20 radishes ((2 bunches), trimmed and thinly sliced)
1/2 cup chives or green onion ((1 bunch), chopped)
3/4 cup sour cream (*)
3/4 tsp sea salt (or add to taste)

Steps:

  • In a medium salad bowl, combine sliced cucumbers, sliced radishes and chopped green onion.
  • Just before serving, add 3/4 cup sour cream and 3/4 tsp salt or add salt to taste. Stir to coat the salad in dressing.

  • Combine sugar, lemon juice, and sour cream in a medium bowl with a fork. Add radishes, apple, and cucumber.

Steps:

  • 1. At your local farmers market, get the prettiest bunch of radishes, wash them well, trim the ends, and dry with paper towels.
  • 2. Slice radishes into half-moons, not thick, not thin - just right. Mix some sour cream with salt, then mix it with radishes.
  • 3. Eat right away, while the juice is still holding inside the slices.

2 Red Delicious apples, cored, seeded and thinly sliced and tossed with 2 teaspoons lemon juice
1/2 red onion, thinly sliced
1 head romaine lettuce or red leaf lettuce, chopped
3 tablespoons red wine vinegar
2 teaspoons sugar
1 teaspoon salt
1/4 cup extra-virgin olive oil
1/2 cup sour cream
1 teaspoon poppy seeds
2 tablespoons chopped dill or 2 teaspoons dried dill

Steps:

  • Combine radish, apple (coated in lemon to retard browning) and onion with chopped lettuce. In a small bowl, combine vinegar with sugar and salt. Whisk in oil, stir in sour cream, poppy and dill. Drizzle dressing evenly over salad and serve.

I made this salad for our Easter dinner. It's quite good and loaded with healthy ingredients. I got the recipe from my sisters' mama-in-law. It's so simple to throw together. You can easily adjust the size of the salad because it has equal parts of all the main ingredients. It's made with shredded raw potato that is fried till golden brown and crunchy. It's incredibly fast and easy to make if you use a food processor with a grater attachment.

1/3 medium red cabbage (thinly sliced (1 cup))
1 medium beet (grated (1 cup))
3 medium carrots (grated (1 cup))
1 cup frozen peas (thawed)
1 medium potato (peeled and grated (1 cup))
1/4 cup onion (finely diced)
1 clove garlic (minced)
1/2 to 3/4 cup mayo
Salt and Pepper to taste if needed

Steps:

  • Heat some olive oil until a piece of raw potato sizzles in it. Grate the potatoes and add about 1/4 cup bunches at a time. Fry them until golden brown and crunchy. When potatoes finished frying, place them on paper towel and let them cool before adding them in the mixing bowl.
  • Mince 1 clove of garlic and mix it with 1/2 cup of mayo for the dressing.
  • Place all of the ingredients separately in a large salad bowl until ready to serve.
  • Before serving, mix all of the ingredients together (add more mayo, salt and pepper to taste if needed). Enjoy!

1 bunch young red radish
1 bunch white radish, scraped
1/2 cup grated raw young carrot
1/2 cup sour cream
sugar
salt, to taste
lettuce leaf
chopped parsley
fresh dill (optional)

Steps:

  • Trim the red radishes; cut off roots and green leaves. Slice red and white radishes very thin.
  • Combine vegetables, reserving a small amount of carrot to garnish the salad when served.
  • Mix sour cream with sugar and salt to taste. Add the vegetables; stir well. Now make a mound of the salad and place on lettuce leaves placed in the salad bowl. Surround with small mounds of carrot. Sprinkle with finely chopped parsley, and dill, if desired. Serve chilled. Enjoy!
  • Makes 4 servings.

24 large red raddishes
1 1/2 c white vinegar or rice vinegar
1 c sugar
1 pinch salt
2 pinch fresh ground black pepper

Steps:

  • 1. Wash and slice paper thin each raddish. I use a mandolin. Please be very careful you don't cut yourself on the mandolin. I also own a salad shooter this does a great job just drop in raddish and out fly the paper thin slices. When all sliced set aside
  • 2. In your blender add the vinegar sugar and pinch of salt process until all of the sugar is dissolved.
  • 3. Put your raddishes in a large glass jar or in a big bowl and pour over the vinegar and sugar mix well and cover and refrigerate for about two hours. Serve as a condiment or as a salad. You can put on top of burgers or eat mixed with a salad. Make sure you weigh the raddishes down so they will stay under the vinegar while in the refrigerator. Note if you have a lot of raddishes you might have to use 2 1/2 cups vinegar and 2 cups of sugar. Sometimes I add vidalia onions sliced super thin to the raddishes and vinegar. We eat as a condiment or salad. Will last about 3 days in the refrigerator. Enjoy

  • Julienne radish and carrot and toss with salt.
  • Chop red pepper, onion, garlic. The original recipe says to blanch these veggies. I think I would just use them raw.
  • Make dressing: combine vinegar with oil, sugar, pepper and salt.
  • Dress salad and blend carefully.
