Steps:
- Wash vegetables and slice any vegetables that need to be sliced (onion, bell pepper, squash or zucchini, portobello mushrooms).
- Place veggies in a large bowl or dish.
- Whisk together the balsamic, olive oil, honey, basil, oregano, salt, pepper and garlic. If you're making the dip, reserve 3 tbsp of the marinade for the dip.
- Pour marinade over the veggies and gently stir or toss to coat every vegetable well. Cover and marinate in the refrigerator for at least 1 hour before grilling, or up to several hours.
- To make the balsamic dip, whisk 1/3 cup plain Greek yogurt into the reserved marinade. Refrigerate until you're ready to serve.
- Heat your grill to medium-high heat (about 350-400°F). Clean the grill grates well.
- Place marinated veggies on the grill and let them develop grill lines on the bottom. Once charred and caramelized, the veggies will release more easily from the grill, so try not to move them too soon. See notes for approximate grilling times of different vegetables.
- Turn vegetables halfway through to grill other side. Once charred, remove to a plate and serve with dipping sauce, or drizzle some reserved marinade over the top.

MARINATED GRILLED VEGETABLES
You'll always want a batch of these around: From the vegetables you grill to the seasonings you use, this recipe is endlessly adaptable. It also keeps for a few days and has so many applications. After the vegetables come off the grill, they soak in a piquant bath of coarse mustard, shallot and vinegar, though you could adjust flavorings as you wish: Add fresh or dried chile; thyme or rosemary; anchovy or capers; or a protein like feta, cubed salami, tofu or chickpeas. Then, use these deeply flavored vegetables on sandwiches, grilled bread, salads, frittatas, alongside grilled meat or fish, and so on.

Steps:
- Prepare a charcoal grill for two-zone cooking over medium-high heat by pouring the coals onto one half of the grill. For a gas grill, heat all of the burners to high, then turn one of the end burners off before cooking.
- While the grill is heating, make the marinade: In a medium bowl, combine 3/4 cup oil, vinegar, mustard and shallot. Season with salt and pepper. Cut the vegetables into pieces that are large enough so as to not slip through the grates; for small or slender vegetables, like snap peas or green beans, leave them whole. Pat the vegetables dry, then transfer to a sheet pan, season with salt and pepper, and drizzle with enough olive oil to coat.
- When you're ready to grill, take the marinade, vegetables, tongs and a tightly folded paper towel soaked with olive oil to the grill. Clean the grates with a grill brush, then oil the grates with the paper towel. Grill the vegetables over the flame, flipping occasionally, until well browned and tender, 2 to 15 minutes, depending on the density and size of the vegetables. (For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) As the vegetables finish, transfer them to the marinade. Let the vegetables sit in the marinade for at least 5 minutes. Leftovers will keep for up to 3 days in the fridge. Let come to room temperature before serving.

EPIS-MARINATED GRILLED RED SNAPPER
This modern version of grilled snapper is jam-packed with flavor. The foundation of the dish is epis, Haiti's herb-and-seasoning blend usually made with sweet and hot peppers, onion, garlic, fresh herbs and a variety of spices and other flavorings. It's used in countless Haitian dishes, from rice and beans to soups and stews; it's also a favored marinade. This recipe makes the epis with a blender instead of mortar-and-pestle and grills the fish over charcoal or gas rather than over wood. Wrapping the fish in banana leaves before grilling seals in flavor and juices. Scotch bonnet peppers are one of the stars of this dish, adding a kick that's sure to get attention at a barbecue

Steps:
- Combine the cider vinegar, scallion, roughly chopped onion, celery, roughly chopped green and red bell peppers, shallot, garlic and 1 Scotch bonnet pepper in a blender (see Cook's Notes). Blend on high until finely chopped, about 30 seconds. Add the cilantro, culantro and thyme and pulse until finely chopped. Add the 1/2 bunch parsley and pulse until finely chopped.
- Drizzle in the olive oil and process until smooth and bright green, about 1 minute. Set aside 1 cup of the epis and place in the refrigerator. Keep the remaining sauce for another use (refrigerate it in an airtight container for up to 5 days).
- Cut 3 to 4 diagonal slits on each side of the fish. Squeeze both the lemon halves over the fish; massage the juice into the inside and the outside of the fish as well as into the slits. Sprinkle with 2 tablespoons salt. Cover the fish with cold water in a deep baking dish or large bowl. Pour in the white vinegar and let sit for 5 minutes. Rinse and pat dry.
- Mix the 3/4 teaspoon remaining salt, the all-purpose seasoning, garlic powder, cayenne, black pepper and allspice in a small bowl. Sprinkle the mixture into the slits and inside the fish. Rub the reserved 1 cup of epis all over the fish. Refrigerate for 2 hours or overnight.
- Just before you're ready to cook, place the banana leaves on your counter until defrosted, about 20 minutes. Soak the twine in a small bowl of warm water.
- When ready to cook, prepare a grill for medium-high heat.
- Place the 2 pieces of twine perpendicular to each other, the longer piece horizontally and the shorter piece vertically. Place one large piece of banana leaf horizontally on top of the twine, making sure it's centered. Place 2 long pieces of banana leaf vertically on top of the horizontal piece.
- Layer the thinly sliced onion and thinly sliced green and red bell peppers in the center of the banana leaf and lay the fish on top. Place lemon slices in the slits of the fish and one bay leaf in each slit that is facing up. Place the remaining lemon slices in the cavity. Poke the whole cloves into the remaining Scotch bonnet and place it in the fish's head. Roll up one side of the banana leaf from left to right making sure to tuck the flap under the vegetables. Roll the second side of the banana leaf from right to left, making sure to tuck it under the fish tightly. Fold the banana leaf flap from bottom to top under the fish. Repeat folding from top to bottom. Grab the twine and tightly tie the packet lengthwise and widthwise, sealing the fish in. Brush both sides of the packet with vegetable oil.
- Place the fish on the grill and cook on both sides until the leaves are charred, 15 to 18 minutes per side. Remove it from the grill and allow to rest for 5 minutes. Transfer to a serving platter. Cut the twine and banana leaf open to release steam. Serve the fish sprinkled with the chopped parsley.

Steps:
- Set out a 1-2 cup measuring pitcher. Measure all ingredients into the pitcher. Whisk until smooth. (Use immediately or cover and refrigerate for later use.)
- Trim and slice all the vegetables into long strips. This makes them less likely to fall through the grill grates.
- Place the vegetables on a large rimmed baking sheet. Pour the marinade over the vegetables. Then gently toss the veggies to coat in the marinade.
- Allow the vegetables to marinate for 30+ minutes. (Or up to several hours.)
- Meanwhile, preheat the grill to medium heat, about 350 degrees F.
- Once the grill is hot, place the carrots on first, laying them across the grates so they don't fall through. Let the carrots grill for 3-4 minutes, then flip them over. Then lay the rest of the vegetables on the grill. Grill another 8-10 minutes, flipping once. Remove with tongs.
