SWEET AND SOUR PINEAPPLE PORK

Sweet and Sour Pineapple Pork image

Provided by Food Network

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 23

1 pound lean pork
1 tablespoon soy sauce
1 tablespoon sweet vermouth
1 teaspoon minced garlic
1 teaspoon minced ginger
4 tablespoons oil, divided, plus 4 cups oil, for deep frying
1/2 cup cornstarch
1/2 cup diced red and yellow bell peppers
2 tablespoons diced onion
Strips of green onion, for garnish
Toasted sesame seeds, for garnish
1/2 cup ketchup
1/2 cup vinegar
1/2 cup water
2 teaspoons soy sauce
1 cup sugar
1/4 cup orange marmalade
1 1/2 teaspoons minced ginger
1 teaspoon minced garlic
1/4 teaspoon hot pepper sauce
2 tablespoons pineapple juice
1/2 cup chopped canned pineapple
4 tablespoons cornstarch mixed with 3 tablespoons water, for thickening

Steps:

  • Cut pork into bite-size pieces and marinate for 30 minutes in mixture of soy, vermouth, garlic, ginger, and 2 tablespoons oil. Set aside.
  • Meanwhile, make the sweet and sour sauce:
  • In a medium saucepan, combine all ingredients except the cornstarch mixture, blend well and bring to a boil. Add cornstarch mixture. Reduce heat and simmer, stirring frequently until thickened. Be sure and bring your sauce to a boil before adding the cornstarch, otherwise the sauce may retain an unpleasant starchy taste.
  • Heat oil in a Dutch oven to 350 degrees F.
  • Remove pork pieces from marinade and roll in cornstarch to coat well. Deep fry in hot oil until golden brown and crispy.
  • In a large saute pan, heat 2 tablespoons oil on medium-high heat. Stir-fry red and yellow pepper and diced onion for 2 minutes, then add sweet and sour sauce and fold in fried pork. Let simmer for 2 minutes, arrange on serving platter and garnish with long strips of green onion and toasted sesame seeds.

PINEAPPLE SWEET AND SOUR SAUCE

Pineapple Sweet and Sour Sauce image

I have tried a few different recipes for sweet and sour sauce from this site and from other cookbooks and none of them ever seemed to be quite right, so I experimented a few times and this is the one I liked the best. Now it's the only sauce I use for my sweet and sour pork or chicken.

PINEAPPLE GLAZED RIBS

Pineapple Glazed Ribs image

Pork and pineapple are a perfect combo for ribs

Provided by Judith Hannemann

Categories     Appetizer     Main     Main Course

Number Of Ingredients 13

6 lb pork baby back ribs (about 2 racks)
2 tbs brown sugar
1 tbs kosher salt
1 tbs garlic (finely minced)
1 tbs olive oil
1 1/2 tbs cider vinegar
1/2 cup cilantro
1 chili pepper (finely minced)
3 cups pineapple juice
1/2 tsp red pepper flakes
1 cup mirin
3 tbs brown sugar
2 tbs rice vinegar

Steps:

  • Place all marinade ingredients in a food processor and pulse a few times. Rub the mixture onto the ribs. Place ribs in a covered dish or large freezer bags and marinate overnight.
  • You can make the glaze ahead of time as well (recommended). Place all glaze ingredients in a medium saucepan and bring to a boil. Reduce heat so you have a medium simmer (some bubbles on top of the liquid) and reduce until it's a syrupy consistency-this will take about 1 hour. Season to taste with salt and you may like a splash (about 1 tsp) of fresh lemon juice added.
  • Line a baking sheet with either parchment or aluminum foil. Place ribs on the sheet and roast in a 350F/180C oven for about 2 hours. Basting with glaze during the last 15 minutes of cooking.
  • Brush with additional glaze then cut into individual rubs. Serve remaining glaze as a dip if you desire.

PINEAPPLE GLAZED PORK RIBS

Pineapple Glazed Pork Ribs image

Provided by Tyler Florence

Categories     main-dish

Time 3h30m

Yield 6 to 8 servings

Number Of Ingredients 17

2 pounds baby back pork ribs
2 tablespoons toasted sesame oil
1/4 cup Chinese five-spice powder
Kosher salt and freshly ground black pepper
1 tablespoon toasted sesame seeds, for garnish
Chopped fresh cilantro leaves, for garnish
2 tablespoons unsalted butter
1 whole fresh pineapple, peeled and cubed
1 cup low-sodium soy sauce
1/2 cup dark rum
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice vinegar
1/4 cup brown sugar
1 fresh red chile, sliced thin
2 garlic cloves, smashed
1 (2-inch) piece fresh ginger, whacked open with the flat side of a knife

Steps:

  • Preheat the oven to 300 degrees F.
  • Rub the ribs all over with the sesame oil; season generously with five-spice powder, salt, and pepper. Arrange the ribs in a single layer in a shallow roasting pan and roast for 2 to 2 1/2 hours.
  • To prepare the pineapple glaze: In a saucepan over medium heat melt the butter and add the pineapple chunks; saute for 3 minutes. Add the soy sauce, rum, hoisin sauce, ketchup, vinegar, brown sugar, chile, garlic, and ginger. Bring to a slow simmer and cook, stirring, until thickened, about 20 minutes. Pull out the ginger pieces. Pour the glaze into a blender and puree until smooth.
  • In the last 30 minutes of cooking, baste the ribs with some of the glaze. When they are done, the pork will pull away from the bone and you will see about 1/2-inch of bone showing. When you are ready to eat, baste the ribs with more glaze and stick them under the broiler for 5 to 8 minutes to give the ribs a nice crust. (Watch them carefully as they can easily burn.) Separate the ribs with a cleaver or sharp knife, pile them onto a platter, and pour on the remaining sauce. Sprinkle with sesame seeds and chopped cilantro before serving.

Time 3h20m

Yield 6 serving(s)

Number Of Ingredients 16

2 slabs baby back ribs
2 tablespoons packed dark brown sugar
2 tablespoons paprika
1 tablespoon garlic salt
1 1/2 teaspoons onion salt
1 1/2 teaspoons chili powder
3/4 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
liquid seasoning
1 cup pineapple juice
1 tablespoon dry rub seasonings
1 1/2 teaspoons balsamic vinegar
1 1/2 teaspoons minced garlic
1 1/2 cups bottled barbecue sauce (your favorite)

Steps:

  • Remove membrane from back of ribs. In a small bowl, combine dry rub ingredients and mix well. Set aside 1 tbsp of the rub for liquid seasoning mixture and apply remaining rub generously to front and back of ribs. Pat gently to ensure that rub adheres to meat.

When coals register 250 degrees , place slabs meat side up on grill over empty space. Close the cover, and cook with indirect heat for 21/2 hours, adding coals as needed to maintain 250 degrees .
  • Cut 2 pieces of foil large enough to wrap each slab of ribs completely and stack them to create a double layer. Remove ribs from grill. Place each slab, meat side down, on a doubled foil square.
  • In a small bowl, combine liquid seasoning ingredients, including reserved tbsp dry rub. Pour 1/2 cup of the liquid over each slab, then tightly wrap and seal foil. Place wrapped slabs back on grill, close the lid and cook over indirect heat for 1 hour.
  • Remove ribs from grill, unwrap and discard foil and liquid. Brush barbecue sauce on both sides of ribs. Return ribs to grill for 15 minutes or until sauce caramelizes. Remove ribs from grill, cut and serve with additional sauce, if desired.

  • Before slicing the ribs into smaller pieces, check the bone side of the ribs and remove any membrane (or silverskin) that’s covering the bones (it’s a relatively thick white layer). The silverskin can turn leathery once cooked and it can prevent the marinade from penetrating the meat. Use your fingers to grab onto that membrane and rip it off.
  • Slice the strips of baby back ribs into small pieces by slicing in between each bone. Transfer the ribs to a medium mixing bowl.
  • In a small bowl, mix the sugar, salt, garlic powder, vinegar, soy sauce, and rice wine. Pour the marinade over the ribs and stir to coat the ribs with the marinade. Cover the bowl and let the ribs marinate for at least 2 hours (or overnight). Periodically, give the ribs a stir to ensure that all the pieces are evenly marinated.
  • To cook the ribs, heat the canola oil in a wok (or sauté pan with a lid) over high heat. Using tongs, transfer the pieces of ribs to the wok. Stir fry the ribs for about 1 minute.
