FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES



Festival-Style Grilled Italian Sausage Sandwiches image

These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
  • Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
  • Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

Steps:

  • Preheat the grill to medium heat, about 400-425F.
  • Place the sausages on the grill, making sure there is space between them. Close the lid and cook for 4-6 minutes.
  • Turn the sausages over, close the lid, and cook for another 4-6 minutes. Flip them one last time, and grill for a final 3-4 minutes, or until the sausages are cooked through and reach an internal temperture of 165F.
  • Serve the sausages on their own, or on a bun, with toppings of choice. They are great with mustard, diced onion, relish, pickles, sauerkraut and even grilled peppers.

2 medium onions, peeled and sliced
1 red bell pepper, cut into strips

Steps:

  • Heat a cast iron skillet over medium-high heat. Add sausage and cook, flipping every few minutes, until golden brown and an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 10 minutes.
  • Transfer sausage to a plate, leaving juices behind in the skillet. Add onions and red bell pepper; cook and stir until brown and tender, 5 to 10 minutes.

8 hot Italian sausages (about 3-inch-4-inch long)
3 green peppers (large dice)
3 sweet onions (large dice)
pickled hot peppers (optional)

Steps:

  • Put a little olive oil in a frying pan and put in the pepper and onions; cook slowly till just about done or whatever doneness you perfer them; put aside.
  • Split the sausage down the center lengthwise and put on a platter.
  • Microwave them till about three-quarters done.
  • Then put them on the grill, open side down and grill; turn them over and finish grilling till done.
  • Put sausage in a homemade bun and top with the onions and peppers.
  • If you like pickled hot pepper, put these on, too; the kind that come whole in a jar.

1 tablespoon sun-dried tomato oil
1 medium red onion, sliced
1 medium bell pepper (any color), sliced
2 tablespoons drained, finely chopped sun-dried tomatoes (packed in oil)
1 ½ teaspoons balsamic vinegar
1 teaspoon dried basil
1 teaspoon dried oregano
salt and freshly ground black pepper to taste
4 (6 inch) hoagie rolls, split lengthwise

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place sausages on the preheated grill. Grill until browned and cooked through, turning occasionally, 10 to 16 minutes. Your cooking time will depend on your grill and how close the sausages are to the heat. An instant-read thermometer inserted into the center should read 165 degrees F (73 degrees C) for well done.
  • Meanwhile, heat sun-dried tomato oil in a skillet over medium heat. Add red onion, bell pepper, and sun-dried tomatoes. Saute, stirring occasionally, until veggies are tender-crisp, 3 to 4 minutes. Drizzle balsamic vinegar over the veggies, then sprinkle with basil, oregano, salt, and pepper; stir until well combined.
  • Place turkey sausages in the rolls and evenly distribute the vegetable mixture over the top.

This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

1 hot Italian sausage or 1 sweet Italian sausage, uncooked
1 ciabatta bun, split
2 -3 slices provolone cheese (depending on size of slices)
roasted red pepper, to taste (or other toppings)

Steps:

  • Put sausage in small pot and cover with water.
  • Bring to boil over high heat.
  • Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
  • Boil sausage for 5 minutes, or until it looks at least halfway cooked.
  • Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
  • Preheat George Foreman grill.
  • Slice sausage in half, lengthwise.
  • Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
  • Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
  • Close sandwich and grill in George Foreman until the bread is golden and crispy.
  • Cut sandwich in half and enjoy!

1/2 lb bulk hot Italian sausage
2 tablespoons Italian seasoned breadcrumbs
3/4 ounce mozzarella cheese, sliced
12 slices Italian bread, 1/2 inch thick
1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomatoes, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
  • Cover and grill patties 4 to 6 inches from medium heat 12 to 15 minutes, turning once, until meat thermometer inserted in center reads 160°F Top patties with cheese. Cover and grill about 1 minute longer or until cheese is melted. add bread slices to side of grill for at least 2 to 3 minutes of grilling, turning once, until lightly toasted.
  • Spread toasted bread with mayonnaise; top 6 bread slices with lettuce, tomato and patties. Top with remaining bread slices.
  • SUBSTITUTION: If you can't find sun-dried tomato mayonnaise, mix up your own by combining 1/3 cup mayonnaise with about 2 tablespoons chopped sun-dried tomatoes. Regular mayonnaise works just fine as well.
  • SUCCESS: To keep food safe while grilling, always separate uncooked foods from cooked foods, and each other, too.
  • SERVE WITH: Pair these hearty sandwiches with an Italian-style pasta salad, homemade or from the deli, or maybe a bagged Caesar salad.
