SWEET AND SPICY GRILLED PORK TENDERLOIN
This is my absolute favorite marinade for pork tenderloin. It is simple, sweet, warm flavors and a little spice with some red pepper. Just marinade in a large baggie anywhere from 4-8 hours and grill. You can use an indoor grill, but I prefer outdoor.

Steps:
- Marinade -- In a large baggie add all the ingredients, close and shake well. Add the pork tenderloins and let marinade.
- Grill -- Let set at room temp 20-30 minutes to take the chill off and then grill. After grilling cover and rest 5-10 minutes. Slice and enjoy.
PORK TENDERLOIN WITH POMEGRANATE GLAZE

Steps:
- Stir together cinnamon, salt, coriander, cumin and pepper in a shallow bowl. Pat tenderloins dry and dredge in spice mixture until evenly coated.
- Heat oil in a 12-inch heavy skillet over medium-high heat until hot but not smoking. Reduce heat to medium and cook pork, turning occasionally, until meat is browned on all sides and an instant-read thermometer inserted diagonally into center of each tenderloin registers 145 degrees F, 20 to 25 minutes. Transfer pork with tongs to a cutting board and let stand 10 minutes.
- Meanwhile, pour off and discard any fat from skillet, then add pomegranate juice and boil over medium-high heat until reduced to about 2/3 cup, about 3 minutes (if side of skillet begins to scorch, reduce heat to medium). Stir together cornstarch and 1 tablespoon water and whisk into juice, then boil sauce until thickened slightly, 1 to 2 minutes.
- Remove from heat and add vinegar to taste. Swirl in butter until incorporated. Pour sauce through a fine-mesh sieve into a bowl and skim off any fat. Season with salt. Slice pork and serve with sauce.
GRILLED TENDERLOIN WITH SPICY POMEGRANATE SAUCE
This is a revelation! I made this with sweet potatoe fries on the grill. The Pomegranate sauce is rocking . I dipped everything in it. It probably wouldnt hurt to double the sauce recipe since you can always use it for something. The jalapeno had a very nice smooth bite to this recipe but it was mild enough to make my DD lick her plate. ENJOY!

Steps:
- Combine juice and jalapenos in a small saucepan.
- Heat over high heat until mixture boils.
- reduce heat to medium and cook, uncovered, about 15 minutes or until mixture reduces to about half its volume.
- Remove from heat.
- Stir in vinegar, honey,1/8 tsp salt, 1/8 tsp pepper, and crushed red pepper.
- Measure out and reserve about 3 tablespoons juice mixture to serve at the table.
- Combine 1/2 teaspoon olive oil, remaining salt and pepper and garlic.
- Brush oil mixture evenly over pork loin.
- Preheat grill to medium-high or allow coals to burn down to white ash.
- Cook pork over direct heat about 17-20 minutes, turning to brown evenly, or until meat thermometer registers 155°for medium doneness.
- Brush generously and frequently with cherry sauce during last 10-15 minutes of cooking.
- When pork is done, remove from grill and cover with aluminum foil. Allow to stand 5-10 minutes.
- Slice pork crosswise and arrange on platter.
- Drizzle with reserved sauce.

GRILLED PORK TENDERLOIN WITH SPICY PEACH GLAZE
A friend gave me this recipe and said it was from Martha Stewart. The original recipe calls for chicken, but I use it for pork tenderloin. I am sure it would be great on chicken as well. Super easy, moist and flavorful.

Steps:
- Heat the grill to medium hot.
- In a medium mixing bowl, combine the preserves, garlic, olive oil, soy sauce, dry mustard, cayenne pepper, salt and black pepper, and mix well to combine.
- Sprinkle the tenderloins with additional salt and pepper and place on the grill. Cook about 10 minutes on each side before brushing the upturned side with the glaze. Continue cooking for another 10 to 12 minutes, turning every 3 to 5 minutes and brushing each upturned side with glaze every time, until the meat is cooked through. Move the pork to a cooler part of the grill if it starts to get too dark before it is cooked through.
- Place the peach halves on the grill, cut-side down, and grill 2 minutes. Turn, and brush the tops with the glaze. Grill 3 ro 5 minutes more, until the peaches are soft and the cavities fill with juices. Transfer the cooked pork and peaches to a serving plate & serve immediately.
SPICY GRILLED PORK TENDERLOIN
I was experimenting in the kitchen the other day, and this is what I ended up with. I topped the tenderloin with sautéed mushrooms and served it with steamed asparagus and white rice. Prep time does not include overnight marinade.

Steps:
- First, make the marinade.
- Combine soy sauce, sherry, mustard, horseradish, garlic, ginger, red pepper, and onion powder.
- Shake well in a sealed container to blend.
- Place Tenderloin in a 1 gallon ziploc bag.
- Pour marinade over tenderloin in bag and seal.
- Refrigerate overnight, turning occasionally.
- Heat grill to medium heat, about 350-375°F.
- Remove meat from marinade.
- Reserve marinade!
- Grill tenderloin over medium heat about 25-30 minutes or until done.
- Internal temp should reach 170°F to be done.
- While tenderloin is grilling, heat reserve marinade in a saucepan to a boil.
- Combine a little water with a little cornstarch and slowly add to boiling marinade, stirring constantly to achieve a medium bodied sauce.
- When tenderloin is done, slice thinly and arrange on plate.
- Top with sauce & serve.
SPICY PEPPER JELLY MARINATED PORK TENDERLOIN
From Sara Foster's Southern Kitchen. The recipe in the book calls for grilling. Heat one side of your grill to medium, and place pork on the hot side, grilling for 12 to 15 minutes, turning 3 times and basting with reserved marinade. Move pork to the cool side and close the grill cover. Cook for another 3 to 5 minutes, or until a thermometer registers 145 F. Let rest before slicing.

- Pat the pork dry and remove any excess fat.
- Whisk together the remaining ingredients, and then pour over the pork (or into a resealable bag, with the pork). Marinate at least two hours or overnight. Turn the pork several times, to distribute the marinade evenly.
- Preheat the oven to 425.
- Remove the pork from the bag/bowl, and pour the marinade into a small saucepan. Liberally salt and pepper the tenderloin.
- Heat a large, heavy-bottomed skillet over medium high heat. Once hot, add the pork and sear on all sides, about 8 minutes. Place the entire pan in the oven and cook until internal temperature reads 145, about 15 minutes.
- Meanwhile, bring the marinade to a boil on the stove. Boil for about 5 minutes, until thickened.
- Brush the cooked tenderloin with the boiled marinade. Tent the pork with foil and let it rest for 5-10 minutes before slicing.
