An Aussie variation on an old favorite. Use this to spread on fish, such as halibut or swordfish, before baking.

1 cup walnuts
1 cup parmesan cheese, shredded
1/2 cup flat leaf parsley, roughly chopped
1 1/2 tablespoons vegemite
2 garlic cloves, peeled and chopped
3/4 cup olive oil

Steps:

  • In a blender or food processor, briefly process the walnuts, Parmesan, parsley, Vegemite and garlic.
  • Add the oil and process until just combined.

1/2 teaspoon butter or 1/2 teaspoon margarine, Generous serve is recommended

  • Toast your favourite variety of bread, butter it generously and spread a thin layer of Vegemite on it. (Reminder, this is very flavoursdome stuff so you don't need to use much at all).
