EGGLESS WAFFLES
This is my staple recipe for golden and buttery Eggless Waffles! They're perfectly crispy on the outside and fluffy on the inside. This recipe has no eggs...and you won't even notice a difference!

Steps:
- Combine the flour, sugar, baking soda, baking powder, and salt in a medium bowl and stir using a balloon whisk to combine.
- Add the wet ingredients: buttermilk, butter, and vanilla, and mix until smooth. Do not over mix; otherwise, the waffles will be heavy when cooked. Let the batter rest at room temperature for 10 minutes.
- Preheat a waffle iron according to the manufacturer's instructions.
- Spray the waffle iron with non-stick cooking spray. Pour the batter into the waffle iron and cook according to the manufacturer's instructions, usually for 2 to 3 minutes. PRO TIP: your waffles most likely be ready when you don't see more steam coming out of the side of the waffles maker.
- Place in a 200º F (95º C) oven to keep waffles warm while you finish with the rest of the batter. I recommend placing the waffles directly on the oven rack in a single layer; this way, the heat will circulate properly, and the waffles will retain their crisp texture.

- Preheat a waffle iron.
- In a medium bowl, mix together the milk and vinegar. Allow to sit aside for about 5 minutes.
- In the meantime, in a small bowl, melt the butter in the microwave until it is just about melted (about 30-45 seconds). Whisk in the maple syrup while it is still warm. Mix in the vanilla.
- In a large bowl, mix together the flour, oats, baking powder and salt. Make a well in the dry ingredients, and slowly add in the milk mixture and the butter mixture. Whisk together until everything is mixed and the batter has come together.
- Pour or scoop the waffle batter into a hot waffle iron (I used a ¼ cup measuring cup for each waffle, but waffle makers vary). Cook waffles for about 4 minutes each, until cooked through. Once done, transfer the waffles to a cooling rack.

- Preheat a mini waffle iron (such as Dash™) and spray with nonstick cooking spray.
- Pour 3/4 cup plus 1 tablespoon water into a large bowl. Stir in flour, sugar, vanilla extract, and salt to make a batter.
- Beat cream in a chilled glass or metal bowl with an electric mixer until soft peaks form. Fold into the batter, being careful not to overmix.

EGGLESS WAFFLES

- Mix all the dry ingredients.
- Add the Buttermilk and ButterBuds.
- Stir a couple times.
- Add enough water to thin the batter to the consistency of heavy cream.
- Let batter rest for 5 minutes and it will absorb a lot of liquid and thicken.
- Thin again with water to heavy cream consistency. (This is a lot thinner than any waffle recipe seen where you fold in egg whites, etc.).
- Bake in Pam sprayed hot iron until steam stops.
- Peek! If the waffles start to pull apart bake another couple of minutes.
- Tip: Fat free waffles come out crisp, but are apt to get soggy when you add syrup. You can heat the plates in the oven and drizzle hot syrup on the plate.
- Then Place the waffle on top.
- Served good with yogurt and fruit.

EGGLESS PANCAKES
No eggs? No problem! You can still get the moisture and structure eggs provide pancakes by using buttermilk. The acid in the buttermilk keeps the pancakes tender and helps maintain a fluffy texture. A bit of extra butter in the batter also helps to keep the pancakes moist. They're all the better with a smear of butter and drizzle of maple syrup.

- Whisk the flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk the buttermilk, butter and vanilla in a medium bowl until incorporated. Whisk the buttermilk mixture into the flour mixture until just combined (it's OK if there are a few lumps).
- Heat a large nonstick skillet over medium heat and lightly brush with butter. Pour 1/3 cup of the batter into the skillet for each pancake and cook until bubbles form on top and the bottom is lightly browned, 1 1/2 to 2 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden on the other side, 1 to 2 more minutes. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as needed. Serve with butter and syrup.

- Put the flour in a bowl and make a well in the centre. Pour in the egg replacer and a quarter of the milk. Use an electric whisk to thoroughly combine the mixture. Pour in another quarter and whisk until lump free, then mix in the remaining milk. Leave to rest for 20 mins. Stir again before using.
- Heat a small non-stick frying pan with a knob of butter. When the butter starts to foam, pour a small amount of the mixture into the pan and swirl around to coat the base - you want a thin layer. Cook for a few mins until golden brown on the bottom, then turn over and cook until golden on the other side. Repeat until you have used all the mixture, stirring the mixture between pancakes and adding more butter for frying as necessary.
- Serve with orange segments and a drizzle of agave syrup or the pancake filling of choice.
