Grilled Italian Sausage Kabobs are like a sausage hoagie without the bun, the sauce, and the cheese. Okay so it's really not like a sausage hoagie, but they're super delicious anyway!

Number Of Ingredients 4

19 ounces sweet Italian sausage
2 whole red bell peppers, cut into bite sized pieces (about softball size)
3 sweet onions (baseball size)
3 to 4 yellow squash (5 to 6 inches long)

Steps:

  • Preheat grill on high heat.
  • Cut the sausage into 1 1/2 inch pieces.
  • Peel the onion and carefully slice into wedges. Make sure to keep the core intact to keep them from falling apart.
  • Cut the squash into 1/4 inch rounds.
  • Thread the sausage, bell pepper, onion, and squash onto the skewers.
  • Lightly brush with olive oil. Grill 3 to 4 minutes per size or until the vegetables have great grill marks. Flip the kabobs over and grill an additional 3 to 4 minutes or until the sausage is cooked through.
  • Serve with pasta, rice, buns, a fork.

4 - 6 Hot Italian Sausages
1 sweet pepper, any color
½ onion, sliced into large segments and separated
⅓ c oil
3 tbsp balsamic vinegar
½ tsp Italian seasoning
as desired salt and pepper

Steps:

  • Preheat grill to 350 or medium heat.
  • Cut the sausages up into bite size pieces.
  • De-seed and cut the peppers into chunks.
  • In a bowl, combine the oil and vinegar, with the Italian seasoning, salt and pepper.
  • Alternate threading the pieces of sausage, pepper and onion onto the skewers.
  • Grill the skewers for approximately 8 - 10 minutes, basting with the vinegar/oil combination. Continue this every two minutes or so or until the sausage has been cooked through and the vegetables are tender.
  • Serve over rice, or simply enjoy as an appetizer!

8 Italian sausage links (sweet, hot or a combination), halved crosswise
10 baby bell peppers (8 whole, 2 thinly sliced)
3 tablespoons extra-virgin olive oil
Kosher salt
1 cup pennette or other small pasta
2 cups baby spinach
1/4 cup pitted green olives, sliced
1 clove garlic, grated or minced
2 tablespoons chopped fresh basil
Freshly ground pepper
2 tablespoons grated parmesan cheese

Steps:

  • Heat a grill pan over medium heat and coat with cooking spray. Thread 2 sausage halves and 1 whole baby bell pepper onto each of 8 metal skewers. Brush the kebabs with 1 tablespoon olive oil and grill, turning as needed and covering the pan halfway through cooking, until marked all over, about 20 minutes. Meanwhile, bring a large saucepan of salted water to a boil. Add the pasta and cook as the label directs. Combine the 2 sliced baby bell peppers, the spinach, olives, garlic, basil and the remaining 2 tablespoons olive oil in a large bowl; toss to coat. Drain the pasta and immediately transfer to the bowl with the spinach mixture; toss to combine. Season with salt and pepper and top with the cheese. Serve the pasta salad with the kebabs.

1 tablespoon dried basil
1 tablespoon canola oil
1 1/2 lbs Italian sausage, 1 1/2-inch pieces
2 medium zucchini, 1-inch pieces
1 medium red bell pepper, 1 1/2-inch pieces
1 medium green bell pepper, 1 1/2-inch pieces
6 large pimento stuffed olives

Steps:

  • Mix pizza sauce, basil, and oil; reserve.
  • Cook sausage pieces in 10-inch skillet over medium heat about 10 minutes, turning occasionally, until partially cooked; drain.
  • Thread sausage, zucchini and bell pepper pieces alternately on each of six 15-inch metal skewers, leaving space between each.
  • Place olive on tip of each skewer.
  • Cover and grill kabobs 5 to 6 inches from medium coals 20 to 25 minutes, turning and brushing 2 to 3 times with pizza sauce mixture, until sausage is done and vegetables are crisp-tender.

2 medium zucchini, cut into 1-inch pieces
1 medium red bell pepper, cut into 1 1/2-inch pieces
1 medium green bell pepper, cut into 1 1/2-inch pieces
6 large pimiento-stuffed olives
1/2 cup pizza sauce
6 cups hot cooked pasta (any variety)

Steps:

  • Cook sausage in 10-inch skillet over medium heat about 10 minutes, stirring occasionally, until partially cooked; drain. Thread sausage, zucchini and bell peppers alternately on each of six 12-inch metal skewers, leaving space between each piece. Place olive on tip of each skewer.

2 tablespoons olive oil
1 garlic clove, finely chopped
1 dash salt
1 dash fresh black pepper
1 (8 inch) baguette, diced in 1 inches cube
1/2 red onion, cut into 1 inch squares

Steps:

  • Put sausages in a plate going in the microwave and poke them. Cover with plastic wrap leaving an open corner to let escape the steam and cook at high power for about 5 minutes or until not pink inside. (you can do this step in advance, let cool and cover. They will be good until the next day in the fridge.). Cut in slices of 1 1/2 inches of thickness.
  • Meanwhile, in a bowl, mix oil, garlic, salt and pepper. On metal skewers or wood skewers previously soaked in water, thread sausages alternating with bread cubes and onions squares. Baste the skewers with the mixture of oil.
  • Set the barbecue to medium heat. Put the skewers on an oil grill. Close the cover and cook about 10 minutes or until sausages are grilled and onions are tender (flip the skewers 3 times during the cooking time).
