1 tablespoon chili powder
⅓ lb ground chorizo
1 tablespoon oil
3 hamburger buns
3 oz manchego cheese, sliced
½ cup guacamole
⅓ cup pico de gallo
⅓ cup cotija cheese
¼ cup sour cream

Steps:

  • Mix together the patty ingredients until combined.
  • Form the beef mixture into 3 round patties.
  • Heat oil in a pan over medium heat.
  • Cook the burgers for 3 minutes on the first side, flip, and place a slice of manchego cheese on top.
  • Cook for 6 more minutes until the cheese is melted.
  • Assemble the burgers on the buns with guacamole, cotija, pico de gallo, and sour cream.

½ lb. beef chorizo
1 ½ tsp. sea salt
1 tsp. pepper
1 ½ tsp. garlic granules
1 ½ tsp. onion powder
1 ½ tsp. smoked paprika
½ tsp. red chili flakes, optional to add less if you prefer less spicy
2 Tbl. Italian herb mixture
2 Tbl. Braggs Nutritional Yeast Seasoning
2 eggs
3 Tbl. fresh Italian parsley, finely chopped
1 cup bread crumbs
¼ cup extra virgin olive oil
1 jar (40 oz.) marinara sauce
1/4 cup fresh basil, sliced

Steps:

  • In a large mixing bowl, combine the chicken, chorizo, salt, pepper, salt, pepper, garlic granules, onion powder, smoked paprika, red chili flakes, Italian seasoning, nutritional yeast seasoning, eggs, parsley and bread crumbs. Work all the ingredients together very well with your hands. Blend and mix well to incorporate everything.
  • Roll into about 15 equal sized meatballs. Put on parchment paper covered cookie sheet.
  • Heat a large skillet (12"+) on medium high. Add the olive oil. Place about half of the meatballs in and turn and brown.
  • Remove with tongs to cookie sheet. Repeat with the remaining meatballs.
  • Add the marinara sauce to the skillet and all the browned meatballs. Cover and simmer cook on low about an hour. Before serving add the fresh basil to the sauce and blend.

  • Cut the potatoes into chunks, there is no need to peel them.
  • Bring a pan of water to the boil and then add in the tablespoon of salt.

1 lb. dry spaghetti, linguini, or fettuccini (gluten-free, if needed)
2 teaspoons olive oil (plus oil for the pasta)
1 large onion (finely minced)
3 anchovies packed in oil (minced (optional, see notes))
4 cloves garlic (finely minced)
4 tablespoons tomato paste
1 lb. fresh chorizo (removed from casings and crumbled (see notes))
1 lb. ground beef
28 ounce can crushed tomatoes
2 tablespoons balsamic vinegar
Sea salt (to taste)
Optional toppings: fresh mozzarella, grated parmesan, black pepper, parsley, chili flakes

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook for 8-9 minutes, until al dente. Drain the pasta using a colander then put the pasta back into the pot. Drizzle the pasta with olive oil and toss to coat.
  • While the pasta water is heating, begin making the chorizo bolognese. Heat the oil in a large skillet over medium-high heat. Add the onion and let it cook until it is golden brown, about 6-7 minutes. Add the anchovies (if using) and the garlic and cook for 1 minute. Add the tomato paste and cook, stirring constantly, for 3 minutes to let it caramelize.
  • Add the chorizo and ground beef and let them cook through. Add the crushed tomatoes and balsamic vinegar and let the pot simmer gently for 10 minutes. Season to taste with sea salt.
  • Serve the chorizo bolognese over the cooked pasta and top with any or all of the optional toppings.

After unsuccessfully searching for said spices around town, my gym coach told me she just uses chorizo. I usually find Chorizo sold in 10 ounce tubes. You can find beef or pork chorizo. I prefer beef. Simply cut the tube in half for this recipe.

1 15 oz. can black beans, drained and rinsed
1 10 oz. can Rotel diced tomatoes and chilies
1 cup chicken broth (or any broth)
1 medium sweet bell pepper (seeded and chopped)
1 small yellow onion (chopped)
½ cup uncooked rice
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. salt
1/4 tsp. ground black pepper
3/4 lb. chorizo sausage links (sliced into 1/2 inch pieces (about 4 links))

Steps:

  • Place a wide, high-sided skillet or pot over high heat. Add the beans, Rotel, broth, bell pepper, onion, rice, chili powder, cumin, salt, and black pepper. Stir to combine. Cover the pot.
  • Bring liquid to a boil, then reduce to a simmer. Cook for 10 minutes, stirring occasionally.
  • Add the sliced sausage. Cover. Continue to simmer until the rice is tender and most of the liquid is absorbed (about 10 minutes for white rice).
  • Remove the pot from the heat. Uncover and let it rest for 5 minutes before serving.

  • 3. Warm tortillas on stove or tortilla warmer.
