Categories     Appetizer     Main Course     Pork

Time 45m

Number Of Ingredients 15

3 lb pork tenderloin ((Packages typically come with 2 at about 1 1/2lbs/each))
Spice paste rub:
1 Tbsp olive oil
1 Tbsp brown sugar
2 tsp lime or lemon juice
1 1/2 tsp garlic powder
1 tsp salt
1 tsp onion powder
1 tsp dark chili powder
1 tsp dry oregano
1/2 tsp ground chipotle or ancho pepper
1/2 tsp ground mustard
1/2 tsp paprika
1/2 tsp cocoa powder
prepared Chipotle Peach Barbecue Sauce (OR your favorite sauce)

Steps:

  • Place all of the paste rub ingredients into a small mixing bowl. Mixing to form ta paste.
  • Rub on all sides of the pork tenderloin, then cover with plastic wrap, and place into the refrigerator. Marinate the tenderloin at least 6 hours or overnight.
  • Remove from the fridge around 20 minutes prior to grilling to allow the meat to warm to room temperature.
  • Seer the tenderloin over high heat for 2 minutes on all 4 sides.
  • Continue to cook on the widest side for 6-8 minutes each depending on the thickness of the tenderloin. Adjust the cooking time as needed based on thickness. The tenderloin pictured were approximately 2 1/2-3 inches at their thickest. The general recommendation is to cook whole pork [not ground] to an internal temperature of at least 145°F or to medium rare.
  • Brush on the grillin' sauce during the last 3-5 minutes of grilling to char.
  • Rest loosely covered with aluminum foil for about 5-10 minutes before carving.
  • Serve with chipotle-peach barbecue grillin' sauce or your favorite bbq sauce.

GRILLED PORK TENDERLOIN WITH SPICE RUB

Grilled Pork Tenderloin with Spice Rub image

Grilled pork tenderloin with a sweet-and-smoky barbecue rub is a healthy and easy dinner recipe that's perfect for spring and summer!

Provided by Blair Lonergan

Categories     Dinner

Time 48m

Number Of Ingredients 8

1 pork tenderloin (about 1 lb.)
2 tablespoons brown sugar
2 teaspoons smoked paprika
1 ½ teaspoons kosher salt
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
Optional, for serving: barbecue sauce

Steps:

  • In a small bowl, combine brown sugar, smoked paprika, kosher salt, chili powder, onion powder and garlic powder.
  • Trim the pork tenderloin of any excess fat and silverskin. Pat the pork dry, and then rub the spice mixture all over the meat.
  • Allow pork to sit at room temperature while preparing the grill.
  • Preheat grill to medium heat and brush the grates with vegetable oil (to prevent sticking).
  • Place pork on the grill. Close the grill and cook 15-18 minutes, turning every few minutes to ensure even cooking. The meat is done when it reaches an internal temperature of 140-145 degrees F. You can baste with the barbecue sauce during the final 1-2 minutes, or just serve warm barbecue sauce alongside the pork for dipping.
  • Remove the tenderloin to a cutting board and allow the meat to rest for about 5-10 minutes before slicing and serving.

SPICE-RUBBED GRILLED PORK CHOPS

Spice-Rubbed Grilled Pork Chops image

Dry rubs are also a terrific way to season pork chops. Select chops of close to an inch in thickness - nothing flimsy - then grill them over steady medium heat. We opt for rib chops over the center-cut variety when cooking outdoors because their greater fat content helps keep them moist, and we always prefer bone-in chops for their juiciness. You might add a barbecue sauce on the side with these, but we relish their crispy surface unvarnished.

Yield Makes 6 to 8 servings

Number Of Ingredients 11

Pork Chop Willy's Grilling Rub
3 tablespoons sweet paprika, preferably Spanish
1 tablespoon freshly ground black pepper
1 tablespoon coarse salt, either kosher or sea salt
3/4 teaspoon sugar
3/4 teaspoon chili powder
3/4 teaspoon granulated garlic or garlic powder
3/4 teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne
Six to eight 10- to 11-ounce bone-in pork rib chops, 3/4 to 1 inch thick
Vegetable oil spray

Steps:

  • At least 1 and up to 8 hours before you plan to grill the pork chops, prepare the dry rub, combining the ingredients in a small bowl. Coat the chops with the spice mixture, place them in a large plastic bag, seal, and refrigerate.
  • Fire up the grill, bringing the heat to medium (4 to 5 seconds with the hand test).
  • Remove the chops from the refrigerator and let them sit covered at room temperature for about 20 minutes.
  • Spray the chops with oil and transfer them to the grill. Grill for 18 to 20 minutes total. Turn onto each side twice, rotating the chops a half turn each time to get criss-cross grill marks. The chops are done when just a hint of pink remains at the center. Serve hot.

Enjoy a healthier version of this not-so-saintly classic dish

Provided by Mary Cadogan

Categories     Dinner, Main course

Time 40m

Number Of Ingredients 9

4 escalopes of pork , about 100g/4oz each
1 egg white
3 tbsp dry breadcrumbs
400g can chopped tomato
1 red chilli , deseeded and thinly sliced
1 garlic clove , thinly sliced
1 tsp sugar
1 large aubergine , cut into ½cm slices
4 tsp olive oil

Steps:

  • Trim off any visible fat from the pork and season with a little pepper. Beat the egg white with a fork in a shallow dish. Tip the breadcrumbs onto a plate. Coat pork first in egg, then in breadcrumbs. Chill to set the coating until ready to cook.
  • Tip the tomatoes into a pan with the chilli, garlic and sugar. Bring to the boil, then simmer for about 10 mins until thickened. Brush aubergine slices lightly on both sides with a little of the oil. Grill for 3-4 mins each side until tender and golden.
  • Meanwhile, heat the remaining oil in a large non-stick frying pan. Add the pork and fry for 3-4 mins each side until golden brown. Serve each pork escalope topped with aubergine slices and a spoonful of tomato sauce, with some green beans on the side, if you like.

GRILLED PORK WITH WHOLE SPICES AND GARLIC BREAD

Grilled Pork With Whole Spices and Garlic Bread image

Deeply flavored from a rub of fennel, coriander, caraway and cumin, and crisp-edged from the grill, this pork feeds a crowd, and most of the work can be done in advance. You can use either boneless loin or shoulder here: The shoulder is chewier, brawnier and more irregular in shape, while the loin is neater to slice and softer to eat. But both are delicious, especially when showered with fresh lemon or lime juice at the end to cut the richness. You don't have to make the buttery garlic bread, but its herbal flavors go well with the smoke and char of the meat. If you do skip it (your loss), serve the pork strewn with plenty of fresh, bright herbs. If you're not grilling, you can roast the pork in a 500-degree oven for 20 to 30 minutes, flipping it halfway. Then run it under the broiler at the end to sear the fat.

Time 40m

Yield 12 to 16 servings

Number Of Ingredients 24

1/4 cup fresh thyme leaves, plus more for serving
4 teaspoons coarse kosher salt
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1 1/2 teaspoons fennel seeds
1 1/2 teaspoons caraway seeds
1 1/2 teaspoons black peppercorns
1/2 teaspoon red-pepper flakes, plus more for serving
12 garlic cloves, finely grated or minced
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons red-wine vinegar
5 to 6 pounds boneless, skinless pork shoulder or loin, butterflied (see Note)
Lemon or lime wedges, for serving
3/4 cup unsalted butter (1 1/2 sticks)
1/2 cup extra-virgin olive oil
1/3 cup finely minced parsley
2 tablespoons chopped fresh basil
5 garlic cloves, finely grated or pounded into a paste
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
3/4 teaspoon dried oregano
1/4 teaspoon red-wine vinegar
Pinch of red-pepper flakes, plus more to taste
2 (12-inch) loaves French or Italian bread, halved lengthwise

Steps:

  • Prepare the pork: Using a mortar and pestle, pound together the thyme, salt, cumin, coriander, fennel, caraway, peppercorns and red-pepper flakes until the spices are well cracked but not ground. (Or do this in a spice grinder, but take care not to grind the spices.) Add garlic, oil and vinegar, and pound into a paste.
  • Spread paste all over pork, covering the meat thoroughly and evenly. Place the meat on a rimmed baking sheet, cover with plastic wrap or an overturned rimmed baking sheet, and marinate in the refrigerator for at least 6 hours or up to 48 hours (the longer, the better).
  • Prepare the butter for the garlic bread: In a small saucepan, melt the butter with the olive oil. Add the parsley, basil, garlic, salt, pepper, oregano, vinegar and red-pepper flakes, and simmer until fragrant, 1 to 2 minutes. Taste and add more salt if needed. Set aside until ready to grill. If the butter solidifies, place it back on the heat until it liquefies.
  • Heat the grill or light the coals. Lay the pork out on the grill so it is as flat as possible. Cover grill and let the meat cook until char marks appear on one side, 7 to 12 minutes. Use tongs and a large spatula to flip the meat. Continue to grill on the other side until cooked to taste, 135 degrees for medium, about 5 to 12 minutes longer. (It will continue to cook as it rests.)
  • Transfer meat to a cutting board, cover loosely with foil and let rest for at least 10 minutes before slicing.
  • While the pork is resting, grill the garlic bread: Place the halved loaves, cut side down, on the grill, and lightly toast on one side, 1 to 2 minutes. Flip bread and drizzle garlic butter over the toasted side. Let the unbuttered sides of the bread toast, another 1 to 2 minutes. Flip bread and grill once more on the buttered side for about 10 to 20 seconds to sear (take care not to let it burn). Transfer bread to a cutting board and slice into pieces.
  • Carve pork into slices, and squeeze the lemon or lime wedges over the meat. Serve the pork slices garnished with red-pepper flakes and thyme leaves, with the garlic bread on the side.
