SCHNITZEL WITH MUSHROOM SAUCE

I used pork for this recipe but you could also use chicken or turkey. It was a quick and easy recipe I found in the Canadian Living Magazine. The important thing is the kids loved it, and inexpensive to make. I used fresh mushrooms as I prefer them over canned. I served it with a side dish of the colored bow tie pasta and peas. I also bought prepared pork schnitzel from the butcher which saves a few steps.

1/3 cup all-purpose flour
1/4 teaspoon salt and pepper
1 lb turkey cutlets or 1 lb chicken cutlet
2 tablespoons butter
3 cups white mushrooms or 3 cups cremini mushrooms
2 cloves garlic, minced
1 1/3 cups chicken stock
1/3 cup light sour cream
1 tablespoon soy sauce
2 tablespoons minced fresh parsley

Steps:

  • Combine flour, salt and pepper in a shallow dish, and press cutlet into flour mixture and turn to coat.
  • Reserve remaining flour mixture.
  • In skillet, melt butter over medium high heat; fry cutlet in batches and turning once, until a hint of pink remeains inside for pork cutlet, about 6 minutes (ensure there is no pink inside for turkey and chicken).
  • Transfer to plate and keep warm.
  • in same skillet, fry mushrooms and garlic until no liquid remains about 5 minutes.
  • Add reserved flour mixture cook, stirring for approximately 1 minute.
  • Stir in stock; bring to a boil and then reduce heat and simmer, stirring, until thickened, about 3 minutes.
  • Add sour cream and soy sauce and stir for about 1 minute.
  • Pour over schnitzel and sprinkle with parsley.

1/4 cup all-purpose flour
1/4 teaspoon freshly ground black pepper
8 skinless chicken thighs (or 4 breasts)
2 tablespoons vegetable oil
1 onion, chopped
4 cloves garlic, minced
4 cups sliced mushrooms
2 carrots, sliced into coins
1/2 teaspoon dried basil
1/4 teaspoon salt
3/4 cup chicken stock
1/2 teaspoon red wine vinegar
1 tablespoon chopped fresh parsley

Steps:

  • In a clean plastic bag, combine flour and pepper.
  • Add chicken; shake to coat.
  • Reserve remaining flour mixture.
  • In a large skillet, heat oil over medium-high heat; brown chicken all over, about 10 minutes.
  • Remove to plate and set aside.
  • Add onion and garlic to skillet; cook over medium heat for 3 minutes.
  • Add mushrooms, carrots, basil, and salt; cook for a few minutes, just until vegetables are tender.
  • Sprinkle in reserved flour mixture.
  • Stir in stock and vinegar and bring to boil.
  • Return chicken to pan; reduce heat, cover and simmer, stirring occasionally, for 35 minutes or until juices run clear when chicken is pierced (breasts may not take as long).
  • Serve sprinkled with parsley.

1 cup sodium-reduced chicken broth
1/2 cup white wine
1 tablespoon Dijon mustard
1/4 cup all-purpose flour

1/4 cup 10% cream
2 teaspoons white wine vinegar

Steps:

  • In slow cooker, combine white mushrooms, onion, garlic, chanterelles, tarragon, salt and pepper. Top with chicken.
  • Whisk together broth, wine and Dijon; pour over chicken. Cover and cook on low, 6 to 8 hours.
  • Whisk flour with 1 cup of cooled cooking liquid until smooth; whisk into slow cooker. Cook, covered, on high until thickened, about 15 minutes. Stir in parsley, cream and vinegar.

Steps:

  • In saucepan, melt butter over medium heat; cook onion, garlic, thyme, salt and pepper, stirring occasionally, until softened, about 5 minutes.
  • Add mushrooms and potato; cook over medium-high heat until no liquid remains and mushrooms are tender, about 10 minutes.
  • Stir in flour; cook for 1 minute. Stir in stock and bring to boil; reduce heat and simmer until thickened, about 10 minutes.
  • Top each serving with dollop of sour cream and sprinkle of green onion.

2 cups 500 mL rotini (spiral) pasta,
1 tbsp 15 mL canola oil
4 boneless, skinless chicken breasts, cut into strips
1 medium onion, chopped
1 can CAMPBELL'S® Condensed Low Fat Cream of Mushroom Soup
1/2 cup 125 mL milk
1 tsp 5 mL dried oregano leaves
3 cups 750 mL frozen vegetable
2 cups 500 mL shredded Cheddar cheese

Steps:

  • Cook rotini according to package directions, without salt. Drain; set aside.
  • Heat oil at medium-high heat in large skillet. Saute chicken breasts and cook until browned on all sides,stirring often. Set chicken aside.
  • Add onion to skillet and cook until tender. Stir in mixture of cream of mushroom soup, milk,and oregano. Add other vegetables, including peas, green beans, bell peppers; heat to a boil,stirring often. Return chicken to skillet; reduce heat to low.
  • Simmer, covered, until chicken is cooked through – about 5 minutes, stirring occasionally. Stir in pasta and grated cheese; heat through.

An easy and delicious homemade cream of mushroom soup, ready in just about 20 minutes!

3 Tablespoons unsalted butter (cut into 3 pieces)
1/2 cup yellow onions (finely diced)
8 oz fresh mushrooms (button or cremini, or mixture, cleaned and sliced (1 standard "tray"))
1 teaspoon fresh thyme leaves (or 1/4 tsp. dried thyme leaves)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 - 1/3 cup all-purpose flour (use the 1/3 amount for a bit thicker soup)
3 cups chicken broth
1/2 cup heavy whipping cream (if using a lighter cream, mix with a couple teaspoons of cornstarch before adding to soup)

Steps:

  • In a large saucepan, melt 1 Tbsp. of the butter over medium-high heat. Add the onions and cook, stirring, until soft, about 3 minutes.
  • Add the mushrooms, thyme, salt, and pepper and the second 1 Tbsp. of butter. Cook, stirring regularly, until the mushrooms start to brown, about 5 minutes.
  • Add the last 1 Tbsp. of butter and stir to melt. Add the flour and cook, stirring constantly for about 30 seconds to a minute. Add the stock and stir while returning the mixture to a boil. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for 10 minutes.
  • *At this point, if you like a thicker soup, you can remove a few of the mushrooms with a bit of soup to puree and return to the pot or simply pulse a few seconds with an immersion blender. Neither is necessary if you'd rather leave it with all whole mushroom pieces.
  • Add the cream and cook for a further minute or two to heat. Taste and adjust seasoning, as necessary. Enjoy!

Add mushrooms, carrots, basil, and salt ; cook for 1 to 5 minutes or until vegetables are tender. Add reserved flour mixture. Stir in stock and vinegar; bring to boil.
