Grilled Peach Pizza with Balsamic Glaze image

This grilled peach pizza with prosciutto and arugula is topped with a sweet balsamic glaze and makes a delicious summer meal or a yummy appetizer for your next backyard party!

Fresh pizza dough
2 peaches (peeled and sliced)
2 cups baby arugula
1-2 oz prosciutto
2 oz goat cheese
1 tablespoon olive oil
Balsamic glaze

Steps:

  • Clean grill grates and lightly coat with oil, then preheat grill to high heat for at least 5 minutes.
  • While the grill heats, stretch the dough on a well floured surface with floured hands. Place stretched dough on a pizza peel or wooden cutting board dusted with flour or cornmeal.
  • Brush the top side of the dough with olive oil then transfer to the grill. Close the lid and cook for around 2 minutes until light golden brown on the bottom. Brush the top with oil then carefully flip the dough.
  • Add the arugula, prosciutto, peaches, and goat cheese. Close grill and cook for 2-3 minutes until dough is cooked through.
  • Remove and drizzle with balsamic glaze before serving.

1 cup balsamic vinegar
1 tablespoon honey
Salt and freshly ground black pepper, optional
3 peaches, halved and pitted
Canola oil
12 thin slices proscuitto
8 basil leaves, cut into thin ribbons
Extra-virgin olive oil

Steps:

  • Put the vinegar in a small saucepan and bring to a simmer over high heat. Cook until thick and syrupy, stir in the honey and season with salt and pepper, if using. Let cool slightly.
  • Brush the peach halves with oil and season with salt and pepper, if using. Place on the grill, cut side down and grill until golden brown. Turn over and grill for 1 minute longer. Remove the peaches from the grill and drizzle with the balsamic. Wrap or stuff each half with a slice of the prosciutto. Sprinkle the basil over the top and drizzle with olive oil.

3 tablespoons white sugar
¾ cup balsamic vinegar
2 teaspoons freshly ground black peppercorns
2 large fresh peaches with peel, halved and pitted
2 ½ ounces blue cheese, crumbled

Steps:

  • In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
  • Preheat grill for medium-high heat.
  • Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
  • Transfer the peach halves to individual serving dishes, and drizzle with remaining glaze. Sprinkle with crumbled blue cheese.

  • Place pizza stone in oven and preheat oven to 450 degrees. Let pizza stone preheat with oven and rest 30 minutes (assemble pizza during last 10 minutes or so).
  • Meanwhile, pour balsamic vinegar and honey into a large and deep skillet. Set skillet over medium heat, allow mixture to cook and simmer, until reduced to slightly under a 1/2 cup, about 15 minutes (I recommend using a silicone spatula to stir, so you can scrape bottom and sides of pan while stirring. Stir mixture occasionally during first 5 minutes, then stir constantly during last 10 minutes).
  • Lightly dust a sheet of parchment paper (about 14-inch long) with flour. Stretch and shape dough into a 12 1/2-inch round. In a small bowl, stir together olive oil and garlic. Brush mixture evenly over top of crust, working to evenly distribute garlic. Season crust lightly with salt and pepper.
  • Layer prosciutto over crust into an even layer, aligning pieces side by side (if they overlap slightly that's fine). Dollop small portions of the ricotta over pizza, then sprinkles with mozzarella cubes and asiago cheese.
