I got this recipe from my mother--she used to make it for club meetings and church functions when I was younger. Now my kids like it too! One thing to note--there is no baking soda or baking powder in this recipe--the beaten eggs make it rise.

1 cup butter or 1 cup margarine
1 1/2 cups sugar
4 eggs
1 teaspoon vanilla
1 teaspoon almond extract
2 cups flour
1 (21 ounce) can cherry pie filling

Steps:

  • Cream butter and sugar; add eggs and beat until fluffy. Add all other ingredients except cherry pie filling and beat well. Spread batter into a 10 X 15 jelly roll pan that has been greased and floured or sprayed with cooking spray. Spread cherry pie filling on top of batter in spoonfuls making 4 rows the length of the pan. Bake in a 350 degree oven for 35-45 minutes. May sprinkle with powdered sugar or drizzle with powdered sugar icing when done baking.

1 cup butter, softened
1 cup white sugar
1 egg
½ teaspoon almond extract
2 cups all-purpose flour
¼ teaspoon salt
¾ cup chopped red and green candied cherries
½ cup crushed candy coated milk chocolates
1 cup sifted confectioners' sugar
5 teaspoons warm water

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • In a large bowl, cream together butter and sugar until light and fluffy. Beat in the egg and almond extract. Combine the flour and salt; stir into the creamed mixture until well blended. Mix in 1/2 cup of the cherries. Press the dough into an ungreased 9x13 inch baking pan. Sprinkle with remaining cherries and crushed candies. Press in lightly.
  • Bake for 30 to 35 minutes in the preheated oven, or until edges are lightly browned. Cool completely in the pan before icing. To make the icing, mix together the confectioners' sugar and water until a drizzling consistency is reached.

These luscious bars, filled with cherries and almonds, really suit the Christmas season. I sometimes put a cup of coconut in a clean jar with a few drops of red food coloring. After a few shakes, I have tinted coconut to sprinkle on top.

2 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup cold butter
FILLING:
1-1/2 cups packed brown sugar
2 eggs
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup finely chopped almonds
1/2 cup finely chopped maraschino cherries, drained
CHERRY ICING:
2 cups confectioners' sugar
1/4 cup cherry juice blend
3 tablespoons butter, softened
1/2 teaspoon almond extract

Steps:

  • In a bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a greased 13-in. x 9-in. baking pan. Bake at 350° for 12-15 minutes or until lightly browned., Meanwhile, in a bowl, combine brown sugar and eggs; mix well. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in almonds and cherries. Spread over crust. Bake at 350° for 30-35 minutes or until bars begin to pull away from sides of pan. Cool on a wire rack. In a small bowl, beat icing ingredients until smooth. Frost bars.

1 cup sugar
1 cup softened butter
1/2 teaspoon almond extract
1 egg
2 cups flour
3/4 cup coarsely chopped candied red cherries
1/4 teaspoon salt
1/3 cup coarsely chopped green candy covered plain chocolate candies
1 cup powdered sugar
5 -6 teaspoons warm water

Steps:

  • Heat oven to 300.
  • Mix sugar, butter, almond extreact and egg in a large bowl until well blended.
  • Stir in flour, 1/2 cup cherries, and salt.
  • Spread in ungreased 15 1/2 x 10 jelly roll pan.
  • Sprinkle on top the remaining cherries and the candies; press lightly.
  • Bake until edges are very light brown, 30 to 35 minutes.
  • Cool completely.
  • Make glaze by mixing powdered sugar and water until smooth and of desired consistency.
  • Drizzle squares with glaze.

Steps:

  • Mix together all ingredients except the pie filling.
  • Reserve 1 1/2 cups batter.
  • Spread the rest of the batter in a jelly roll pan.
  • Spread 1 can of cherry pie filling over batter.
  • Spoon the reserved batter on top.
  • Bake 35 minutes at 350 degrees Fahrenheit.
  • Stir together the glaze ingredients. Drizzle over top of cherry squares while still warm.

1 1/4 cups all-purpose flour
1/3 cup packed brown sugar
1/2 cup butter or 1/2 cup margarine
2 eggs
1 1/4 cups packed brown sugar
1 tablespoon flour
1/2 teaspoon baking powder
1 pinch salt
1 cup medium grind coconut
1/2 cup chopped walnuts
1/2 cup candied cherries or 1/2 cup maraschino cherry (at least)
1 cup icing sugar
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • FIRST LAYER: Crumble ingredients together well.
  • Press into ungreased 9 x 9 inch pan.
  • Bake in preheated 350F oven for 15 minutes.
  • SECOND LAYER: Beat eggs slightly; add remaining ingredients in the order listed.
  • If using maraschino cherries, drain well.
  • I prefer using candied cherries- at Christmas, I use a mixture of red& green.
  • Spread over first layer& return to oven for 25 minutes.
  • Let cool completely.
  • TOP LAYER: Beat ingredients in a small bowl, adding more water if necessary to make a more spreadable mixture.
  • This makes a minimum amount of icing to spread over top.

1 cup butter
4 eggs, divided
2 cups flour, sifted
1 tablespoon lemon juice
1 (21 ounce) can cherry pie filling
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cream together sugar and butter; add eggs, one at a time.
  • Add flour and lemon juice; mix well.
  • Pour into a greased 9x13 baking pan.
  • Mark off squares with a butter knife.

1 can cherry pie filling
Glaze:
1 cup powdered sugar
1-2 Tbsp milk
1/2 tsp vanilla

Steps:

  • Cream the sugar, margarine and vanilla until light and fluffy. Add the eggs, one at a time, beating well after each egg. Sift together the flour and baking powder and add to wet mixture. Mix well.
  • Spread 2/3 batter on greased cookie sheet. Spoon on can of cherry pie filling. Top with remaining batter, swirling the batter some.
  • Bake at 350 degrees F for 25-35 minutes. After cooled, drizzle glaze over entire dessert.
