1 tablespoon salted butter, or more as needed
1 Vidalia onion, cut into bite-size pieces
2 zucchini, cut into bite-size pieces
1 yellow squash, cut into bite-size pieces
4 roma (plum) tomatoes, cut into bite-size pieces
kosher salt and freshly ground black pepper to taste

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, 5 to 8 minutes. Stir in the zucchini and yellow squash; cook until tender, 10 to 15 minutes. Mix in the tomatoes and cook until they start to break down, about 5 more minutes. Season with kosher salt and black pepper.

2 tablespoon Balsamic vinegar
1 tablespoon Olive oil
2 cloves Garlic minced
1 teaspoon Dried oregano crushed
3 medium Zucchini and or yellow summer squash halved lengthwise and cut crosswise into 1/2 in slices
1 large Red onion cut into 1/2 inch thick wedges
1 cup Red and or yellow grape tomatoes

Steps:

  • 1. For marinade: In a 3 qt rectangular baking dish, whisk together vinegar, oil, garlic, oregano and 1/4 tsp salt. Add squash, zucchini, onion, stirring to coat. Marinate at room temperature 10 minutes. 2. Meanwhile, lightly coat in grill pan with nonstick cooking spray. Preheat grill pan on a grill directly over medium coals 15 seconds. Using a slotted spoon, remove squash and onion from marinade and place in the grill pan. Reserve marinade. Grill vegetables 5-6 minutes or just until tender and lightly browned, stirring occasionally. Stir in the tomatoes. Grill 1 minute more or until tomatoes are heated through. (For a gas grill, preheat grill. Reduce heat to medium. Preheat grill pan as directed. Add vegetables as directed. Cover and grill as directed.) Remove vegetables, place on a serving platter. Drizzle reserved marinade over vegetables. Toss to combine.

1 yellow zucchini or yellow squash
Kosher salt
2 tomatoes, diced
1/2 red onion, finely chopped
1/2 jalapeno pepper, minced (remove seeds for less heat)
Juice of 2 limes
2/3 cup packed fresh cilantro (leaves and tender stems), chopped
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
8 skinless mahi mahi or striped bass fillets (about 6 ounces each)
Extra-virgin olive oil, for brushing
Freshly ground pepper

Steps:

  • Quarter the zucchini lengthwise, then thinly slice with a knife or mandoline. Transfer to a colander set over a bowl and toss with 1/2 teaspoon salt. Let drain 15 minutes.
  • Combine the zucchini, tomatoes, red onion, jalapeno, lime juice and half of the cilantro in a bowl. Set aside 1 hour.
  • Preheat a grill to medium high. Mix the cumin and coriander in a small bowl. Brush the fish all over with olive oil, then rub with the spice mixture and season generously with salt and pepper. Grill the fish until it is well marked and releases easily from the grill, about 4 minutes. Flip the fish and continue cooking until firm, 2 to 4 more minutes, depending on the thickness. Transfer to a platter.
  • Stir the remaining cilantro into the zucchini mixture and season with salt. Spoon over the fish.

2 tablespoons white wine vinegar
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
2 teaspoons chopped fresh thyme leaves
salt and black pepper
1/3 cup extra virgin olive oil
3 large zucchini
3 large yellow squash

Steps:

  • Whisk together the vinegar, lemon juice, garlic and thyme in a large bowl.
  • Season with salt and pepper and gradually whisk in the olive oil.
  • Slice both of the squash diagonally into 1/4" thick slices.
  • Spoon 3 tablespoons of the marinade into a small bowl, cover and set aside.
  • Add all the squash to the remaining marinade in the large bowl and toss to coat.
  • Transfer the mixture to a 13x9 glass baking dish, cover and marinate at room temperature for at least 3 hours.
  • Can also be refrigerated for up to one day to marinate.
  • Season squash with a little additional salt and pepper and grill on the barbecue or on an indoor grill pan until they are crisp tender and brown, turning occasionally for about 8 minutes.
  • Transfer squash to a serving platter and drizzle with the reserved 3 tablespoons of marinade.
  • Serve hot or at room temperature.

1 garlic clove, finely grated
1/4 cup white wine vinegar
4 medium summer squash and/or zucchini, cut lengthwise 1/4" thick
1 medium red onion, cut through root end into 8 wedges
2 bay leaves
Kosher salt, freshly ground pepper
8 oz. feta, crumbled into large pieces
4 banana peppers from a jar, thinly sliced crosswise
Generous pinch of crushed red pepper flakes

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Whisk garlic, vinegar, and 1/2 cup oil in small bowl to combine; set marinade aside.
  • Toss squash, onion, and bay leaves on a rimmed baking sheet with remaining 3 Tbsp. oil to coat; season generously with salt and black pepper.
  • Arrange squash and onion on grate. Grill squash, undisturbed, until grill marks appear, about 3 minutes. Turn over and grill on second side until tender and starting to release liquid, about 2 minutes. Transfer squash back to baking sheet. Grill onion, turning occasionally, until tender and charred around the edges, about 5 minutes. Transfer back to baking sheet.
  • Arrange squash, onion, bay leaves, and feta on a rimmed platter and pour reserved marinade over. Scatter banana peppers on top and sprinkle with red pepper flakes. Let sit at least 15 minutes and up to 1 hour before serving.

This is adapted from a recipe in Everyday Food Magazine (#3), and the original recipe is pasta and cheese-less and also includes grilled chicken. Sometimes I also make it that way.

4 ounces uncooked angel hair pasta
1 1/2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon dried basil
2 small yellow squash or 2 small zucchini, halved lengthwise
3 medium tomatoes, halved
salt, to taste
1/4 teaspoon fresh ground black pepper
2 tablespoons parmesan cheese, grated

Steps:

  • Cook pasta according to package, drain.
  • In a medium bowl, combine squash, tomatoes, oil, garlic, salt, basil, and pepper.
  • Set aside.
  • Heat up grill (medium-high heat if you have temperature control, mine has just the one temperature setting).
  • Grill the vegetables 3-5 minutes per side until they are slightly softened and browned (it takes more like 20 minutes total in my grill, so you may really need to experiment with cooking times).
  • Remove from grill and allow to cool enough for you to handle.
  • Cut the veggies into bite-sized pieces.
  • Toss pasta and vegetables together in a large serving bowl.
  • Top with cheese.

This grilled squash recipe is a little different in that you don't have to slice up your squash prior to grilling, it still cooks up great. Plus it seems to be much easier.

4 summer squash (1 1/2 to 2 pounds give or take)
1/4 cup olive oil
chopped fresh parsley
kosher salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • Preheat the grill w/all burners on high for 10 minutes (lid down).
  • Wash the squash, pat down dry. Trim the tops and bottoms, then rub olive oil over them.
  • Once the gill is hot, turn off the center burner, turn the other burners to medium. Put the whole squash over the center burner, close the lid and cook until easily pierced with the tip of a sharp knife/fork. Depending on the size of the squash, this will take approximately 12-20 minutes.
  • Turn the squash as needed.
  • Transfer the squash to a cutting board, slice, then toss with the parsley, salt and pepper.
  • Enjoy!

4 large roma tomatoes

2 large red sweet peppers or 2 large green sweet peppers, quartered and seeded*
1 tablespoon honey
8 fresh basil leaves, snipped (about 1 tablespoon)

1/2 cup balsamic vinegar
2 tablespoons orange juice

Steps:

  • Bias-cut zucchini into 1/2-inch slices. Cut tomatoes into 1/2-inch slices. Brush these vegetables on all sides with olive oil.
  • Grill zucchini and tomato slices on the rack of an uncovered grill directly over medium coals for 4 to 6 minutes, turning once.
  • Remove from grill.
  • Grill sweet peppers about 15 minutes or until skins are blistered and browned.
  • Transfer peppers to a new brown paper bag; close bag and set aside for 5 to 10 minutes.
  • Peel off skins. Cover and chill vegetables for at least 30 minutes.
  • For dressing, in a small bowl, combine vinegar, orange juice, and honey. Whisk or beat with a fork until well blended.
  • Stir in basil and oregano. Drizzle some of the dressing over chilled vegetables.
