HOTDISH (TATER TOT CASSEROLE)
Hotdish is an easy, one-dish dinner often served in Minnesota at such large gatherings as family reunions, potlucks or church suppers. Don't be turned off by its humble appearance; the combination of cream of mushroom soup, corn, green beans, beef and a delightful crispy potato topping (the more taters, the better!) is universally likeable.

Steps:
- Preheat the oven to 350 degrees F.
- Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
- Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

- 1. Mix all ingredients except tater tots and cheese.
- 2. Place in baking pan. Top with tater tots.
- 3. Bake at 350 degrees for 40 minutes
- 4. Top with cheese and bake an additional 10 minutes
TATER TOTS HOT DOG CASSEROLE
Steps:
- Preheat oven to 400°F. Spray a 2-quart casserole dish with cooking spray.
- Combine in baking dish, hot dogs, beans, mexicorn, salsa, and 1/2 cup cheese. Top with tater tots in single layer.
- Bake for 30 min. Sprinkle with remaining cheese, bake until mix is hot and bubbly and cheese is melted, 3-5 minutes.

- Preheat oven to 400. Lightly grease a 13 x 9 casserole pan; set aside.
- In a medium saucepan, combine the baked beans, chili, ketchup, onions, mustard and hot dog "coins." Stir well. Bring to a light boil; reduce heat and simmer for 10-12 minutes.
- Pour the saucepan mixture into the prepared casserole dish.
- Top evenly with the thawed tator tots. Lightly sprinklewith salt.
- Bake at 400 for about 30 minutes.
- Remove from oven and sprinkle with the 2 cups cheese. (At this point you can squirt swirly ketchup designs over the cheese, but that's optional).
- Return to hot oven for an additional 10 minutes or until cheese is melted to liking.
HOT DOG BAKE
This is an economical casserole that kids love. Don't be afraid of the sauerkraut taste it mellows out with the potatoes, sugar and mustard. Try it you'll love it.

- Heat a skillet, spray with oil, use medium heat and cook the onion with the brown sugar, stirring for about 5 minutes.
- Add hot dogs and cook until they are brown (5 min).
- Remove from heat.
- Mix the mashed potatoes and the hot dog mix.
- Stir in the sauerkraut & mustard, add pepper.
- Spoon into a 1 quart casserole, sprinkle with bread crumbs, drizzle with the margarine/butter.
- Bake in 350°F oven until the casserole is heated through and golden, about 15-20 minutes.
REDNECK CASSEROLE
My brother and I cook up this quick and easy recipe every Friday night when my mom is out with her friends/family. It's yummy yummy and has the potential to evolve into much more...but we like it just the way it is. I hope you enjoy!!

- Set your oven to 450.
- Dump your can of baked beans (we use Bush's vegetarian) into a casserole dish. (We use a medium sized glass bowlish looking -- thing). Set the dish aside.
- Cut up your hotdogs into bite sized pieces and throw those into your casserole dish and mix until dogs are well coated with baked bean sauce.
- Cover the bean and dog mixture with tatertots. We usually use a couple handfuls. Use as many as you'd like. Just make sure to cover the mixture completely.
- Place the casserole dish in the oven for 1/2 an hour or until tater tots are golden brown. When Redneck Casserole is all cooked up, turn off the oven and sprinkle the top with cheese.
- Redneck Casserole is completely done when cheese is melted and you just can't take it anymore -- dig in! (You can mix pretty much anything with this dish. Sour cream, ketchup, mustard, hot sauce, etc.).

- Preheat your oven to 450 degrees.
- Pour your Chili into a 9" X 13" pan. If the sauce doesn't comfortably cover the pan mix in a 1/4 cup of ketchup.
- Cut up the Hot Dogs and mix into the chili.
- Make sure the hot dogs have at least some chili sauce on them or they will burn.
- Put as many frozen tater tots on top of mixture as they will fit without overlapping. A uniform pattern cooks better and faster.
- Bake for 30 minutes or until tots are golden brown.
- Reduce the heat to 350 degrees.
- Lightly dust with salt and pepper to taste.
- Sprinkle the cheese on top of the tots and bake for another 10 minutes or until the cheese begins to brown.
