GRILLED PINEAPPLE WITH CINNAMON-SUGAR GLAZE



Grilled Pineapple with Cinnamon-Sugar Glaze image

Fresh cut pineapple spears tossed with brown sugar and cinnamon and then grilled to absolute perfection. This Grilled Pineapple will easily become your new favorite recipe this grilling season!

1 whole pineapple (, peeled, cored and cut into spears [See Note 1])
1 cup brown sugar
2 tsp ground cinnamon
whipped cream
toasted coconut

Steps:

  • Preheat the grill to medium-high heat. [See Note 2]
  • Mix together brown sugar, cinnamon until well combined.
  • Pour cinnamon-sugar mixture over cut pineapple, coating all surfaces, and then marinate for 30 minutes. This allows the natural juices to for a glaze.
  • Place pineapple on the prepared grill and cook until the sugars are caramelized and the pineapple is tender 1-3 minutes on the each side- depending on thickness.
  • Remove from heat and serve immediately.

Favorite at a Brazilian steakhouse in Dallas. Not sure if this is the exact recipe they use but it tastes very close. Great side for kabobs and steak.

1 cup brown sugar
2 teaspoons ground cinnamon
1 pineapple - peeled, cored, and cut into 6 wedges

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk brown sugar and cinnamon together in a bowl. Pour sugar mixture into a large resealable plastic bag. Place pineapple wedges in bag and shake to coat each wedge.
  • Grill pineapple wedges on the preheated grill until heated through, 3 to 5 minutes per side.

I have used dark rum instead of the Tequila with equally good results. I also microwave the pineapple for 2 minutes, then marinade it in the glaze. This is great with vanilla ice cream over the top! Prep time includes marinating. Adapted from Bon Appetit magazine, July 1997.

3/4 cup tequila (or dark rum)
3/4 cup packed golden brown sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1 large pineapple, peeled, cored, cut into 2x1-inch pieces
6 bamboo skewers, soaked in water 30 minutes, drained

Steps:

  • Stir first 4 ingredients in small bowl until sugar dissolves. Thread pineapple pieces onto 6 skewers, dividing equally. (Tequila mixture and pineapple skewers can be made 8 hours ahead. Cover separately and chill.).
  • Marinade the pineapple for 30 minutes, bring to room temperature
  • Prepare barbecue (medium heat). Grill pineapple until brown, basting with tequila mixture and turning occasionally, about 10 minutes total. Remove pineapple from skewers; serve hot or warm.

(If it seems thick, I always put it in the microwave for a few seconds so that it can easily pour on top of the pineapple.) Spread on top of the pineapple using a cooking brush.
  • Grill for about 7-10 minutes or until it is starting to turn golden brown. I always like to brush the excess sauce from the pan back on top of the pineapple before serving.
