1-1/2 pounds boneless beef round steak (1/2 inch thick)
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons canola oil
2 medium carrots, chopped
1 medium onion, chopped
1 cup chopped green pepper
3/4 cup chopped celery
1 teaspoon cornstarch
1/2 cup cold water
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon prepared horseradish

Steps:

  • Cut steak into serving-size pieces. Combine the flour, salt and pepper; sprinkle over both sides of steak. In a pressure cooker, brown steak on both sides in oil; drain. Add carrots, onion, green pepper and celery. , In a bowl, combine cornstarch and water until smooth; add soup and horseradish. Pour over vegetables., Close cover securely; place pressure regulator on vent pipe. Bring cooker to fully pressure over high heat. Reduce heat to medium and cook for 12 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. Immediately cool according to manufacturer's directions until pressure is completely reduced.

1 boneless beef chuck steak (1 lb.), cut into 4 pieces
1/4 cup flour
1/4 cup tomato paste
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 cup beef broth
1 green pepper, chopped
2 cups hot mashed potatoes
1/2 cup shredded KRAFT Swiss Cheese

Steps:

  • Heat dressing in large nonstick skillet on medium-high heat. Meanwhile, coat meat with flour; gently shake off excess flour. Add meat to skillet; cook 2 to 3 min. on each side or until evenly browned on both sides. Remove from heat.
  • Combine tomato paste, tomatoes and broth in Slow Cooker. Add meat and peppers; cover with lid. Cook on LOW 8 to 10 hours (or on HIGH 3 to 4 hours).

2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, salt, paprika and pepper. Add steak; toss to coat. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add steak, reserving remaining flour mixture; brown steak on all sides. Spoon into ungreased 2 1/2-quart casserole.
  • To same skillet, add remaining 1 tablespoon oil, the mushrooms, onions and garlic. Cook 2 to 3 minutes, stirring constantly, until browned; add to casserole. Add carrots, tomatoes and reserved flour mixture; mix well.
  • Cover casserole. Bake 1 hour 30 minutes to 1 hour 45 minutes or until meat and vegetables are fork-tender.

1 ½ pounds round steak, cut into small pieces
3 tablespoons vegetable oil
3 stalks celery, chopped
1 onion, chopped

1 tablespoon Worcestershire sauce
2 tablespoons brown sugar, or to taste

Steps:

  • In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
  • Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.

2 teaspoons salt, divided
3/4 teaspoon pepper, divided
1/2 teaspoon garlic salt
2 pounds beef top round steak, cut into serving-size pieces
3 tablespoons canola oil
2 cups chopped green pepper
1 cup chopped celery
1 cup chopped onion
1 garlic clove, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 cup beef broth
1 tablespoon reduced-sodium soy sauce
1/4 cup cold water

Steps:

  • In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. ½ teaspoon salt
¼ teaspoon ground black pepper
2 pounds beef round steak, cut 1-inch thick
2 tablespoons vegetable oil
¼ cup water, or as needed
1 (14.5 ounce) can diced tomatoes
½ cup minced green bell pepper
1 teaspoon onion powder
½ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.
  • Heat vegetable oil in a large skillet over medium heat; cook the floured beef in the hot oil until browned on both sides, about 15 minutes. Reduce heat to low, pour in water, cover skillet, and simmer beef until tender, about 1 hour. Add more water to the skillet if needed to prevent burning.

The recipe comes from my 1973 "The Good Housekeeping Cookbook" which was my one-and-only cookbook for many years, before the advent of the internet. I decided to make Swiss Steak, having not made it in many years, so I dug out this old cookbook buried in the back of a kitchen cabinet (you know, the ones above the refrigerator) to get my old time recipe. I still had a place marker on the page!

3/4-1 lb boneless beef round steak, cut about 1/2-inch thick
1 1/2 tablespoons all-purpose flour
1 tablespoon vegetable oil ("salad oil")
16 ounces tomatoes, canned
1/2 green pepper, sliced
1 onion, medium, sliced
1 1/2 teaspoons basil
1 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • On cutting board with sharp knife, trim any excess fat from meat and cut meat into 2 serving pieces. Coat meat on one side with half of the flour; with meat mallet (or edge of plate or dull edge of French knife), pound meat well. Turn meat over and repeat on other side.
  • In 8-inch skillet over medium heat, in hot oil, cook meat until browned on both sides. Add tomatoes and their liquid and remaining ingredients; heat to boiling. Reduce heat to low; cover and simmer about 1 hour or until meat is fork-tender.
  • Makes 2 generous servings. Serve with mashed potatoes (or rice or noodles).

1 tablespoon canola oil
2 lbs round steaks, cut into cubes
2 onions, chopped finely (medium size)
1 carrot, thinly sliced
1 stalk celery, thinly sliced
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons flour
1 (28 ounce) can plum tomatoes, drained and chopped
1/2 cup reserved juice from canned tomato
1 tablespoon Worcestershire sauce
1 bay leaf

Steps:

  • In a skillet, heat oil, then brown steak on all sides. Transfer to slow cooker.
  • Reduce heat to med-low, then add onion, carrots, celery, salt and pepper to pan, then cover and cook until veggies are a little softened - about 5 minutes.
  • Sprinkle flour over the veggies and cook for 1 minute, stirring, then add tomatoes, reserved juice, and worchestershire. Bring to a boil, stirring until thickened, then add bay leaf.
  • Pour tomato mixture over steak into the slow cooker and cook on low 8 - 10 hours or on high 4 - 5 hours, until meat is tender.
  • Discard bay leaf and serve with crusty bread or buttered noodles.
