The char of a hot grill brings out the bold beef flavors of these steaks, which are simply seasoned with salt and pepper.

Vegetable oil, for grates
4 bone-in rib-eye steaks (1 pound each, 1 1/2 inches thick), preferably pasture-raised
Coarse salt and freshly ground pepper

Steps:

  • Heat grill to high; clean and lightly oil hot grates. Let steaks stand at room temperature for 30 minutes. Generously season both sides of steaks with salt and pepper. Grill steaks, rotating once to create hatch marks, until well-browned on the outside and cooked to desired doneness, 6 to 7 minutes per side on a charcoal grill (or 8 to 9 minutes per side on a gas grill) for medium-rare (about 125 degrees). Transfer to a platter; cover with foil. Let rest for 10 minutes. Slice steaks against the grain.

1/4 cup whipping cream
1 tablespoon Dijon mustard
2 tablespoons green peppercorns, packed in brine
Salt
Pommes Frites, recipe follows
2 (12 to 16-ounce) boneless New York cut shell steaks, tenderized
2 tablespoons Dijon mustard
Coarsely ground black pepper, to cover both sides of steak
Olive oil, for sauteing
Salt, to taste
4 tablespoons whole, unsalted butter
2 cloves garlic, minced
1/4 cup shallots, minced
8 ounces white mushrooms, sliced
1 cup beef stock
Garlic Aioli Sauce, recipe follows
Fresh Vegetable Relish, recipe follows
2 to 3 large russet potatoes
Vegetable oil, for frying
Salt and pepper to taste
1 to 2 cloves garlic, minced
2 lemons, halved
4 to 6 egg yolks*
Olive oil
1 to 2 celery stalks, diced
4 Roma tomatoes, diced
1 cucumber, diced
1 red onion, diced
1 to 2 carrots, diced
Feta cheese, crumbled
Fresh dill, chopped

Steps:

  • Use a meat mallet to slightly reduce the thickness of each steak. Spread both sides of each steak with a thin coating of Dijon mustard. Sprinkle with salt and cover both sides with coarsely ground black pepper. Heat olive oil in a large, heavy skillet over medium-high heat and cook the steaks 3 to 4 minutes on each side. The steaks should be rare at this point. Set them aside and lightly cover them so they stay warm. Do not wash out the pan.
  • Mushroom, Green Peppercorn and Dijon sauce: Heat the butter in a medium sized saute pan over medium-high heat and saute the garlic and shallots for approximately 1 minute. Add the mushrooms, raise the heat to high, and cook for an additional 5 minutes. Add beef stock, cream, and mustard, and then reduce the sauce by 1/2. Once the sauce is made, reheat the skillet, in which the steaks were cooked, to medium-high heat. Add the steaks and cook for another 2 minutes on each side for a medium-rare steak. Transfer them to dinner plates, which have been coated with the mushroom Dijon sauce. Once you plate the steaks, spoon more of the sauce on top of each steak. Serve with Pommes Frites, Aioli, and Vegetable Relish.
  • Thoroughly clean the outer surface of the russets and peel the skin using a vegetable peeler. Slice the potatoes lengthwise into thick strips. Pour enough vegetable oil in a pot to cover the potato slices. Once the oil is hot, carefully put the potato strips into the pot and fry them until they are brown and crispy. Remove the potatoes from the pot and drain the excess oil onto paper towels. Salt and pepper, to taste, while the potatoes are still hot. Serve with a fresh Garlic Aioli Dipping Sauce.
  • Finely mince 1 or 2 cloves of garlic in a food processor. Add in the egg yolks and then squeeze the juice from a couple of lemons into the processor bowl. Blend the ingredients together until they fully integrate. While the mixture processes, slowly drizzle in olive oil until the sauce emulsifies.
  • Dice all of the ingredients and combine them in a medium sized bowl. Stir the diced vegetables together, until they are fully integrated.

6 boneless rib eye steaks (1-inch thick)
3 teaspoons steak seasoning
3 tablespoons butter, softened

Steps:

  • Let steaks stand at room temperature 15 to 20 minutes. Rub steaks evenly with steak seasoning (I use McCormick Grill Mates Montreal Steak Seasoning).
  • Grill, covered with grill lid, over medium heat (300 to 350) for 2 1/2 minutes. Using tongs, turn each steak at a 60-degree angle, and grill 2 1/2 minutes more. Flip steaks, and grill 2 1/2 minutes. Turn steaks at a 60-degree angle, and grill 2 1/2 more minutes (medium-rare) or to desired degree of doneness.
  • Remove steaks from grill, and brush evenly with butter. Let stand 5 minutes.
  • (If you want rare steaks, adjust the time to 2 minutes in the above directions; for medium doneness, grill 4 minutes each turn; and for medium-well, allow about 5 minutes each turn).

Serve with recipe #248469 and recipe #191100 & a fruity, peppery Washington State Syrah that will stand up to the steak's intense spice rub.

2 tablespoons black peppercorns, coarsely crushed
1 tablespoon minced garlic
2 teaspoons ground cumin
2 tablespoons extra virgin olive oil
2 rib eye steaks, cut 1 3/4 inches thick
sea salt
1/4 cup dry red wine
1 tablespoon grainy mustard
1 teaspoon brined green peppercorn, drained
1 teaspoon capers (in 1 teaspoon of their brine)
1 tablespoon unsalted butter
1 teaspoon chopped parsley

Steps:

  • In a small bowl, combine the black peppercorns with the garlic, cumin and 1 tablespoon of the olive oil.
  • Rub this mixture all over the steaks and let stand at room temperature for 2 hours.
  • In a large skillet, heat the remaining 1 tablespoon of olive oil until shimmering.
  • Season the steaks with salt, add them to the skillet and cook over moderate heat until browned, about 4 minutes per side for medium rare.
  • Transfer the steaks to a warmed platter and season again with salt.
  • Discard the fat in the skillet.
  • Add the wine and simmer over low heat until reduced to a syrup, about 2 minutes.
  • Add the mustard, green peppercorns and capers in brine and stir once or twice.
  • Remove the skillet from the heat and stir in the butter.

4 rib eye steaks, 3/4-inch thick
1 1/2 teaspoons olive oil
1 teaspoon salt
3 -4 tablespoons peppercorns, coarsely cracked
2 tablespoons butter
4 shallots, minced
2 tablespoons cognac or 2 tablespoons brandy
1/3 cup dry red wine
3 tablespoons heavy cream
1 1/2 cups beef gravy, canned or homemade
salt & freshly ground black pepper, to taste

Steps:

  • Steak: Prepare a hot fire. Rub steaks lightly with oil & season with salt. Spread crushed pepper on wax paper & press both sides of each steak into peppercorns to coat.
  • Cook steaks on an oiled grill set 4 to 6 inches from coals, turning once or twice, until nicely browned outside yet still pink & juicy inside; about 6 to 8 minutes for rare. Serve with Creamy Cognac Sauce.
  • Sauce: In a large skillet, melt butter over medium heat. Add shallots & cook just until softened but not browned, 1 to 2 minutes.
  • Add cognac & standing back, ignite with a long-handled match. When flames subside, add wine & bring to a boil. Continue cooking until liquid reduces by half, about 3 to 5 minutes.
  • Whisk in cream & gravy & bring to a boil. Cook until sauce is just thick enough to boat the back of a spoon, about 5 minutes. Season with salt & pepper. Serve with steak.

1 9-pound prime rib beef roast (about 4 ribs), excess fat trimmed
2 tablespoons Dijon mustard
4 teaspoons minced garlic
2 tablespoons plus 1 teaspoon mixed whole peppercorns, coarsely crushed
1/3 cup minced shallots
3 1/2 cups canned beef broth
1/3 cup Cognac or brandy

Steps:

  • Position rack in center of oven and preheat to 450°F. Place beef, fat side up, in shallow roasting pan. Sprinkle beef with salt. Mix mustard and garlic in small bowl. Spread mustard mixture over top of beef. Sprinkle 2 tablespoons crushed peppercorns over mustard mixture.
  • Roast beef 15 minutes. Reduce heat to 325°F. Roast until meat thermometer inserted into center of beef registers 125°F. for medium-rare, tenting loosely with foil if crust browns too quickly, about 2 hours 45 minutes. Transfer beef to platter. Tent with foil to keep warm.
  • Pour pan juices into 2-cup glass measuring cup (do not clean pan). Freeze juices 10 minutes. Spoon fat off top of pan juices, returning 1 tablespoon fat to roasting pan. Reserve juices.
  • Melt fat in same roasting pan over medium-high heat. Add shallots and sauté until tender, scraping up any browned bits from bottom of pan, about 2 minutes. Remove pan from heat. Add canned beef broth, then Cognac (liquid may ignite). Return pan to heat and boil until liquid is reduced to 2 cups, about 15 minutes. Add pan juices and remaining 1 teaspoon crushed peppercorns. Transfer pan juices to sauceboat.
  • Carve roast and serve with juices.
