GRILLED PLUM AND PISTACHIO SALAD

Steps:
- Preheat a grill pan over medium-high heat.
- In a large bowl, toss together the plums, 1 tablespoon olive oil and 1/4 teaspoon salt. Place the plum wedges on the hot grill pan and grill until nice grill marks have formed, 1 to 2 minutes per side. Remove to a plate to cool slightly.
- To the large bowl add the lettuce, basil, mint, white balsamic vinegar, remaining 1 tablespoon olive oil, and remaining 1/4 teaspoon salt. Using your hands, gently toss to coat the greens, being careful not to bruise the lettuce. Sprinkle the salad with the pistachios and gently place the plums on top. Sprinkle with the ricotta shavings and serve.
PISTACHIO PLUM CRISP
Steps:
- Preheat the oven to 350 degrees F.
- For the topping: Combine the flour, brown sugar, cardamom and salt in a medium bowl. Work the butter into the dry ingredients using your hands until completely incorporated (it will be soft and slightly sticky). Stir in 3/4 cup pistachios and set aside.
- For the filling: Toss the plums, granulated sugar, cornstarch, lemon juice and rose water, if using, together in a 3-quart baking dish. Scatter the topping over the plums, then scatter the remaining 1/4 cup chopped pistachios on top.
- Bake until the fruit bubbles and the crumble is golden brown and crisped, 55 to 65 minutes. Let cool slightly before eating.
ROASTED PLUMS WITH GREEK YOGURT
If plums aren't available, pears are an easy alternative. And with calories this low, go ahead-indulge in seconds!

- Heat oven to 375°F. Line a baking sheet with parchment paper. Place plums cut side up on sheet, brush with butter and sprinkle with sugar. Bake until soft and some juices run off, about 15 minutes. Divide among 4 bowls, top each with 2 tablespoons yogurt, sprinkle with nuts and drizzle with honey.
GRILLED FRUIT SALAD WITH HONEY-YOGURT DRESSING
Steps:
- Preheat grill to medium.
- Lightly brush fruit with oil and place on the grill. Cook until pineapple and plums are nicely caramelized, turning once, about 8 to 10 minutes. Remove to a plate. Meanwhile, in a medium bowl whisk together yogurt, honey and mint. Place 2 rings and 4 wedges on each plate and drizzle with dressing. Garnish with pine nuts.
GRILLED PLUMS WITH SPICED WALNUT YOGURT SAUCE
Steps:
- Heat grill to high. Brush cut side of plums with oil, drizzle with 1 tablespoon honey, and sprinkle with a pinch each of cinnamon and orange zest. Place plums on the grill, cut side down, and grill for 2 minutes or until golden brown and slightly caramelized. Turn over and grill until just heated through, approximately 1 minute longer. Place 3 plum halves in each of 4 bowls and top with a few tablespoons of the Spiced Walnut Yogurt Sauce.
- Whisk all ingredients together in a small bowl. Cover and refrigerate if not using right away.

- Prepare outdoor grill for direct grilling on medium.
- In 4-quart saucepan, stir together vinegar, sugar, 1/4 teaspoon salt, and 1/2 teaspoon freshly ground black pepper. Heat to boiling on medium-high; reduce heat to medium and simmer 5 minutes or until reduced by half. Remove from heat and add plums, stirring to coat.
- Place plums on hot grill, cut sides down, reserving vinegar mixture. Grill 5 to 6 minutes or until plums are lightly charred, brushing vinegar mixture onto plums halfway through.
- Divide plums among 4 shallow bowls and top with yogurt. Sprinkle with pistachios and drizzle with honey. Garnish with mint.
