- Combine the butter with the garlic and brush on the inside of the ciabatta rolls. Toast the rolls on a grill, or broil in the oven until crispy. Smear with Horseradish Mayonnaise.
- Dip the tri-tip slices into the hot Jus for 45 seconds to warm. Pile the meat onto the bottoms of the rolls and top with cheese if using. Close the sandwiches, slice in half and serve with extra Jus on the side for dipping.
- Combine the sour cream, horseradish, mayonnaise, garlic, lemon juice and 1/2 teaspoon salt in a medium bowl. Refrigerate until ready to use.
- Heat a medium saucepan over medium heat. Saute the shallots and garlic in the butter and olive oil until lightly caramelized, 6 to 8 minutes. Add the flour and mix together to form a loose paste (roux). Deglaze with the brandy and whisk in the beef stock, demi-glace and Worcestershire sauce. Bring to a boil, then reduce the heat and simmer until the aroma and flavor of the jus are rich and deep, 25 minutes. Strain the broth to remove the garlic and shallots, then return the liquid to the pot. Season with salt and pepper and keep warm.

- MEDITERRANEAN MARINADE: Mix all ingredients except oil in blender. Slowly add oil with motor running. Cover and refrigerate until ready to use. Makes 1 1/2 cups.
- In glass dish, pour marinade over roast, coating all sides. Cover and refrigerate 6 to 24 hours. Grill over medium coals, turning occasionally, about 35 to 40 minutes for rare (140 degrees) to medium (160 degrees). Brush with marinade during last 10 to 15 minutes of cooking.
- VARIATION:.
- CUMIN 'N LIME MARINADE: 1/2 cup beef broth, 1/3 cup fresh lime juice, 2 T. ground cumin, 4 teaspoons ground coriander, 2 large cloves garlic, finely chopped, 1/4 cup olive oil. Follow directions for Mediterranean Marinade. Makes 1 cup. Serve with salsa, French bread and green salad with ranch-style dressing.

SIMPLE GRILLED TRI-TIP STEAK
Steps:
- Gather the ingredients.
- In a small bowl, combine the white vinegar, vegetable oil, soy sauce, garlic, black pepper, and salt to make the marinade .
- Make sure the marinade is mixed well and pour it into a resealable plastic bag. Add tri-tip steak and make sure it is well coated. Using tongs , carefully turn steak over a few times in marinade. Seal bag, and let the steak marinate for 2 to 6 hours, or up to overnight.
- Prepare a medium (500 F to 600 F) gas or charcoal grill fire. Remove tri-tip steak from marinade and discard the marinade. Place steak on the preheated hot grill.
- Cook for 12 to 15 minutes, turning once or twice during the cooking process to get an even sear, including holding the sides against the grill for a few minutes to make sure all surfaces are seared. Remove steak once it has reached the desired temperature .
- Rest steak for 5 to 10 minutes. Make sure to tent with aluminum foil if the rest time is longer than 5 minutes or if you are waiting for other items to come off the grill so the meat does not become cold.
- Slice tri-tip against the grain in thin pieces and serve with your favorite sides.

- Trim the fat cap off of the tri-tip roast, but be sure to leave some fat on the outside. This will help with flavor and texture. Discard trimmed fat. Transfer roast to a plate or small baking dish. Season both sides of the roast generously with kosher salt and freshly ground black pepper. Pour the marinade (garlic-rosemary mixture) over the tri-tip, and let sit for 30 minutes to 1 hour. Turn the roast over in the marinade every 15 minutes to ensure even flavoring.
- Meanwhile prepare an outdoor grill. Cooking a tri-tip requires both direct and indirect heat. If using a charcoal grill, pile up your coals on one half of the grill. The side with the coals will be used for direct heat cooking, and the cooler side will be used for indirect heat. If using a gas grill, preheat one side of the grill on high, and leave the other side off (no heat). With either method, let the grill grate preheat for 15 minutes. Also, the grate should be cleaned and oiled just before cooking.
- Take the tri-tip from the marinade, and let any excess liquid drip off. Place the roast over direct heat, and sear for 3 – 4 minutes per side. Move the roast over to the indirect heat side, cover, and cook until the roast reaches 120°F for rare, 130°F for medium-rare, and 140°F for medium (20 – 35 minutes). You’ll want to maintain a grill temperature of 250°F to 300°F, and be sure to flip the roast every 10 minutes. Let the tri-tip rest for 10 minutes before carving.

- The Tri tip has quite a bit of fat on one side, the bottom side, I leave it on. For this Two Ingredient Grilled Tri tip roast, I add generous amount of Montreal seasoning (this spice blend is found everywhere, it’s made my McCormick) on both sides. If for some reason you can’t find this seasoning blend, use coarse ground salt and pepper, granulated garlic and onion and a good pinch of crushed red pepper. NOTE: If you are using salt, pepper, onion and garlic. Add the salt, pepper and spices as you normally would. With that said, the quantities are approximate.
- Preheat the grill to medium high. Once the grill is ready, please the tri tip fat side up. You want to sear the meat for 10 minutes. Flip to fat side down, keep an eye for flares.
