3 stalks lemongrass, minced
3 tablespoons fish sauce
3 cloves garlic, minced, or more to taste
1 teaspoon monosodium glutamate (MSG)

1 teaspoon Chinese five-spice powder
bamboo skewers
¼ cup fish sauce
¼ cup white sugar
1 fresh red chile pepper, minced, or more to taste
1 lime, juiced
5 cloves garlic, minced, or more to taste
1 teaspoon monosodium glutamate (MSG), or to taste
1 cup water

Steps:

  • Combine pork belly, 1 red chile pepper, lemongrass, 3 tablespoons fish sauce, 3 cloves garlic, 1 teaspoon MSG, 1 teaspoon white sugar, and five-spice powder in a bowl. Cover with plastic wrap and refrigerate until marinated, 1 to 3 hours.
  • Mix 1/4 cup fish sauce, 1/4 cup sugar, 1 red chile pepper, lime juice, 5 cloves garlic, and 1 teaspoon MSG together in a bowl. Let sit until dipping sauce flavors meld, 30 minutes to 1 hour. Pour in water.
  • Thread the marinated pork belly onto bamboo skewers.
  • Preheat grill for high heat and lightly oil the grate. Cook pork skewers, turning occasionally, until crisp, 8 to 10 minutes. Serve with the dipping sauce.

2 lbs boneless pork (cut into 1 1/2 inch strips or cubes)
10 skewers, 8 inch soaked in water for at least 1 hour
3 unpeeled lemons, cut into small wedges
2 unpeeled oranges, cut into small wedges
6 pita bread rounds, sliced into half moons
shredded iceberg lettuce or romaine lettuce
1/2 cup extra virgin olive oil, Plus
3 tablespoons extra virgin olive oil
1/4 cup fresh lemon juice (from 2 or 3 large lemons)
1/4 cup fresh orange juice
1/2 teaspoon crushed red pepper flakes
1 teaspoon chili powder
2 tablespoons minced garlic
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Make the marinade:.
  • In a large bowl, combine the olive oil, juices, red pepper flakes, chili powder, garlic, salt and pepper.
  • Add the pork and stir to coat.
  • Cover and refrigerate overnight or at least for 30 minutes.
  • Preheat the grill.
  • Thread the skewers with 3 or 4 pieces of marinated pork, alternating with wedges of lemon and orange.
  • Reserve the marinade for basting.
  • To grill the pork:.
  • Place skewers on an area of the grill with no direct flame.
  • Brush with the reserved marinade during the grilling, until the meat is browned on the outside but still slightly pink on the inside, 4 to 5 minutes per side, or to desired doneness.
  • Optional oven broil:.
  • Set and oven rack about 6 inches from the broiler, preheat broiler.
  • Put skewers on a highly oiled baking sheet and place under broiler.
  • After 3 1/2 minutes, turn the skewers over and brush with the reserved marinade.
  • Broil for another 3 1/2 minutes, brush again with the marinade, and broil for 1 to 20 minutes more or until meat is browned on the outside but still slightly pink inside, or to desired doneness.
  • Serving:.
  • Serve immediately in pita pockets topped with shredded lettuce and Avocado Tzatziki Sauce (Recipe #252285).
  • Note:.
  • Threading the skewers with chunks of lemon and orange with their peels still on, add flavor that compliments the pork and you can squeeze the juice from the grilled fruit over the meat.
  • Thread other fruit on the skewers if you like, try cherry tomatoes or kumquats.

3 tablespoons peanuts, husks removed
2/3 cup finely sliced scallions
6 tablespoons fish sauce
2 teaspoons minced garlic
1 teaspoon minced chili pepper
1 teaspoon sugar
1/4 teaspoon ground black pepper
1 1/2 pounds pork loin, cut into 1-inch cubes

Steps:

  • Prepare a charcoal grill or preheat the broiler. Soak 20 bamboo skewers in cold water to cover for 20 minutes.
  • In the bowl of a food processor, combine the coconut milk and peanuts and process until the mixture forms a fairly smooth paste. Transfer to a large bowl and stir in the scallions, fish sauce, garlic, chili pepper, sugar and black pepper. Add the pork cubes and toss to coat. Set aside to marinate for 20 minutes.
  • Drain and pat the bamboo skewers dry. Thread 3 pork cubes on each skewer and grill or broil on a broiler pan, turning as needed, until the pork is nicely browned and cooked all the way through, about 6 minutes. Serve immediately.

These skewers encompass Filipino cuisine in every sense. They are cheap to make, bold in flavor, easy to execute and a crowd-pleaser all around! I serve them with suka (short for sukang sawsawan), a spiced vinegar dipping sauce often paired with grilled or fried meats. My Lola (Grandmother in Tagalog/Filipino) is the main inspiration behind this recipe and continues to prove that her palate and recipes are the way of the Filipino future.

1/4 cup white vinegar
1 tablespoon fish sauce
1 tablespoon finely chopped yellow onion
1 teaspoon granulated sugar
2 cloves garlic, finely chopped
1 Thai bird chile, finely chopped
1/4 cup soy sauce
2 tablespoons ketchup
2 tablespoons oyster sauce
1 tablespoon granulated sugar
2 lemons, juiced
Kosher salt and freshly ground black pepper
1 pound pork butt, diced into 1-inch cubes
1 cup cooked jasmine rice, for serving

Steps:

  • For the suka: Put the vinegar, fish sauce, onions, sugar, garlic and chile in a medium bowl and stir together 10 seconds. Set aside for later.
  • For the grilled pork skewers: Whisk together the soy sauce, ketchup, oyster sauce, sugar, lemon juice and 1 teaspoon pepper in a large bowl. Add the pork butt, cover and marinate at room temperature for at least 30 minutes and up to 2 hours. Alternatively, refrigerate and marinate overnight if time allows.
  • Preheat a grill pan over medium-high heat for 5 minutes.
  • Carefully skewer 4 to 6 pieces of marinated pork butt per skewer, stacking evenly. Lightly sprinkle with 1 teaspoon salt.
  • Grill the pork skewers in batches if necessary, rotating each one a total of 4 times, until charred and deep golden brown, 1 to 2 minutes per side. Serve over rice with the suka for dipping. Enjoy!

24 fresh sage leaves
1/4 lb thinly sliced prosciutto, cut into squares

Steps:

  • Mix together the garlic, salt, pepper, and vinegar. Marinate the pork cubes in the refrigerator in this mixture for at least 3 hours.
  • Heat up the grill, and thread on 8 skewers a piece of pork, a few squares of prosciutto, a sage leaf, a few layers of the onion, and a mushroom. Continue in this manner until all the ingredients are used.
  • Brush the skewers lightly with the oil, season with additional salt and pepper, and grill until the pork is golden brown, about 10 minutes per side.
