Banana Breakfast Cookies make a wholesome, yummy breakfast on-the-go. This banana recipe is naturally sweetened, gluten-free, and perfect for using up ripe bananas!

2 cups quick oats
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed banana (from approximately 2 large or 3 medium overripe bananas)
1/2 cup peanut butter (or your favorite nut or non-nut butter, like almond butter or sunflower seed butter)
2 tablespoons honey
1 teaspoon vanilla
1/2 cup chopped pecans (or your favorite nut)
1/4 cup chocolate chips or raisins (optional)

Steps:

  • Position rack in center of oven and preheat to 350°F. Line a baking sheet with parchment paper and set aside.
  • Measure oats, cinnamon, baking powder, baking soda, and salt into a large bowl; whisk to combine. Stir in mashed banana, peanut butter, honey, vanilla, pecans, and chocolate chips. Scoop dough using a scant 1/4-cup measuring cup for form 12 cookies. Flatten the top of each cookie on the baking sheet and bake for 14 to 16 minutes. Allow cookies to cool completely on baking sheet before storing in an airtight container.

What makes the perfect breakfast cookie? I've determined that people like a low-sugar cookie. They also really like oatmeal. As far chocolate? Less is more. These breakfast cookies are easy to make, assemble and serve-and are definitely not your average oatmeal-and-raisin cookies.

Yield about 12 cookies

Number Of Ingredients 7

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon banana extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups rolled oats
2 cups chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream butter or margarine with mixer. Blend in whole eggs, sugar, and extract. Add flour, baking soda, and salt. When the ingredients are thoroughly mixed, add oats and pecans. Mix on lower speed until consistent.
  • Drop pieces of the dough using an ice cream scoop onto an ungreased cookie tray roughly 3 to 4 inches apart.
  • Bake 8 to 10 minutes. Eight minutes would yield crispy cookies with a chewy, slightly doughy center. For harder, crispier cookies, bake longer. Cool on wire rack.

1/2 cup agave nectar
1/3 cup rice milk
1/3 cup brown sugar
1 tablespoon coconut oil

1 cup rolled oats

Steps:

  • Combine first 8 ingredients in large mixing bowl.
  • In a small bowl mix together the flour, baking powder and baking soda; Add to the wet mixture.
  • Stir in rolled oats, then banana and almonds.
  • Drop onto lightly greased baking sheet pressing dough down a bit so the centers will cook properly.
  • Bake 350 for 8-12 minutes when just firm to the touch.
  • Cool on cookie sheet.
