WHITE BEAN DIP

White Bean Dip image

Provided by Alex Guarnaschelli

Time 11h25m

Yield 2 cups

Number Of Ingredients 11

1 1/2 cups dried white beans
7 tablespoons extra-virgin olive oil, plus more as needed
5 large cloves garlic
1 large yellow onion, halved and thinly sliced
Kosher salt
2 teaspoons Worcestershire sauce
2 teaspoons white distilled vinegar
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon hot sauce, such as Tabasco
Vegetables or crackers, for serving

Steps:

  • For the beans: Put the beans in a bowl and cover with cold water by 3 inches above the top of the beans. Let soak overnight.
  • Strain the beans, discarding the soaking liquid. Place them in a pot and cover with water by 3 inches above the top of the beans. Bring to a simmer over medium-low heat and let cook until the beans are tender, 1 hour 15 minutes to 1 hour 45 minutes. Strain and let cool.
  • For the dip: Bring 1/2 cup water and 1 tablespoon olive oil to a boil in a medium skillet over medium heat. Add the garlic, onion and a pinch of salt and simmer until the water reduces down and the onions become translucent and tender, 3 to 5 minutes. Add the beans and heat until they become warm.
  • Meanwhile, add the Worcestershire, vinegar, garlic powder, paprika, hot sauce, 4 tablespoons olive oil and some salt to a food processor. Transfer the bean mixture to the food processor. Add the remaining 2 tablespoons olive oil and another pinch of salt. Puree the beans until smooth. Add more oil if needed for taste or texture. Taste for seasoning. Serve with vegetables or crackers.

LEMON AND HERB WHITE BEAN DIP

Lemon and Herb White Bean Dip image

A zesty, herby, lemony dip made with white beans! A protein- and fiber-rich dip or snack made with just 7 wholesome ingredients in 10 minutes. Perfect for spring (or any time!).

Provided by Minimalist Baker

Categories     Dip

Time 10m

Number Of Ingredients 10

1 (15-oz) can white beans ((drained and rinsed // we like cannellini))
1/4 cup tahini
1-2 tsp lemon zest
3-4 Tbsp lemon juice
1/2 tsp sea salt
4 cloves garlic, pressed or minced ((reduce slightly if you're not a garlic lover))
1 Tbsp extra virgin olive oil ((if oil-free, omit))
1/4 cup chopped fresh dill, loosely packed ((or sub other herbs of choice))
Pita bread or chips ((or crackers // gluten-free as needed))
Fresh or roasted veggies ((e.g. carrots, radish, cucumber, beets))

Steps:

  • To a food processor (or high-speed blender) add drained, rinsed white beans along with tahini, lemon zest and lemon juice (starting with lesser amounts of both), salt, garlic, and olive oil (reserve herbs for later).
  • Blend until creamy, scraping down sides as needed - about 1 minute. If you prefer more texture, blend for less time. If you prefer silky smooth dip, blend for longer.
  • Add chopped dill (or other herbs) and pulse again to combine.
  • Taste and adjust flavor as needed, adding more garlic for zing, lemon zest or juice for brightness or acidity, salt to taste, olive oil for creaminess / floral notes, dill for more herbal notes, or tahini for nuttiness. We like pretty bold flavors, so we added the additional lemon zest and juice and a pinch more salt.
  • Enjoy immediately, or refrigerate to chill, which allows the dip to thicken. Option to garnish with additional drizzle of olive oil, lemon zest, and fresh dill for serving. Serve with pita bread or chips, flatbread, crackers, or vegetables of choice.
  • Leftovers keep covered in the refrigerator for up to 4-5 days. Not freezer friendly.

MASHED WHITE BEANS WITH TRUFFLE OIL

Mashed White Beans with Truffle Oil image

Provided by Food Network

Yield 6 servings

Number Of Ingredients 11

1/4 cup chopped fresh flat-leaf parsley
2 tablespoons chopped fresh thyme
1/2 teaspoon dried red pepper flakes
1/4 cup fresh lemon juice
Salt and freshly ground black pepper to taste
2 ounces white truffle oil
1 pound dried Great Northern, navy, pea or other white beans
2 quarts chicken stock
2 teaspoons salt
1/3 cup olive oil
2 tablespoons chopped garlic

Steps:

  • Sort the beans to make sure they are free of stones or other debris. Rinse, then cover with cold water, refrigerate, and soak overnight.
  • The next day, drain the beans, place them in large pot, and cover with the stock. Bring to a boil, then lower the heat and simmer the beans for 2 hours, or until they are soft, tender and yield to pressure when squeezed between your finger tips.
  • Add the salt only in the final 15 minutes of cooking since the addition of salt earlier in the cooking process will result in tough beans.
  • Pour the beans in to the bowl of a food processor. Begin to pulse the beans along with any of the stock that may have remained from cooking. Add all the remaining ingredients except the truffle oil and pulse together with the warm bean puree. Taste and adjust the seasoning with additional salt and add freshly ground pepper if needed. Return the bean puree to a pot set over low heat or a double boiler to keep warm. Serve each portion of puree with a drizzle of truffle oil.
