GRILLED PORK CHOPS WITH CHIMICHURRI
We've paired this succulent pork with a simple, mild chimichurri (fresh herb sauce) that complements without overwhelming. This recipe makes enough sauce that you'll have some leftover; try it on potatoes, grilled vegetables or eggs.

- For the chimichurri sauce, combine all ingredients in a food processor with 1 tablespoon water. Process until blended; set aside.
- Prepare a grill for medium-heat cooking, leaving one area of the grill cool (this will be a place to transfer the chops if they flare up).
- Brush chops all over with oil and sprinkle with salt and pepper.
- Grill, turning once or twice, until just cooked through, about 15 minutes.
- Watch the chops carefully, and move them to the cool area of the grill if they flare up or brown too quickly.
- Let rest 5 minutes; serve with the chimichurri on the side.

- Preheat an outdoor grill to medium-high heat.
- Put a double layered piece of heavy-duty foil on a baking sheet or cutting board. Fold and gather the edge to form a rim all around. Toss the green beans and tomatoes on the foil with 1 tablespoon olive oil and sprinkle with salt and pepper.
- Lightly oil the grill grates. Slide the foil tray onto one side of the grill and cook, tossing occasionally, until the beans char slightly and are tender and the tomatoes begin to burst, about 15 minutes. Meanwhile, sprinkle the pork chops all over with 1/2 teaspoon each salt and pepper. Grill until the pork chops are just slightly pink near the bone, 6 minutes on the first side and 4 to 5 minutes on the second side. Transfer the pork chops to a cutting board to rest for about 5 minutes.
- Combine the herbs, vinegar, garlic, remaining 1 tablespoon olive oil and 1 tablespoon water in small food processor and pulse until herbs are coarsely chopped. Season with salt and pepper. Serve the pork chops with the green beans and tomatoes and chimichurri sauce.

PORK CHOPS WITH SMASHED POTATOES AND CHIMICHURRI SAUCE

- Put the potatoes in a large pot and cover with cold water. Add 2 teaspoons salt, partially cover and bring to a boil over high heat. Reduce the heat and simmer until the potatoes are tender, about 10 minutes. Drain, then return the potatoes to the pot and coarsely mash with a large spoon. Cover and keep warm.
- Meanwhile, make the chimichurri sauce: Pulse the parsley, cilantro, olive oil, shallot, garlic, vinegar and 1/4 teaspoon each salt and pepper in a food processor to form a coarse paste.
- Heat a large grill pan over medium-high heat. Pat the pork chops dry and season with salt and pepper. Lightly brush the grill pan with olive oil, then grill the chops until just cooked through, about 2 minutes per side. Serve the pork chops and potatoes with the chimichurri sauce.

- Chimichurri: Place the parsley and the following 7 items in a food processor. Puree 30 seconds, then scrape the sides down and puree again.
- Cut the squash and carrots in half, by length. (Cut fat carrots in quarters.) Place all veggies in a baking dish and add 1/3 cup chimichurri. Sprinkle with salt.
- Rub ¼ cup of chimichurri over the pork loin and sprinkle with salt. Let the veggies and pork marinate for at least 30 minutes.
- Preheat grill to medium heat. Grill the pork for 15-18 minutes, rotating every 4-5 minutes.
- Let the meat rest 5-10 minutes, then slice into ½ inch pieces.
- After the pork comes off the grill, place the veggies on. Grill 3-5 minutes per side. Salt and pepper if needed. Serve the pork with the remaining chimichurri drizzled over the top. Serves 4.

BBQ PORK LOIN WITH CHIMICHURRI SAUCE
We made this for my brother and his wife when they were staying with us. They loved it, the pork was very moist and the flavours were great. DH cooked this on the grill it came it was impressive. We will be making this one again. Prep time doest not include time to marinade.

- Mix garlic with jalapeños, vinegar, herbs and lime juice.
- Whisk in the olive oil.
- Add the salt and pepper corns.
- Whisk and allow to stand for about 30 minutes.
- Reserve half of the marinade.
- Put the pork into a Ziploc bag and add the other half of the marinade to meat.
- Marinade for about 4 hours but no more than 8 hours.
- Remove the pork from the marinade and cook on a hot grill for about 1 hour or until internal temperature is about 160°F.
- Allow to rest for twenty minutes before serving then,slice and use the reserved marinade to drizzle over the meat.
- Enjoy.

- Generously season both sides of each pork chop with salt and pepper. Transfer the chops to a large zip-top plastic bag and add half the chimichurri. Massage the pork chops to coat with the chimichurri, then squeeze as much air out of the bag as possible and seal. Set on a rimmed baking sheet and refrigerate for at least 4 hours or up to overnight.
- Heat a grill to medium-high or heat a grill pan over medium-high heat. Grill the pork chops, without moving them, until grill marks form, about 4 minutes. Rotate the chops 90 degrees and cook until grill marks form, about 2 minutes. Flip the chops and repeat, until the chops reach your desired doneness (between 145° and 160°F).
- In a medium bowl, combine the boiling water and the salt. Stir until the salt has dissolved, about 30 seconds, and let the water cool to room temperature. Add the parsley, cilantro, vinegar, olive oil, shallot, mint, garlic, oregano, red pepper flakes, and paprika and stir to combine. Transfer to a mason jar, cover, and refrigerate for up to 2 weeks. If you do refrigerate the sauce to use later, let it come to room temperature before serving, as the olive oil will have solidified a bit.

- Start by preparing the chimichurri sauce. Wash and chop the parsley and oregano, then mix it with the garlic, 1 cup olive oil, red chili, and lemon juice. Set aside.
- Take half of the chimichurri sauce, and add in another 1/4 cup of olive oil, and a splash of water. Season the pork chop marinade with salt and pepper to taste. Reserve the remaining chimichurri for later.
