CUCUMBER AND RED ONION SALAD

Number Of Ingredients 7

2 cucumbers, peeled if desired and thinly sliced
1 large red onion, halved and thinly sliced
1/3 cup sugar
1/3 cup cider vinegar
3 whole cloves
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Place cucumbers and red onion in a heatproof serving bowl.
  • In a small nonreactive saucepan, combine sugar, vinegar, cloves, salt, pepper and 1/3 cup water. Bring to a boil over medium heat, stirring to dissolve sugar. Reduce to low, cover and cook 5 minutes.
  • Pour vinegar mixture over cucumbers and onions. Stir to mix. Cover and refrigerate at least 2 hours before serving

2 red onions, peeled and sliced 1/2-inch thick, crosswise
Olive oil
Salt and pepper
3 cucumbers, peeled, halved lengthwise and sliced 1/2-inch thick
3 tablespoons finely chopped fresh oregano
1/2 cup crumbled feta cheese
1 cup plain yogurt, drained in fine sieve about 30 minutes
2 tablespoons tahini
1 tablespoon olive oil
2 tablespoons fresh lemon juice
2 cloves garlic, finely chopped
1/4 teaspoon cumin
1/4 cup mint chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat grill. Brush both sides of the onion slices with olive oil and season with salt and pepper to taste. Grill on each side for 2 to 3 minutes. Just to obtain grill marks and cook slightly. Remove from grill and coarsely chop. Combine onions in a medium bowl with cucumber, oregano and toss with the yogurt-mint dressing. Season with salt and pepper to taste. Sprinkle with feta cheese.
  • Whisk all ingredients together in a medium bowl and season with salt and pepper, to taste. Serve immediately.

2 cucumbers, peeled and very thinly sliced
1/2 red onion, thinly sliced
2 teaspoons salt
1/2 cup plain yogurt
3/4 teaspoon ground cumin
2 tablespoons olive oil
2 teaspoons lemon juice
1/4 cup fresh basil or 1/4 cup of fresh mint
fresh ground black pepper, to taste

Steps:

  • In a large bowl toss together the cucumbers, onion, and salt. Add cold water to cover the mixture by 1 inch and refrigerate for 30 minutes.
  • Drain the vegetables, pressing out as much water as possible, and return them to the bowl. Stir in the remaining ingredients and refrigerate salad until ready to serve.
