1/4 cup olive oil
2 tablespoons Dijon mustard
2 tablespoons apple juice
2 tablespoons chopped fresh parsley, plus more for serving
1 teaspoon lemon zest plus 1 tablespoon lemon juice (1/2 lemon)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cloves garlic, minced
4 bone-in or boneless pork chops, thick sliced
1 tablespoon olive oil
1/2 Vidalia onion, diced
1 1/2 cups fresh or frozen mango chunks
2 tablespoons apple juice
1 piece lemon peel plus 1 tablespoon lemon juice (1/2 lemon)
1 tablespoon sugar
1/2 teaspoon ground cumin
2 apples, such as Gala or Pink Lady, peeled, cored and chopped
1 cinnamon stick

Steps:

  • For the grilled pork chops: Whisk together the olive oil, mustard, apple juice, parsley, lemon zest and juice, salt, pepper and garlic in a medium bowl.
  • Put the pork chops in a baking dish or resealable gallon-sized bag. Pour the marinade over the meat. Marinate for at least 1 hour at room temperature and up to 8 hours refrigerated.
  • For the apple-mango chutney: Meanwhile, heat a medium saucepan over medium-high heat. Add the olive oil and heat until hot and shimmering. Add the onion and cook until softened, 2 to 3 minutes. Add the mango, apple juice, lemon peel and juice, sugar, cumin, apples and cinnamon stick. Cook over medium heat, stirring often and allowing the mixture to bubble and reduce, 15 to 20 minutes. Remove the lemon peel and cinnamon stick before serving. The chutney can be stored in an airtight container for up to a week.
  • Preheat an indoor grill pan to medium heat.
  • Grill the pork chops until an instant-read thermometer inserted into the thickest part of the chops registers 145 degrees F, 4 to 5 minutes per side. Let the meat rest for 5 minutes before serving. Garnish with the chutney and chopped parsley.

8 oz pineapple rings (can, juice drained and reserved)
1/4 c. light brown sugar
1/4 c. soy sauce
1/4 tsp garlic powder
1/2 tsp ginger powder
1/8 tsp ground black pepper
4 boneless pork chops (3/4'' - 1'' thick)

Steps:

  • In a large plastic Ziploc bag mix together the drained pineapple juice, brown sugar, soy sauce, garlic powder, ginger powder and black pepper. Smush the bag with your hands to dissolve the sugar. Reserve 1/2 c. marinade and set aside for basting.
  • Place the pork chops into the marinade. Squeeze out any air in bag, seal and place in refrigerator overnight or at least 4 hours. Reserve the pineapple rings.
  • Preheat grill to 350 degree F. Rub grates with oil.
  • Remove pork chops from marinade. Shake off excess. Place on grill and grill 5-8 minute per side. Brush with reserved marinated several times while grilling.
  • While pork is grilling place pineapple rings onto the grill and allow to cook until hot and the slices show grill marks then remove from grill.
  • Remove pork chops from grill when internal temperature reaches 145 degrees F. Cover with tinfoil and let rest 10-15 minutes. Then top with pineapple slices and serve.

0.75 lb pork tenderloin (340g)
1 tsp dried thyme
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1 tsp lime juice
1 tsp honey
2 heads omaine lettuce
1 red pepper
8 stems asparagus
2 slices fresh pineapple (around 1/3-1/2in/1cm thick)
1 tbsp orange juice
1/2 tbsp lime juice
1 tbsp light oil (vegetable or non-virgin olive oil)
1/4 tsp Dijon mustard
1/2 minced chili pepper (optional)

Steps:

  • Trim any excess fat and sinewy pieces from the outside of the pork loin.
  • Mix together the thyme, allspice, cinnamon, lime juice and honey and rub all over the outside of the pork.
  • Remove the outer leaves form the romaine (keep to use another time) and cut in half top to bottom through the stem. Remove the core and seeds from the pepper and cut into quarters. Snap the ends of the asparagus stalks. Lightly drizzle all with a little oil (only a small amount) and rub all over. Trim the skin from the pineapple.
  • Grill the pork, romaine, pepper, asparagus and pineapple, turning each as required. The pork will talk around 20min to be cooked through, the rest will take a little less - you just want them all lightly browned. Watch the romaine as it will quickly go from uncooked to charred black if you are not careful.
  • While everything is cooking, whisk together the orange juice, lime juice, oil and mustard for the dressing, plus the chili if using.
  • Once everything is cooked on the grill, remove from the heat and chop each into bite-sized pieces (the pineapple into around 8 pieces a slice, asparagus in half or thirds per stem, pepper in 4 to 6 pieces per quarter, pork and romaine sliced). Cut the pork last so it has time to rest a little.
  • Layer up the salad with the romaine at the bottom, the vegetables and pineapple next then pork on top. Drizzle over the dressing. Can be eater warm straight after cooking or allowed to cool to room temperature. If eating cooler, it's probably best to wait until nearer when serving to pour over the dressing.

1 (8 ounce) can pineapple rings, juice drained and reserved
¼ cup brown sugar
¼ cup soy sauce
¼ teaspoon garlic powder
4 pork chops
1 pinch ground black pepper

Steps:

  • Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. While the meat is grilling, place 4 pineapple rings onto the grill, and allow to cook until hot and the slices show grill marks; serve the chops topped with the grilled pineapple rings.

The combination of earthy dried chiles and fruity pineapple are hallmarks of al Pastore. But so are long marination times and slow roasting. These speedy tacos are far from al Pastore, but they do bring together the similar citrusy, fruity and earthy flavors. Make sure your grill is hot and well greased to get the right char and caramelization on the pork.

2 dried guajillo chile peppers
2 tablespoons vegetable oil, plus more for the grill
3 slices fresh pineapple (about 1/4 inch thick)
Juice of 1/2 orange (about 3 tablespoons)
Kosher salt and freshly ground pepper
1 pork tenderloin (about 1 1/4 pounds)
1/2 cup finely chopped white onion
Juice of 1 lime
2 tablespoons chopped fresh cilantro, plus whole leaves for topping
1 avocado
12 corn tortillas

Steps:

  • Preheat a grill to medium high. Put the chiles on a microwave-safe plate and microwave until fragrant and pliable, about 10 seconds (or toast in a small dry skillet over medium heat). Remove the stems, then tear the chiles and transfer to a blender. Add the vegetable oil, 1 pineapple slice, the orange juice, 1/2 teaspoon salt and a few grinds of pepper. Puree until smooth.
  • Trim the pork, then halve crosswise and lengthwise to create 4 pieces. Put in a shallow dish, add the chile puree and turn to coat; let marinate, 10 to 15 minutes.
  • Meanwhile, put the onion in a fine-mesh sieve and rinse under cold water; transfer to a bowl. Stir in the lime juice and a big pinch each of salt and pepper; set aside.
  • Remove the pork from the marinade and season with salt and pepper. Oil the grill grates, then transfer the pork and remaining 2 pineapple slices to the grill. Cover the grill and cook, turning the pineapple and pork occasionally, until the pineapple is well marked, about 4 minutes, and the pork is just cooked through and lightly charred, 8 to 10 minutes.
  • Chop the pineapple and add to the onion mixture along with the chopped cilantro; season with salt and pepper. Slice the pork and the avocado. Warm the tortillas as the label directs. Fill with the pork, pineapple mixture, avocado and cilantro leaves.

1 tablespoon honey
1 small shallot, chopped
1 jalapeno, chopped and seeds removed
1 garlic clove, chopped
1/2 cup olive oil
Salt
1/2 pineapple, diced and cored, juices reserved
1 tomato, diced
1/2 red onion, minced
1/2 small jalapeno, diced
1 tablespoon chopped cilantro leaves
1 lime, juiced
Salt and pepper
4 bone-in, center-cut pork chops

Steps:

  • For the marinade:
  • Blend all the ingredients in a large bowl. Place in a resealable plastic bag and add the pork chops. Marinate in the refrigerator for up to 3 hours.
  • For the salsa:
  • Mix all the salsa ingredients in a medium bowl. Taste for seasoning. Set aside for 10 minutes for flavors to meld.
  • Preheat grill to medium heat.
  • Remove chops from marinade. Grill for 5 minutes per side for a medium rare and 8 minutes for medium. Remove chops from grill and let rest 10 minutes before slicing. Spoon the salsa on top.

1 (20 ounce) can pineapple slices, in juice
1/2 cup brown sugar
1/2 cup Italian dressing
1/4 cup pineapple juice
3 tablespoons soy sauce

Steps:

  • Drain pineapple, reserving 1/4 cup of the juice for marinade.
  • Combine all marinade ingredients; use 2/3 cup to marinate pork, and reserve the rest for basting.
  • Let meat marinate for at least 3 hours.

  • Grill pineapple for a total of 5 minutes.

1/3 cup pineapple juice
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon vegetable oil
1 teaspoon ginger
1/2 teaspoon allspice

4 pork chops (3/4 inch thick)
12 ounces peeled and cored pineapple
1 red onion
2 tablespoons mint, chopped, garnish
lime wedge, garnish

Steps:

  • Whisk together first 8 ingredients (pineapple juice - dry mustard).
  • Place pork chops in a marinating dish or zip lock plastic bag and add all (except for 1/4 cup) of the juice/spice mixture. Seal bag or cover dish turning to coat all. Marinate in refrigerator for several hours (at least 4).
  • Cut pineapple into 1/2-inch thick slices. Peel onion and cut crosswise into 1/2 inch thick slices. Place onion and pineapple in a dish and drizzle with remaining juice mixture, let stand 20 minutes at room temperature.
  • Prepare grill.
  • Discard marinade from chops.
  • Lay chops, pineapple and onion on an oiled grill over a bed of hot coals (or high heat on a gas grill). Cook turning once until pineapple and onion are browned and pork is brown on outside and done on the inside (5-10 minutes).
  • Transfer chops to plates and garnish with grilled pineapple and onion. Sprinkle with mint and garnish with lime wedges, if desired.

1/2 cup packed brown sugar
1/2 cup Italian salad dressing
1/4 cup pineapple juice
3 tablespoons soy sauce
