- Soak grilling plank in water for 1 hour. , In a small heavy saucepan, melt butter. Stir in brown sugar until dissolved; remove from the heat. Stir in brandy; set aside. , Place plank on grill over direct medium heat. Cover and heat for 3 minutes or until light to medium smoke comes from the plank and the wood begins to crackle. (This indicates the plank is ready.) , Place peaches on plank. Grill, covered, over medium heat for 20-23 minutes or until tender, brushing occasionally with brandy sauce. Top each peach half with a scoop of ice cream; drizzle with remaining brandy sauce.

- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
GRILLED PEACH WITH BRANDY SAUCE
Steps:
- Light the B&B Hardwood Charcoal and heat the grill to medium.
- Place a small, oven-safe saucepan over indirect heat. Melt the butter, being careful not to scorch. Add the brown sugar, cinnamon, and nutmeg, stirring until dissolved; remove from the heat.
- Away from the flame, stir in the brandy and set to the side.
- Lightly coat the grill grate with cooking spray.
- Place the peach halves, cut-side-down, directly onto the grill grate. Grill, covered, over medium heat for about 20 minutes, or until tender. Brush the peaches occasionally with the spiced brandy sauce.
- When the desired tenderness is reached, place the grilled peach halves, cut side up, into individual serving bowls. Top each with a scoop of ice cream, then drizzle with the remaining brandy sauce. Garnish with ground cinnamon and nutmeg.

GRILLED PEACHES WITH BRANDY AND BROWN SUGAR

- Cut the peaches in half and remove the pit. Brush the cut side with melted butter. Lay the peaches cut side down on the grill (low heat) for about 2 minutes (adjust with higher time if the peaches are not quite soft). Turn the peaches over and fill the well created by the removal of the pit with 1/2 T brown sugar and 1 tsp brandy. Grill the peaches on the round side for 2-5 minutes depending on the ripeness of the peach. Serve with vanilla ice cream or creme fraiche and shortbread for a wonderful summer dessert!

- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

This recipe was in the newspaper from Allrecipes.com. I am not sure how to classify this dish. It may be a dessert since there is sugar and cheese or it could be a salad. "A rose by any other name..." * UPDATE: I saw Bobby Flay make this on a TV show yesterday and he added tiny greens on top of the peach halve drizzled olive oil and the balsamic and the blue cheese and served it along side pork chops so it seems like a side dish!

- In a saucepan over medium heat, stir together the sugar, balsamic vinegar .
- Simmer until liquid has reduced by half, it should become slightly thicker.
- Remove from heat and set aside.
- Preheat grill to medium-high heat.

- Combine sugar and cinnamon in shallow bowl and stir to mix, set aside.
- Cut each peach in half around crease to the stone.
- Twist halves in opposite directions to separate them.
- Pry out stone with spoon and discard.
- Lightly brush each peach half on both sides with melted butter.
- Have peaches and cinnamon sugar by grill side, ready for grilling.
- Set up grill for direct grilling and preheat to high.
- Brush and oil grill grate.
- Dip each peach in cinnamon sugar to coat both sides, brushing off excess.
- Place halves on grill and grill until caramelized (dark golden brown), 3 to 6 minutes per side, turning with tongs.

- Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

- Place peach slices in the center of large sheet of heavy duty aluminum foil. Sprinkle with lemon juice, brown sugar, and cinnamon. Dot with butter. Fold edges of foil up and over to seal.

- Bring a large pot of water to a boil. Using the tip of a paring knife, make a shallow "X" in the bottom of each peach. Add the peaches, one at a time, to the boiling water and cook for 1 minute. Remove the peach from the water and plunge into a bowl of ice water. Repeat with the remaining peaches. Peel off the skins, then pit the fruit and quarter the flesh.
- In another large pot, combine 3 cups water and the sugar and bring to a boil. Add the peaches and simmer until just soft.
- Have the jars, bands and new lids scalded and ready. (To scald, dip the jars and rims in boiling water. You don't need to sterilize the jars, as you will be processing them for more than 10 minutes.) Simmer the lids in hot water to soften the rubberized flange. Gently pack the peaches into the jars.
- Boil the leftover syrup until it thickens slightly, then spoon it over the fruit, filling the jars ¾ full. Use a butter knife to release any air bubbles caught in the jars. Pour in enough brandy to fill the jars, leaving ¼ inch of headroom. Wipe the rims, cover with the lids and screw on the bands fingertip-tight. Place the jars on a rack in a big pot and cover with 2 to 3 inches of water. Cover the pot and bring to a boil over high heat, then lower the heat to medium and gently boil for 20 minutes. Remove the cover and then, after about 5 minutes, remove the jars. Allow them to cool, untouched, for 4 to 6 hours. Check the seals and store in a cool, dark place for up to a year. Refrigerate after opening.
