CHICKEN FAJITAS

Lean strips of chicken breast, bell peppers and onions served sizzling hot with warm tortillas and shredded cheese. If this is your idea of delicious, you are not alone!

Number Of Ingredients 14

16 oz boneless skinless chicken breasts
1 red bell pepper (cut into strips)
1 green or poblano pepper (cut into strips)
1 medium onion (cut into strips)
3 tbsp lime juice
1 tsp ground cumin
1 tsp garlic powder
pinch ancho or Mexican chili powder ( to taste)
salt and pepper to taste
2 tsp olive oil
8 reduced-carb whole wheat flour tortillas (or corn tortillas for gf)
1/2 cup reduced fat shredded Mexican cheese
reduced fat sour cream (optional)
guacamole (optional)

Steps:

  • Marinate the chicken with lime juice, and season with chile powder, salt, pepper, garlic powder and cumin.
  • Season vegetables with salt and pepper and toss with olive oil.
  • To grill the onions and peppers outside on the grill, use a cast iron skillet and grill covered over medium heat until tender, about 15 minutes. Or, to cook them indoors, you can use a large skillet on the stove over medium heat for 16 to 18 minutes, covered until the onions and peppers are soft.
  • Heat an outdoor grill or indoor grill pan over medium heat; grill chicken until cooked through, about 8 minutes on each side.
  • Transfer to a cutting board when done and cut into strips. Once cooked, combine with the peppers and onions.
  • Serve immediately with warmed tortillas, cheese and toppings.

2 tablespoons canned chopped mild green chili peppers, well drained
2 tablespoons reduced-fat sour cream
3 1/2 tablespoons mild picante sauce or 3 1/2 tablespoons picante sauce
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/2 tablespoon extra virgin olive oil
1 cup coarsely-diced sweet red pepper
1 cup chopped onion
3 cups sliced mushrooms
1 1/4 lbs boneless skinless chicken breast halves, cubed
1/4 cup mild picante sauce or 1/4 cup picante sauce
2 tablespoons canned chopped mild green chili peppers, well drained
1 teaspoon mild chili powder
1 cup coarsely diced tomato
1/3 cup coarsely sliced scallion
1/4 teaspoon salt (optional)
1 pinch freshly-ground black pepper, to taste
2 tablespoons reduced-fat sour cream
8 large flour tortillas (8" dia)
1 ounce low-fat cheddar cheese, grated or shredded
1 cup coarsely-cubed tomatoes (to garnish)
1/4 cup chopped fresh cilantro leaves (to garnish)
sliced jalapeno peppers or shredded lettuce, for garnish

Steps:

  • In a small bowl, stir together the peppers, sour cream, picante sauce, chili powder and paprika, set aside.
  • Preheat the oven to 375 degrees.
  • In a 12-inch nonstick skillet over medium-high heat, warm the oil.
  • Add the red peppers and onions.
  • Cook, stirring frequently, for 3 minutes, or until slightly soft.
  • Add the mushrooms.
  • Cook, stirring often, for 4 minutes, or until the mushrooms release their juices.
  • Raise the heat to high.
  • Stir in the chicken, picante sauce, chili peppers and chili powder.
  • Cook, stirring frequently, for 4 to 5 minutes, or until the liquid has almost completely evaporated from the skillet; be careful not to scorch the ingredients.
  • Stir in the tomatoes, scallions, salt (if using) and black pepper.
  • Cook for 1 minute; remove from the heat and stir in the sour cream.
  • Fajitas: Divide the filling evenly among the tortillas and roll them up to enclose the filling.
  • Coat a 3-quart baking dish with nonstick spray.
  • Arrange the fajitas, seam-side down, in the dish.
  • Cover with foil and bake for 10 minutes.
  • Spoon the sauce over the fajitas.
  • Sprinkle with the cheese.
  • Cover the casserole with foil and bake for 10 minutes longer.
  • Serve garnished with the tomatoes, cilantro and scallions, peppers or lettuce.

1 large chicken breast
1/2 large green pepper
1/2 large red pepper
1/2 large orange peppers or 1/2 large yellow pepper
1/2 medium red onion
1/2 cup sliced mushrooms
1 tablespoon fajita seasoning mix
2 whole wheat pita bread
iceberg lettuce
fat free sour cream (optional)
salsa (optional)

Steps:

  • Slice chicken breast into strips and brown in nonstick frying pan.
  • While browning chicken breast, slice peppers and red onion into 1/4" strips.
  • When chicken breast slightly browned, add peppers, onion, and mushrooms to pan and continue to brown veggies.
  • Add a little water and cover, letting veggies steam and get tender. Add a little more water if it evaporates too quickly.
  • Uncover and add fajita seasonings, combine and cover for another minute or until veggies are tender.
  • Chop lettuce and fill pitas with lettuce, chicken veggie combo, salsa and fat free sour cream if desired.

1 cup water
1/2 cup soy sauce
4 beef bouillon cubes, dissolved
2 fresh jalapenos, chopped
2 large onions, sliced in rings (2 cups)
3 tablespoons apple juice or 3 tablespoons cider
6 tablespoons butter
1 tablespoon soy sauce
2 teaspoons garlic powder
1 teaspoon black pepper
2 -2 1/2 lbs chicken breasts, sliced into strips
sliced green pepper
sliced red pepper
cilantro, chopped
6 flour tortillas
lettuce, chopped
sour cream
salsa

Steps:

  • Heat fajitas sauce mixture. When simmering, add chicken breasts.
  • After chicken is coked, add marinated onion, green and red peppers, and chopped cilantro.
  • Cook until vegetables are crisp-tender. Serve with tortillas, chopped tomatoes, lettuce, sour cream, salsa, or whatever else you like!

1 teaspoon chili powder
1/2 teaspoon cumin
2 whole chicken breasts, cut in strips

12 8-inch flour tortillas
2 cups shredded cheddar cheese

Steps:

  • In small bowl, mix mix first 4 ingredients.
