GRILLED SAUSAGE AND PEPPERS
Steps:
- Cut the sides off of the bell peppers and remove the stem and seeds. Cut the bell peppers into 1-inch wide strips.
- Quarter the onion by cutting through the root end, then cutting each quarter in half, lengthwise. Trim the root end from the onion wedges and break apart the pieces.
- In a large bowl, combine the peppers, onions, olive oil, salt and pepper. Mix well to combine.
- For the grill: Heat a grill over medium heat (about 375˚). Oil the grill grates well. Place the sausages on one side of the grill and a grill basket on the other. Add the onions and peppers to the grill basket in a single layer. Cover and cook until the sausages have grill marks on one side and the peppers and onions are slightly charred, 5 to 7 minutes. Turn the sausages and give the onions and peppers a stir. Cover and cook until the sausages internal temperature reaches 160˚ and the peppers and onions are charred in spots and softened, 5 to 7 minutes more.
- For the stovetop: Heat a large cast-iron skillet over medium heat. Place the sausages in a single layer, evenly spaced. Cover and cook until golden brown on one side, 5 to 7 minutes. Flip the sausages, cover and cook until the sausages internal temperature reaches 160˚, 5 to 7 minutes more. Remove from the heat and transfer to a plate. Return the skillet to medium-high heat and add the peppers and onions. Cook, stirring occasionally, until charred in spots and softened, 8 to 10 minutes.
- Serve immediately with toasted rolls, if desired.
GRILLED SAUSAGE DINNER: WHAT A BRAT RECIPE BY TASTY

Steps:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 10 minutes.
- In a small pot, bring the sauce to a simmer over medium heat. Add the zucchini to the sauce and gently heat through, about 5 minutes.
- Top the pasta with the sauce, grilled sausage and freshly grated Parmesan.
- Enjoy!

GRILLED PIZZA "MAMA MIA"
What can I say!!! This is fun food! The best thing about it is, you can do most of these steps ahead of time. When I make these, I have everyone participate and make their own. I will take care of the first grilling and then, they can take it from there... The flavor the grill gives it, is like going to Napoli!... Give it your own personal touch with your favorite toppings. Remember it's all about Good Eats and "La Famiglia"!!

Steps:
- Leave pizza dough out on floured wooden surface, for about 3 to four hours. Let it raise and get to room temp.
- Press garlic cloves into olive oil in small bowl. let stand for few hours.
- In large bowl combine mozzarella cheese and parmesan cheese. (Refrigerate if not using right away.)
- Slice all your veggies. (All these steps you can do ahead of time) Basil you chop when ready to make pizzas.
- Preheat clean BBQ grill at about medium heat (400 degrees). Cut each pizza dough in half. (each dough will make about two 12 inch pizzas) Stretch pizza with rolling pin on flour surface. (Work it a little, you'll get there) Lay each pizza on it's own round dinner plate.
- Lay a couple pizza at a time on the grill and cover, for about 3 minutes.( Make sure you check them and they have nice grill marks.) When ready pull, place them on each plate (grill marks up) Lower temp to about 300 degrees.
- Brush on olive oil and garlic mixture on each and put sauce on them. Sprinkle cheese. Here are a few of my favorite combinations: -Sausage, peppers, onions and oregano - Mushrooms and onions -Pepperoni with mushrooms, black olives and oregano - Sausage, mushrooms and fresh basil (Remember basil you put on when ready to serve)
- Now! Place pizza back on grill and cover. Let it grill for about 6 minutes until cheese melts. (keep an eye on them you may need to leave a little longer of less)
- Slice and Serve...Fun and Yummy!
GRILLED SAUSAGE WITH SPICY SAUCE
Steps:
- Soak 8 to 10 wooden skewers in water for about 20 minutes.
- Preheat a grill to medium and brush with the oil. Thread the sausage onto the skewers, leaving space between each piece. Grill until slightly crisp, 3 to 4 minutes per side.
- Mix the ketchup, mustard and hot sauce in a bowl. Serve with the sausage for dipping.
- Serve this dish with Tangy Corn Relish.
- Preheat a grill to medium-high. Brush the corn with 1 tablespoon olive oil and sprinkle with the cumin, and salt and pepper to taste. Grill until golden and toasted on all sides, 5 to 8 minutes, turning as needed.
- Combine the remaining 2 tablespoons oil, the sweet piquante peppers, onion, gherkins, parsley, jalapeno and sugar in a large bowl and season with salt and pepper. Slice the corn kernels off the cobs and toss with the relish. Cover and refrigerate for at least 30 minutes.

- Place the first 5 ingredients in a blender; if desired, add pepper sauce. Cover and process until blended., Cut peppers lengthwise in half; remove seeds. Cut eggplant lengthwise into 1/2-in.-thick slices. Cut zucchini and yellow squash lengthwise into quarters. Place all vegetables in a large bowl; drizzle with 1/2 cup of the sauce and toss to coat., Place vegetables on a greased grill rack. Grill, covered, over medium heat 8-10 minutes or until tender and lightly charred, turning once. Cool slightly. Reduce grill temperature to medium-low heat., Cut vegetables into bite-sized pieces. Toss with additional 1/4 cup sauce; keep warm., Grill sausages, covered, over medium-low heat 15-20 minutes or until a thermometer reads 160° for pork sausages (165° for turkey sausages), turning occasionally. Remove sausages from grill; toss with remaining sauce. Serve with vegetables.
