Grilled Dijon Chicken Caesar Salad image

In this tasty salad, chicken breasts are grilled with Dijon mustard and served with Parmesan cheese and a lemon-garlic dressing over romaine lettuce.

4 small boneless skinless chicken breasts (1 lb.)
3 Tbsp. GREY POUPON Dijon Mustard, divided
1/4 cup olive oil
2 cloves garlic, minced
2 Tbsp. lemon juice
2 Tbsp. KRAFT Grated Parmesan Cheese
2 qt. (8 cups) torn romaine lettuce

Steps:

  • Preheat grill to medium heat. Brush chicken with 2 Tbsp. of the mustard. Grill 15 min. or until chicken is cooked through (170°F), turning over after 8 min. Cut chicken diagonally into thin slices; set aside.
  • Combine remaining 1 Tbsp. mustard, the oil, garlic, lemon juice and cheese in medium bowl.
  • Cover large platter with lettuce; top with chicken. Drizzle with the mustard mixture.

3 slices white bread, crusts removed
1 teaspoon sunflower oil
Salt and pepper
1 egg
1 clove garlic, crushed
¼ cup anchovy fillets, drained
1 teaspoon Maille® Dijon Originale mustard
1 tablespoon white wine vinegar
½ cup extra virgin olive oil
4 smoked chicken breasts, sliced
2 small heads romaine lettuce, roughly torn
⅓ cup Parmesan cheese, finely grated

Steps:

  • Preheat oven to 350 degrees F. Cut the bread into 1-inch cubes and toss in the sunflower oil, salt and pepper. Spread onto a baking sheet and bake for 10 minutes, until crispy and golden. Remove from the oven to cool.
  • Place the egg, garlic, anchovy fillets, Maille® Dijon Originale mustard and vinegar into a food processor. Blend for 30 seconds, before slowly adding the olive oil. When all of the oil is added, the dressing should be slightly thickened.
  • Toss the roughly torn lettuce leaves in a mixing bowl, with the dressing, making sure that all of the leaves are coated. Arrange leaves on a serving platter, top with the slices of smoked chicken breast, croutons and Parmesan cheese.

4 cups sweet curly Romaine leaves, washed, dried and torn into large pieces
1/2 cup Smoky Caesar Dressing (recipe below)
Spicy croutons (recipe below)
1/4 cup Queso Anejo cheese
8 anchovy fillets
8 slices French or Italian bread, cut into 3/4 inch cubes
1/4 cup olive oil
2 teaspoons Too Hot Tamales chile powder (refer to recipe)
Salt and freshly ground black pepper, to taste
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1 teaspoon freshly ground black pepper
1 to 2 canned Chipotles
1 tablespoon Worcestershire sauce
Few drops hot sauce
Juice of one lemon
1 teaspoon capers
10 anchovy fillets
8 garlic cloves, cooked slowly in olive oil until soft
11/2 cups olive oil
1 tablespoon red wine vinegar

Steps:

  • Place the Romaine leaves in a large bowl. Add the croutons and Queso Anejo, then drizzle with dressing. Toss lightly to combine. Serve on salad plates topped with anchovies.
  • Preheat oven to 350 degrees. Place the bread cubes in a bowl and toss with the olive oil until well coated. Sprinkle in chile powder, salt and pepper and toss again. Place on a baking sheet and bake until lightly browned, about 7 minutes.
  • Place all the ingredients, except the olive oil and vinegar, in a blender or food processor. Process until coarsely blended. Transfer to a medium bowl. Slowly whisk in the oil, then the vinegar. Add a little water if the dressing is too thick.
