2 cups.

6 fresh tomatillos, husks discarded and tomatillos rinsed
1 white onion, quartered
2 cloves garlic
2 jalapeno peppers, seeded if desired
1 ½ cups water, or amount to cover
salt to taste
¼ cup chopped fresh cilantro
1 tablespoon fresh lime juice, or to taste
3 ripe avocados, halved lengthwise and pitted

Steps:

  • Place tomatillos, onion, garlic, and jalapeno peppers into a saucepan over medium heat, and pour in enough water to cover. Bring the mixture to a boil, reduce heat, and simmer until the tomatillos soften and change color from bright green to a yellow-green color, 5 to 8 minutes.
  • With a slotted spoon, transfer vegetables to a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the tomatillo mixture moving before leaving it on to puree. Puree until smooth, about 1 minute; mix in salt, cilantro, and lime juice. Blend again for a few seconds just to mix.
  • Scoop out the avocado flesh, and place into the blender; blend until well mixed. Adjust salt, cilantro, and lime juice before serving.

  • Heat a gas grill to medium or light a charcoal grill and let it burn until the coals are medium-hot and covered with gray ash.
  • Lay the halved tomatillos cut side down on a rimmed baking sheet or metal baking pan and slide onto the grill. Brush the ramps (or green onions or garlic chives) with oil. Lay them directly on the grill, along with the chile (no oil needed). Grill the ramps (or their stand-ins) and the chile, turning occasionally, until soft and richly browned — the ramps will take 4 to 5 minutes, the chile about 10. Cook the tomatillos about 3 to 4 minutes, until soft and browned on 1 side, then flip them over and cook the other side. Cool everything. Finely chop the ramps (etc.) and chile, then scrape into a large bowl. Chop the tomatillo into small pieces and scrape them in with the ramps, then scrape in any juice that remains on the baking sheet.
  • While the grilled vegetables are cooling, cook the bacon in a single layer in a large skillet over medium heat, turning every once in a while, until browned and crispy, about 10 minutes. Drain on paper towels, then chop into small pieces. Cut the avocados in 1/2, running a knife around the pit from top to bottom and back up again. Twist the halves in opposite directions to release the pit from 1 side of each avocado. Remove the pit, then scoop the flesh from each 1/2 into the bowl with the tomatillos. With an old-fashioned potato masher, a large fork, or the back of a large spoon, coarsely mash the avocado with the tomatillo mixture. Stir in the lime juice, cilantro, and 1/2 of the bacon. Taste and season with salt, usually about 1 teaspoon. Cover with plastic wrap pressed directly on the surface of the guacamole and refrigerate until you’re ready to serve. When that time comes, scrape the guacamole into a serving dish and sprinkle with the remaining bacon. Garnish with cilantro leaves
