3 cloves minced garlic
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
3 baking potatoes, cut 1/4 inch thick
1 large sliced onion

Steps:

  • In a large mixing bowl, blend together salad dressing and seasonings.
  • Next, add potatoes and onions and toss until covered.
  • Divide potato mixture evenly among 6 foil packets.
  • Double fold ends of packets to seal but leave enough room for heat to circulate Place packets on heat grill and cook for 25 to 30 minutes.
  • Make sure lid is down while cooking.
  • To cook in oven, Preheat oven to 425 degrees and cook for 40 to 45 minutes.

1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

1 1/2 pound baby potatoes ((I used tri colored baby potatoes))
5 cloves garlic (peeled)
1/2 cup Kalamata olives (pitted)
1 tablespoon fresh rosemary (chopped)
2 tablespoon fresh oregano (chopped)
zest from 1 lemon
2 tablespoon olive oil
juice from 1 lemon
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)
1/4 cup feta cheese (crumbled, optional)

Steps:

  • You'll need 2 big sheets of foil, about 2 feet long. I like to double the foil to avoid oil or juices from seeping out while grilling. Place all the ingredients into the center of the foil, in the order that the ingredients are listed. You can add the feta cheese at this point or add it after the potatoes are cooked.
  • Wrap the foil tightly around the potatoes. Grill over medium high heat for 25 minutes or bake at 425 F degrees for about 30 minutes or until the potatoes are fork tender.

1.5 lbs. Baby potatoes (chopped into bite size pieces)
1/2 Tbsp. Olive oil
1 Tbsp. Dried rosemary
3 Sprigs fresh thyme or 3 teaspoons of dried
7 Whole garlic cloves or 2 tablespoons of powdered garlic ((no need to peel))
Pinch Sea salt and pepper
2 Tbsp. Butter
4 tsp. Fresh parsley (optional)

Steps:

  • Preheat the grill to medium, or oven to 400°F. Cut 1.5 lbs. baby potatoes into bite sized pieces, then place in a bowl and mix with 1/2 Tbsp. olive oil, 1 Tbsp. dried rosemary, a pinch of sea salt and pepper, and 7 whole garlic cloves or powdered garlic.
  • Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place 3 sprigs of thyme or dried thyme and 1 Tbsp. cubed butter on top of the potatoes.Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn't long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
  • Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven.Grill or roast for 40 minutes, then remove from the grill or oven and open up the foil. 1 1/2 pounds baby red potatoes (or baby gold potatoes)
1 teaspoon dried rosemary
1 teaspoon garlic powder
3/4 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon dried oregano
2 tablespoons extra virgin olive oil
Grated parmesan (optional for serving)
Chopped fresh herbs such as parsley (rosemary, or basil, optional for serving)

Steps:

  • Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
  • In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
  • Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
  • Preheat the grill to medium-high (about 375 to 400 degrees F).
  • Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
  • Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
  • Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
  • Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

  • Lay a double layer of foil down, about 15 inches long each. Use cooking spray or butter to grease the top piece of foil. Pour half of the potato mixture on greased foil sheet and spread out slightly, leaving the perimeter empty to fold close. Take two more foil pieces, spray or butter top one, and lay greased side on top of potatoes. Roll or fold long sides of foil together first, then roll in shorter ends so you have rectangular foil packet. Repeat with the remaining potatoes, making a second packet.
  • Preheat grill to medium high or make a fire with a cooking grate over top. Place both foil packets on grate and cook for 22-24 minutes. Use long-handled tongs to rotate and flip every 5-6 minutes so potatoes evenly cooked on all sides. (SEE RECIPE NOTES)
