This Delicious Basil dip is incredibly creamy, and is absolutely awesome on so many things, including meats, breads, veggies and chips!

Number Of Ingredients 7

1 1/2 cloves of garlic (more if you like a lot of garlic - we do, minced (you can do this before you add all the other ingredients))
3/4 cup fresh basil
1 cup mayonnaise (we use light, and sometimes don't add the olive oil and use the olive oil mayo)
1 1/2 tablespoons Dijon mustard
1 tablespoon extra virgin olive oil
1/2 teaspoon fresh lemon juice
a pinch of salt and pepper (to taste)

Steps:

  • In your blender or food processor, chop up your garlic, then add the basil and chop that all up. Then add the mayonnaise.
  • Next add the Dijon Mustard, olive oil, lemon juice and salt and pepper. Blend everything until it is completely smooth and combined. Put it in a dish, cover and refrigerate for at least an hour or so. This allows the flavors to marry and results in a delicious, fragrant, wonderful Basil Dip.

1 cup fresh basil leaves (loosely packed)
2 ounces grated Parmesan cheese
1 clove garlic
2 tablespoons extra virgin olive oil
8 ounces Greek yogurt cheese (or regular cream cheese)
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 tablespoons sour cream

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Place the basil, Parmesan cheese, garlic, and olive oil into a small food processor. Pulse until the garlic is well minced.
  • Add the remaining ingredients to the processor bowl and process until smooth. Transfer the dip to an oven safe serving dish and place in the preheated oven. Bake for 10-15 minutes, until fluffy and heated through. Serve with crackers or tortilla chips for dipping.

  • Mix all the ingredients. Refrigerate for 2 hours or so to let the flavors come together.

2 Tbsp extra virgin olive oil
2 - 8 oz bricks cream cheese
2 C. fresh basil
1/4 C. shredded parmesan cheese
1/4 C. mayonnaise or, sour cream
1/2 tsp black pepper
Optional: 2 drops Basil Vitality essential oil

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the garlic, oil, cream cheese, basil, mayo or sour cream, parmesan cheese and black pepper and puree.
  • Pour into an oven safe bowl and place in the preheated oven for 20-25 minutes or until cooked through & bubbly.
  • Add salt/pepper as needed.

This addictive dip is from the July '09 Cooking Light issue. I served this for dipping with pita chips and also with bread cubes. It makes a WONDERFUL sandwich spread - we put it on a turkey sandwich. The original recipe didn't call for the olive oil; I decided to add it since it only adds about 1 fat gram per 2 tablespoon serving. So you can certainly leave it out if you're watching fat grams.

Two 9-by-12-inch whole wheat lavash breads
2 tablespoons extra-virgin olive oil
1 cup finely grated Parmesan
1 cup tomato-basil sauce, such as Giada De Laurentiis for Target Tomato-Basil Sauce
1/4 cup (2 ounces) creamy gorgonzola, at room temperature
1/4 cup (2 ounces) mascarpone, at room temperature

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F.
  • For the chips: Brush the breads with the oil using a pastry brush and sprinkle with the Parmesan. Cut each bread into 32 triangles and arrange in a single layer, cheese-side-up, on 2 baking sheets. Bake until light golden, 10 to 12 minutes.
  • For the dip: Bring the tomato-basil sauce to a simmer over medium heat in a medium saucepan. Cook for 5 minutes. Remove the saucepan from the heat and whisk in the gorgonzola and mascarpone until incorporated. Pour the dip into a serving bowl and serve the chips alongside.

1 garlic clove, chopped

250 g fresh basil (1 bunch, washed and dryed)
1/3 cup cashews (or substitute with toasted pine nuts)
1/2 garlic clove, crushed
1/3 cup finely grated parmesan cheese
1/3 cup olive oil

  • Place the basil leaves, nuts, garlic and parmesan in a food processor. Process until finely chopped.
  • Slowly, in a thin stream, add the olive oil until well combined.

The thin version of this recipe makes a great salad dressing. When thickened after refrigeration it makes a good vegetable dip, topping for a baked potato, or mayonnaise replacement for sandwiches. Can be made vegan by using tofu instead of yogurt. This recipe tastes best after marinating in the refrigerator for 24 hours (not in the cooking time). 1/2 teaspoon dry mustard
1 medium garlic clove, minced
3 tablespoons olive oil or 3 tablespoons safflower oil
3/4 cup low-fat Greek yogurt, plain (to make this vegan you can use 3/4 cup soft tofu crumbled up instead)
salt or garlic salt, to taste

Steps:

  • In a food processor or blender, combine the lemon juice, basil, mustard, and garlic. Process until smooth. Then, with machine running, gradually ad oil. When oil has been completely blended in, add tofu (if making nondairy option). If using yogurt, remove the dressing from the food processor and place in small bowl and gently stir in yogurt.
  • Season to taste with salt. Cover and refrigerate. Stir well before each serving. The tofu version will especially thicken when chilled. Thin with a teaspoon or so of water if needed.
