CHEAT'S DEEP-PAN PIZZA



Cheat's deep-pan pizza image

Feed friends quickly with this vegetarian deep-pan pizza, which can also be made ahead and frozen

500g self-raising flour
1 tbsp baking powder
100g butter , diced
300ml milk
2 tbsp olive oil , plus extra for brushing
1handful semi-dried tomatoes
2small courgettes , thickly sliced
½ x jar chargrilled artichoke in oil, drained
125g ball vegetarian mozzarella , drained and diced
50g mature cheddar or vegetarian alternative, grated
½ tsp dried oregano or rosemary

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the flour, baking powder and ½ tsp salt in a large bowl, then rub in the butter. Add the milk and bring together to make a soft, slightly sticky dough. Brush a 25cm x 36cm baking tray with a little olive oil and press the dough into it, making sure it goes right to the corners.
  • Arrange the tomatoes, courgettes and artichokes over the base. Scatter over the cheeses, drizzle with the remaining oil and sprinkle with the oregano. Season with pepper. Bake for 25 mins until nicely browned. Can be cooled, sliced in the tin and frozen for up to a month. Defrost before wrapping in foil and reheating in a low oven.

4large pitta breads
4 tbsp tomato purée
2 tsp mixed herb
2 tomatoes , sliced
6 slices salami , torn into small pieces
50g cheddar , grated

Steps:

  • Heat the grill. Spread each pitta bread with 1 tbsp tomato purée, sprinkle over the mixed herbs, then lay on the tomato slices. Divide the salami between the pittas, sprinkle over the cheese and grill until the cheese is golden and bubbling.

  • To make the sauce, put the tomatoes, mixed herbs and sugar in a saucepan. Peel and finely grate the garlic, add it to the pan and set over a medium heat.
  • To make the dough, combine the flour, baking powder and salt in a bowl and make a well in the middle. Pour in the yoghurt the stir with a fork to combine.
  • Carefully remove the hot baking trays from the oven and lay the pizza bases on top. Bake for 3-4 minutes until beginning to rise then remove from the oven.
  • Turn the pizza bases over and top with the sauce. Scatter the mozzarella over the top. Season with black pepper, sprinkle over a pinch of herbs then return to the oven.

  • Gather Your Ingredients. "30-Minute Meals" is kind of a shticky TV concept. The time it takes you to prepare the pizza is entirely dictated by how organized you are and how comfortable you are with the process, as well as how speedy you are in the kitchen period.
  • Prepare Your Sauce. You can use any sauce you like — canned, jarred, or fresh. Jamie recommends a quick option that combines a canned tomato base with fresh ingredients.
  • Make Your Dough. This is the easiest dough I've ever made! It even beats Jim Lahey's no-knead bread (though, I'm not sure it tastes as good). Measure 1 cup of self-rising flour (it must be self-rising flour — no substitutes!)
  • Prepare Your Toppings. Before you start cooking your dough, you should have your sauce, cheese, and toppings on hand. Have all your toppings chopped — I prepped bell peppers, zucchini, basil, and thinly sliced dried salami.
  • Fry Your Dough. Now for the fun part! Turn the heat on high, and let your dough get crispy. Stand by with a spatula and lift the edges to make sure the bottom isn't burning (this is why coating the pan with olive oil is so important — you don't want the dough to stick to the bottom).
  • Broil Your Pizza. Now that your pizza is ready, place it under the broiler for another 4 minutes or so. Leave the oven light on and watch it carefully.
  • Enjoy! Eat, savoring the cheater's satisfaction of a cheesy, tomato-slathered crunch stolen from right under the noses of the pizza dough purists.
