THE BEST SHRIMP SCAMPI
A classic menu item from every great Italian-American restaurant, this shrimp scampi hits all the right notes - buttery, lemony, garlicky. We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

- Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and sprinkle with salt and pepper.
- Melt 2 tablespoons of the butter in the skillet. Add half the shrimp and cook until golden pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another tablespoon of the butter in the skillet and cook the remaining shrimp.
- Return the skillet to medium heat. Add 1 tablespoon of the butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
- Stir in the wine and lemon juice. Increase the heat to high and boil the liquid until it thickens slightly, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons butter and the parsley. Add the shrimp back to the skillet and toss to coat with the sauce. Transfer to a serving dish and top with more chopped parsley. Serve with crusty bread or pasta.
SHRIMP SCAMPI PIZZA
Reinvent the classic pasta dish in pizza form. Top pizza dough with tender shrimp, two cheeses and a lemony, garlic-infused butter sauce. Sprinkle with an extra pinch of crushed red pepper for an added kick of heat.

- Set an inverted baking sheet on a rack in the center of the oven and preheat the oven to 450 degrees F. Invert another baking sheet and place a piece of parchment on top and set aside.
- Melt the butter in a small saucepan over medium heat. Stir in the garlic and crushed red pepper flakes, and cook until fragrant, about 2 minutes. Pour in the wine and reduce until the alcohol smell is no longer present and the sauce is golden, 4 to 5 minutes. Remove the pan from the heat and stir in the lemon zest. Season with salt and pepper and set aside.
- Dust the parchment paper on top of the inverted baking sheet with flour. On a lightly floured work surface, roll out and stretch the dough into a 12-inch circle then place it on the paper. Scatter the shrimp evenly over the dough leaving a 1/2 inch border all around. Spoon the butter sauce over the shrimp, and use a pastry brush to spread the sauce to the edges. Finish by sprinkling the mozzarella cheese over the top, staying within the border.
- Place the sheet pan with the pizza on top of the preheated inverted baking sheet and bake until the dough is crisp and the shrimp are cooked through, 12 to 14 minutes. Sprinkle the pizza with the parsley and freshly grated Parmesan, slice into wedges and serve immediately.

- Place the flour on a rimmed plate, and season with salt and pepper. Toss the shrimp in the flour, and shake off excess. Heat the oil in a large skillet over medium heat; cook the shrimp until pink, about 2 minutes per side. Remove shrimp from skillet, and reserve.
- Discard all but 1 tablespoon oil from the skillet. Cook the shallots and garlic in the oil until soft, about 2 minutes. Pour in the wine, 1/2 cup chicken broth, and the lemon juice. Simmer for about 5 minutes, or until reduced to about 3/4 cup. Stir in the remaining 1/2 cup of chicken broth and the cream, and simmer until sauce is reduced and thickened slightly, approximately 10 minutes more. Add the butter, and stir until melted.
- Return the shrimp to the skillet; simmer until heated through, about 3 minutes. Sprinkle with the parsley and Romano cheese before serving.

Sauted shrimp in a garlic/onion butter and white wine sauce, poured over crunchy bread with olives, green onions and tomatoes to garnish. Who wouldn't like it? It's my brother's favorite item at the Olive Garden, I've never had it but fooling around in the kitchen he said it was very close to the actual thing. I like it, so yay me! I guess this clarifies as a copycat. I plan this as the main dish of a meal, but it normally is an appetizer.

- Cut the loaf of bread on an angle, half an inch thick, at least 35 slices.
- Arrange 5 slices on serving plates so they face in like flower petals.
- (You can toast the slices if you like) Heat the butter in a large skillet until it's bubbling lightly.
- Add the garlic and the WHITE of the onions and cook for a minute.
- Add shrimp and cook until it's just done.
- Place a piece of shrimp on the bread closest to the center of the circle, any extra I put in the space left in the center.
- Add the wine and olives to the remaining garlic butter in the skillet and cook until it's lightly boiling.
- About 2 minutes.
- Spoon sauce over the shrimp and bread.

- Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
- Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. - Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Serve with lemon wedges.
SICILIAN SHRIMP SCAMPI
I got this recipe from the CopyKat website. It purports to be from The Olive Garden restaurant. I cannot attest to that fact, but I can attest to it being a deliciously creamy/cheesy/lemony-tart dish. I did change the cooking procedure a bit and added just a little bit of additional seasonings. You can serve it over toasted garlic bread slices or pasta. The cheese does need to be finely grated so I used the smallest hole on my box grater to grate the Asiago and I ran the grated Mozzarella through my food processor. A co-worker even suggested serving it over baked or broiled fish.

- Combine flour and water in small bowl stirring to make a smooth paste then set aside.
- In heavy saute pan add olive oil and heat over medium heat.

This is one of those classic dishes that doesn't need anything more. It's always about allowing the subtle sweetness and brininess of the shrimp to coexist peacefully with the garlic and oil. - Melt 1 1/2 teaspoons butter in a small skillet over medium-high heat, then add the panko and cook, stirring constantly, until the breadcrumbs are golden and toasty-scented, about 2 minutes. Set aside.
- Sprinkle the shrimp on both sides with salt. Heat a large skillet over medium-high heat and add the canola oil. When the oil begins to smoke lightly, quickly arrange the shrimp in a single layer, with a little space between each. - Combine the shallots, five garlic cloves, and 2 tablespoons of the oil in a mini-food processor. Process to make a smooth paste.
- Pour 6 tablespoons olive oil and the remaining garlic into a large skillet over medium-high heat. Let the garlic sizzle for a minute, then add half of the shrimp and all of the thyme sprigs. Season with ½ teaspoon salt, and cook until the shrimp are seared but not fully cooked, about 1 to 2 minutes. Remove to a plate, and repeat with the remaining shrimp and another ½ teaspoon salt. Remove the shrimp and thyme from the skillet to the plate.
- Add the remaining 4 tablespoons olive oil and the garlic-shallot paste to the same skillet set over medium heat. Cook, stirring constantly, until the paste has dried out and begins to stick to the bottom of the skillet, about 2 to 3 minutes. Return the thyme to the skillet, and pour in the white wine, lemon juice, the remaining 1½ teaspoons salt, 4 tablespoons of the butter, and 1 cup water. Bring the sauce to a rapid boil, and cook until reduced by half, about 4 to 5 minutes.
- When the sauce has reduced, whisk in the remaining butter and return the shrimp to the pan. Cook and toss until the shrimp are coated with the sauce and just cooked through, about 2 to 3 minutes. Stir in the parsley. If the sauce still seems too thin, stir in the bread crumbs and bring to a boil just to thicken. Serve immediately.

- To make the Stock: 2 cups water 3 bouillon cubes and the shells from shrimp.
- Boil a few minutes and strain out the shells (discard shells).
- Heat a skillet very hot.
- Dredge shrimp lightly in flour.
- Place enough olive oil in pan to coat the bottom.
- Sauté shrimp on both sides until pink.
- Add garlic stirring constantly.
- After about 1 minute deglaze pan with wine followed by stock,stirring constantly.
- Once started a low boil slowly add rue constantly stirring.
- Remove from heat and add butter stir until completely incorporated.
- Return to heat and cook a few minutes longer.
- Add more stock and wine if to thick.
- Throw in parsley just before serving for color.
- Serve over linguine.
