The first recipe I created all by myself. A great, easy, and healthy dessert! This recipe can easily be customized by adding new toppings according to favorite tastes. Serve with ice cream!

Steps:
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Arrange bananas onto the prepared baking sheet. Sprinkle brown sugar, lemon juice, honey, and orange juice over the bananas; cover with aluminum foil.
- Bake for 5 minutes. Remove foil and continue baking until golden brown, about 3 to 5 minutes.

GRILLED BROWN SUGAR BANANAS
Grilled bananas are delicious, especially with ice cream, and a perfect way to indulge in a decadently sweet dessert made with fruit.

Steps:
- Gather the ingredients.
- Prepare a medium-low (300°F to 325°F) gas or charcoal grill fire. Without removing the peel, cut each banana in half lengthwise.
- Brush each half banana with lemon juice.
- Combine the cinnamon and brown sugar in a small bowl.
- Generously coat the cut side of the bananas in the sugar mixture.
- Oil the grill grates. Place the banana halves on the grill, peel side up. Cook for 2 to 3 minutes.
- Turn the bananas over and cook for another 3 minutes.
- Remove the bananas from the peels (or serve in the peel) with savory meals or serve them as dessert.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
- Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.

GRILLED BANANAS
Steps:
- Build a charcoal fire or preheat a gas grill.
- Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
- Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.
SPICY GRILLED FISH
Spicy Grilled Fish - grilled fish wrapped with banana leaves with spice marinade and seasoning. The fish is so tender, moist, with intense aroma and flavors.

- Prepare the sambal by grinding chilies, shallots, belacan and lemongrass in a food processor. Make sure the sambal paste is well blended and smooth.
- Heat up a wok and add the oil. "Tumis" (stir-fry) the sambal paste until aromatic or when the oil separates from the sambal paste. Add the seasonings: salt, fish sauce and sugar and do a quick stirs, dish out and set aside.
- Soak the tamarind pulp with the water for 15 minutes and extract the juice. In a mortar and pestle or food processor, pound/blend the red chilies, bird's eye chilies and toasted belacan. Add tamarind juice, sugar, salt, and sliced shallots to the sambal. Stir well and set aside.
- Lay a few sheets of banana leaves and grease the surface of the banana leaves with some oil. Lay the fish fillet on top of the banana leaves and rub the turmeric powder on both sides of the fish. Add about 2 - 3 tablespoons of sambal on top of the fish. Spread the sambal evenly. Drizzle the lime juice on the fish.
- Place the fish on top of the grill (upper rack with indirect heat) and cover the grill. Wait for 8 minutes or so (depending on the heat) and flip the fish over to the other side.
- Add 2 - 3 more tablespoons of sambal on the other side of the fish. Cook for another 8 minutes or until the fish is cooked.
- Transfer the fish and the banana leaves to the lower rack and grill for a couple of minutes with direct heat, or when you smell the sweet aroma of burnt banana leaves.
- Transfer out and serve immediately with sambal belacan and sliced shallots condiment.

GRILLED SPICED SUGAR BANANAS

- Preheat the grill to medium high.
- In a medium size bowl, mix the sugar, cinnamon and allspice until thoroughly blended. Next, slice the bananas in half length wise. Do not remove the peel. Lay the bananas skin side down and the generously sprinkle the flesh side of the bananas with the spiced sugar. Repeat until all bananas are coated. Place the bananas on the grill, skin side down, and cook until the sugar caramelizes and the skin falls away from the banana.
- Spray a sheet tray with foil and spray with non stick spray
- Add vanilla sugar, water, cinnamon, and allspice to a large saucepan over medium high heat. Bring to a boil, then simmer until reduced by half, about 5 minutes. The mixture will start looking dark and thick.
- Quickly stir in the walnuts to the simmering syrup. Cook in the syrup while stirring until it begins to bubble and thicken. Spread the candy in a single layer to the prepared sheet tray- breaking up large clusters with a wooden spoon. Let cool completely, about 5-10 minutes until the candied harden and the syrup dries. Break apart and enjoy.
GRILLED BANANAS WITH RUM SAUCE

- Peel the bananas and cut in half lengthwise. Melt a bit of butter in a frying pan.
- Cook bananas over direct high heat 4-6 minutes, turning once.
- Melt the remaining butter in a heavy sauce pan over medium heat. Add the brown sugar, the cinnamon, and nutmeg, and cook until the sugar dissolves, stirring constantly. Add rum and gently move the pan around to warm the rum, causing it to flame. Continue cooking until the flame dies out. Add the grilled bananas to the hot rum mixture and cook 3-4 minutes more.
- To serve, place a large scoop of vanilla ice cream onto each of 6 serving dishes. Place 2 banana halves over the ice cream and drizzle with some of the sauce.
GRILLED BANANAS FOSTER

- 1. Preheat a grill pan or grill grate over medium heat.
- 2. Melt butter in a small saucepan over medium heat. Add the brown sugar, salt, and pumpkin pie spice. Bring to a boil, stirring until the sugar has completely dissolved. Simmer until mixture thickens about 5 minutes. Remove from heat, stir in the vanilla and set aside.
- 3. Cut each banana lengthwise, leaving the skin on and brush with butter and brown sugar sauce.
- 4. Oil the grill pan and arrange the bananas, cut side down, on the pan. Grill until caramelized, about 4 minutes. Turn the bananas and grill until the skins are blackened bananas are soft and warmed through, about 5 minutes more. Baste frequently with the sauce during the cooking process.
- 5. Remove from grill to a serving platter and serve with a scoop of vanilla ice-cream, drizzled with remaining sauce.

- Preheat the grill to medium heat. Cut the Thomas’ English Muffins in half. Then whisk the milk, eggs, sugar, and salt together in a medium bowl. Set aside. Place a large cast iron skillet on one side of the grill for the Bananas Foster.
