GRILLED TUNA BURGERS WITH SPICY MAYO



Grilled Tuna Burgers with Spicy Mayo image

1 tablespoon toasted sesame oil
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper flakes
1 egg, lightly beaten
1 pound sushi-grade tuna, finely diced
1/4 cup finely diced red bell pepper
2 scallions, finely sliced
Kosher salt and freshly ground black pepper
1/2 cup panko breadcrumbs
Vegetable oil, for cooking
4 seeded hamburger buns, split
Spicy Sriracha Mayo, recipe follows
4 medium butter lettuce leaves
1 beefsteak or heirloom tomato, sliced
Dry Riesling, for serving
1 cup mayonnaise
1/2 cup sour cream
1 1/2 tablespoons Sriracha
1 teaspoon lemon juice
1 teaspoon honey
4 grilled scallions, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Add the sesame oil, soy sauce, red pepper flakes and egg to a large mixing bowl. Mix well, then fold in the tuna, red bell pepper and scallions. Mix well to coat everything evenly. Sprinkle with salt and fold in the panko breadcrumbs to lightly bind everything. Carefully form the mixture into 4 even-size patties and set on a platter. Refrigerate so the patties firm up and hold their shape when cooked, 15 to 20 minutes.
  • Heat a large nonstick skillet over high heat. Coat the pan with a little vegetable oil and cook the tuna patties 3 minutes per side (when done, the patties will be browned on the outside and medium-rare in the center).
  • Grill the hamburger buns over high heat until well charred and crispy.
  • Serve the tuna burgers slathered with the Spicy Sriracha Mayo, lettuce leaves and tomato slices on the toasted, seeded hamburger buns, paired with the dry Riesling.
  • Combine the mayonnaise, sour cream, Sriracha, sesame oil, lemon juice, honey and scallions in a large mixing bowl. Stir well to combine, season with salt and pepper and place in the refrigerator until ready to serve.

2 cloves garlic, peeled and minced
2 tablespoons tarragon vinegar
½ teaspoon dried tarragon
freshly ground black pepper to taste
1 ½ pounds fresh tuna steaks

Steps:

  • In a medium bowl, whisk together olive oil, garlic, tarragon vinegar, dried tarragon and pepper. Place tuna steaks into the mixture. Cover and marinate in the refrigerator at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Grill tuna steaks 8 to 10 minutes per side, until the tuna flakes easily and is opaque in the center.

1/4 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
2 teaspoons chopped fresh thyme
2 teaspoons dried tarragon
2 large garlic cloves, finely chopped
1/3 cup mayonnaise
4 7-ounce tuna steaks (each about 1 inch thick)

Steps:

  • Whisk together first 6 ingredients in shallow dish for marinade. Place mayonnaise in separate small bowl. Whisk in 1 1/2 tablespoons marinade. Set aioli aside.
  • Sprinkle fish with salt and pepper. Place fish in marinade in dish, turning to coat evenly. Marinate 1 hour at room temperature, turning fish occasionally.
  • Oil grill rack. Prepare barbecue (medium-high heat). Grill fish to desired doneness, about 3 minutes per side for medium. Top fish with aioli and serve.

1/2 to 1 small fresh jalapeno or serrano chile
4 cloves garlic, chopped
1/4 cup extra-virgin olive oil, plus more for grilling
Handful fresh cilantro, coarsely chopped
Juice of 4 limes
Kosher salt and freshly ground black pepper
2 (12-ounce) tuna steaks (about 1 1/4 inches thick)
1 tablespoon extra-virgin olive oil
Steamed green beans, for serving, optional

Steps:

  • 1. Heat an outdoor grill or a stovetop grill pan to medium-high.
  • 2. Halve chile lengthwise, remove stem, and scrape out seeds.(For maximum heat, do not remove seeds.) Thinly slice chile and set aside.
  • 3. Stir garlic and olive oil together in a medium microwave-safe bowl, cover loosely with plastic wrap, and microwave on HIGH until garlic is soft and aromatic, about 2 minutes. Stir in chile, lime juice, cilantro, and 1 teaspoon salt to hot oil. Set mojo aside to cool until ready to serve.
  • 4. Brush tuna with olive oil and season generously with about 1/2 teaspoon salt and black pepper, to taste. Grill, turning once, until distinct grill marks are seared into fish, 3 to 5 minutes per side for medium rare or 4 to 6 minutes for medium-well. Let rest for 5 minutes.
  • 5. Slice each tuna steak in half, divide among plates, and drizzle with some of mojo. Serve with green beans and any remaining sauce on the side.

3 tablespoons fresh lemon juice
2 large egg yolks
1 tablespoon water
2 tablespoons chopped fresh tarragon
Additional olive oil
6 6-ounce tuna steaks (1 inch thick)
6 fresh tarragon sprigs

Steps:

  • Whisk 1/4 cup oil, lemon juice, yolks and water in small metal bowl. Set bowl over saucepan of barely simmering water (do not allow bottom of bowl to touch water); whisk constantly until thermometer maintains 140°F for 3 minutes, about 6 minutes total. Transfer to processor. With machine running, very gradually add 1/2 cup oil in thin steady stream (if oil is added too quickly, the mayonnaise will separate and become runny). Mix in chopped tarragon. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Drizzle additional oil over fish. Sprinkle with salt and pepper. Grill or broil about 3 minutes per side for medium. Transfer to plates. Top with mayonnaise. Garnish with tarragon sprigs.

3 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons sherry

4 tuna steaks (6 ounces each)

Steps:

  • In a small bowl, combine the first eight ingredients. Remove 1/3 cup to a small bowl for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add tuna. Seal bag and turn to coat; refrigerate for up to 1 hour., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Must be all the beautiful weather we've had has forced me out of my hot kitchen into the sunshine. You can use either fresh or frozen Salmon for this recipe.

1 1/2 lbs salmon fillets
1/4 cup mayonnaise
1/4 cup green onion, sliced
1 tablespoon lemon juice
1 1/4 teaspoons dried tarragon, crushed & divided
1 tablespoon margarine, softened
1 teaspoon lemon, thinly sliced

Steps:

  • Thaw fish, if frozen.
  • For sauce:.
  • In a small bowl combine 1/4 cup mayonnaise, 1/4 cup sliced green onions, 1 tbs lemon juice, and 2 tsp tarragon.
  • Cover and chill.
  • Tear heavy foil slightly longer than salmon.
  • Poke several holes in foil with a fork.
  • Spray foil with nonstick coating.
  • Place salmon, skin side down, on foil.
  • Stir together softened margarine and 1 teaspoon fresh tarragon.
  • Spread butter mixture over salmon.
  • Place foil with salmon on grill.
  • Cover and grill for 4 to 6 minutes until fish begins to flake easily when tested with a fork.
  • Serve with sauce.
  • If desired, garnish with lemon slices and tarragon sprigs.

1 large garlic clove, minced
1 teaspoon fresh ginger, minced
1/2 teaspoon salt
1 teaspoon mccormick steak seasoning (to taste, seasoned black pepper)
1/3 cup mayonnaise
1 1/2 teaspoons soy sauce
1 -1 1/2 teaspoon wasabi powder (to taste)

Steps:

  • Wasabi Mayonnaise:.
  • Mix all ingredients together in small bowl.
  • Cover with plastic wrap and chill until flavors blend, at least 10 minutes.
  • Tuna Burgers:.
  • With your knife, using a rocking motion, chop tuna until it is coarsely ground into pieces about 1/8 inch each.
  • In medium size bowl mix tuna with garlic, ginger, salt, and pepper (to taste). Divide mixture into 4 portions approximately 5 ounces each. Using your hands press into patties about 1 inch thick.
  • Chill patties in refrigerate for at least 15 minutes.
  • Preheat grill until very hot (about 15 minutes). Leave all burners on high.
  • Oil grate (with a small wad of paper towels soaked in vegetable oil).
  • Grill burgers, covered, until browned on one side, about 3 minutes. Flip burgers with greased metal spatula.
  • Continue grilling, covered, to desired doneness, about 3 minutes for medium-rare or 4 minutes for medium, 5 minutes for medium-well (do not overcook).
  • Serve immediately with wasabi mayonnaise.
