In Japan, where it gets plenty hot in the summer, cold soba noodles, served with a dipping sauce, are a common snack or light meal. Soba are brown noodles, made from wheat and buckwheat, and the sauce is based on dashi, the omnipresent Japanese stock. You would recognize the smell of dashi in an instant, even if you have never knowingly eaten it. It's a brilliant concoction based on kelp, a seaweed and dried bonito flakes. It is also among the fastest and easiest stocks you can make, and its two main ingredients - which you can buy in any store specializing in Asian foods - keep indefinitely in your pantry. I would encourage you to try making it, though you can also use chicken stock (or instant dashi, which is sold in the same stores).

  • Bring a large pot of water to a boil, and salt it. Cook noodles until tender but not mushy. Drain, and quickly rinse under cold running water until cold. Drain well.
  • Combine dashi or stock, soy sauce and mirin. Taste, and add a little more soy if the flavor is not strong enough. Serve noodles with garnishes, with sauce on side for dipping (or spooning over).

Somen (or sōmen) is a very thin noodles served cold which makes it a perfect summer dish. Noodles are served in chilled water and the dipping sauce is also chilled. It is a very simple dish but wonderful to pop in between heavy meals to give your stomach a little bit of a rest.If you use dashi stock made from konbu (kelp), the dish will become a vegetarian dish.

2 bunches of dried sōmen noodles (, about 200g (7oz) in total (note 1))
Chilled water or a handful of ice cubes
200 ml (6.8 oz) dashi stock ((note 2))
50 ml (1.7 oz) soy sauce
50 ml (1.7 oz) mirin
2 tbsp finely chopped shallots ((scallions))
1 tbsp grated ginger
Japanese maple tree leaves , shiso (perilla) leaves, or cucumber slices ((optional))

Steps:

  • Add all the Dipping Sauce ingredients to a small saucepan and bring it to a boil.
  • Remove from the heat and cool it down quickly by leaving the pan in the cold water for a while, then place it in the fridge to chill.
  • Boil water in a large saucepan. Remove the tape around each bunch of sōmen noodles and place the noodles in the boiling water by spreading the strands.
  • Using chopsticks or a thin wooden spatula, stir the pot so that noodles are separated.
  • Boil for about 2 minutes (note 3). Drain using a sieve and rinse well.
  • Place noodles in a serving bowl, add chilled water (or water + ice cubes), just enough to cover the noodles.
  • Using chopsticks or tongs with soft edges, take a small number of noodles at a time and gently lay them in the same direction so that the noodles line up nicely (optional).
  • Decorate the noodle bowl with leaves or cucumber slices, if using. Serve with dipping sauce and condiments.

2 cups unseasoned dashi (Japanese soup stock)
5 tablespoons usukuchi shoyu (Japanese light soy sauce)
3 tablespoons sugar
2 tablespoons mirin (Japanese sweet rice wine)
1 1/2 shoyu (Japanese soy sauce)
For somen
3 bundles somen (thin white wheat noodles), paper wrapping discarded
Accompaniments: finely grated peeled fresh ginger; minced scallion; shredded fresh shiso leaves; sesame seeds

Steps:

  • Make dipping sauce:
  • Heat all dipping sauce ingredients in a small saucepan over low heat, stirring, until sugar is dissolved. Cool sauce, then chill, covered, until cold, about 1 hour.
  • Cook somen:
  • Bring 2 1/2 quarts water to a rolling boil in a 4-quart saucepan over moderately high heat. Add noodles and 1 cup more water. When water returns to a boil, add 1 cup cold water and bring back to a boil. Simmer noodles until just tender and slightly translucent, about 2 minutes. Test noodles for doneness by dipping 1 strand in cold water and sampling. If noodles are not tender, add 1 cup more water and return water to a boil. Drain noodles in a colander and rinse well under cold water.
  • To serve somen:
  • Divide noodles among 6 bowls filled with ice and cold water. Divide dipping sauce among 6 small bowls and serve with accompaniments for flavoring it, then dip each mouthful of noodles in sauce.

1 teaspoon sesame oil
For the Side and Toppings:
Beni shoga (pickled red ginger), for garnish
Nori (dried seaweed) strips, for garnish
Roasted white sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • Add sugar to beaten egg and mix well.
  • Heat oil in a skillet over medium heat and pour about one-quarter of the egg mixture in the skillet. Spread egg thinly and fry until done. Repeat, making a total of four thin, round omelets, like crepes .
  • Slice omelets into thin strips.
  • Boil water in a large pot and add chukamen noodles. Boil, following the package instructions. Drain and cool noodles in cold water. Drain well.
  • Combine all dressing ingredients together and stir well.
  • Put chilled noodles onto individual plates. Arrange cucumber, ham, and egg strips on the noodles.

Steps:

  • Stir together your soy sauce, mirin, sake or rice wine and dashi powder in a saucepan and gently bring to the boil, stirring occasionally.

Cold somen noodles served with grated ginger, scallion, and a delicious dipping sauce called Tsuyu. This is a perfect Japanese noodle recipe for hot summer days.

4 bundles dried somen noodles
1 knob ginger ((½ inch, 1.3 cm))
1 green onion/scallion
shiso leaves (perilla/ooba) ((thinly sliced, optional))
myoga ginger ((thinly sliced, optional))
¼ cup mentsuyu/tsuyu (concentrated noodle soup base)
½-1 cup iced water ((needed only if you use concentrated mentsuyu))

Steps:

  • [Optional] Traditional Japanese restaurants tie up the noodles to enhance the appearance of the somen and this is how you do it. Tie the edge of somen noodles with cooking twine. This way noodles will stay in one direction while cooking. I normally skip this step for home use.
  • In a large pot, bring water to a boil. When boiling, remove the wrapper.
  • Add the somen noodles in the boiling water (do not add salt!). Stir noodles with chopsticks so they don't stick to each other. Cook according to the package instructions. If necessary, add a little bit of cold water in the pot to prevent overflowing.
  • Drain somen in a colander and wash the noodles with hands under running water.
  • Once the noodles are cold, find the knotted parts of somen noodles and pick them up. Cut off the edge and discard. Hold each bundle gently and arrange it nicely on a serving plate. Somen can be served with ice to keep cool.
  • Cut the scallion finely and grate the ginger. Put them in small dishes.
  • Pour mentsuyu in individual dipping sauce bowls and add iced water to dilute. I recommend making homemade mentsuyu but if you're too busy, get a bottle of mentsuyu like this. See the instructions. You can check the ratio of mentsuyu to water on this page. This brand recommends 1:3.
  • Put a small portion of scallion and ginger in the dipping sauce and dip the somen noodles to enjoy! To make it more filling, you can bulk up the noodles by tossing in other ingredients such as shredded egg crepes (see How to Make Kinshi Tamago), julienned cucumbers, boiled okra, and ham.

  • Boil the noodles per the recommended time on package. Usually about 5 minutes.
  • Rinse the cooked noodles in a strainer under cold water.
  • Submerge the noodles in a big bowl with cold water and ice. Set aside until ready to serve.
  • Make the dipping sauce. Add dashi stock, mirin and soy sauce into a small sauce pan and take it to a boil on medium heat, about 5 minutes.
  • Turn off the heat, let the sauce cool to room temperature or place it in the refrigerator for a quicker cool down.
  • To serve, portion out the noodles and place them on a Zaru mat (if you don't have one, make sure to drain the noodles really well with a strainer). Portion the sauce in a small bowl and serve on the side.
  • To eat, add optional condiments to the dipping sauce. Take some noodles and dip it into the sauce and enjoy it with a nice slurp!

1/4 cup (40 grams) white sesame seeds
3 tablespoons light brown sugar
1/4 cup (60 milliliters) red miso
2 tablespoons tahini
2 1/4 teaspoons soy sauce
400 milliliters (14 fluid ounces) basic dashi stock
1 kilogram (2 pounds 4 ounces) frozen udon noodles (or 400 grams (14 ounces) dried udon noodles)

Steps:

  • Gently toast the sesame seeds in a small frying pan over low heat, shaking the pan from time to time to prevent burning.
  • As soon as you hear the sesame seeds popping, take the pan off the heat and leave them to cool down.
  • Transfer the sesame seeds to a suribachi or mortar and coarsely grind them.
  • Mix the sugar, miso, tahini, soy sauce, dashi and ground sesame seeds in a bowl, stirring until the sugar has dissolved.
  • Cook the udon noodles according to the packet instructions, then drain and rinse under cold running water until cool.
  • Divide the noodles among four plates. Serve the dipping sauce in small individual bowls and dip the noodles into sauce as you eat them.

3/4 cup Sanuki Sea Stock
3 tablespoons soy sauce (see Tips, below)
1 tablespoon sugar
2, 3, or 5-gram packet bonito flakes (katsuobushi; see Tips, below)
2 tablespoons lemon and/or lime juice
1 recipe fresh udon noodles or 8 to 10 ounces dried or semidried udon noodles , cooked and chilled
2 tablespoons white sesame seeds, freshly toasted (see Tips, below)
8 to 10 fresh chives, snipped, or 2 to 3 scallions, trimmed and finely chopped

Steps:

  • Make the ponzu sauce:
  • Place the stock, soy sauce, and sugar in a small saucepan and heat slowly until small bubbles appear around the rim. Stir to dissolve the sugar. Remove the saucepan from the heat and add the bonito flakes. Wait 2 minutes, then add the lemon and/or lime juice. Strain the mixture through a fine-woven muslin cloth- or coffee filter-lined colander. Chill the sauce for at least 20 minutes, or refrigerate up to several days.
  • Assemble the salad:
  • If the cooked noodles seem sticky or pasty, quickly rinse in cold water and drain well. Divide them among 4 shallow serving bowls. Garnish the noodles with sesame seeds and chives or scallions. Serve the chilled ponzu sauce on the side to drizzle on and toss in just before eating.

ZARU SOBA (CHILLED SOBA NOODLES)

Chilled Soba Noodles, or Zaru Soba, is a classic summertime meal in Japan accompanied by a savory dipping sauce called tsuyu, and a plethora of condiments called yakumi.

1 tablespoons sake
1 1/2 teaspoons sugar
2 servings soba noodles
1 teaspoon wasabi
1 scallion ((finely chopped))
50 grams daikon ((grated and drained))
1/2 sheet nori ((cut into thin strips with scissors))

Steps:

  • To make the dipping sauce, add the dashi, soy sauce, sake and sugar to a saucepan, and bring the mixture to a boil. Continue boiling for 1 minute to vaporize the alcohol in the sake and soy sauce. Set this aside to cool.
  • To boil the soba noodles, bring a large pot of water to a rolling boil. Add the soba noodles and stir for about a minute to ensure the noodles don't stick together. Continue boiling the noodles for the amount of time specified on the package.
  • Transfer the noodles to a strainer using chopsticks or tongs (leaving the boiling liquid in the pot).
  • Wash the soba under cold running water to cool it to room temperature while removing any excess starch on the noodles' surface.
  • Transfer the soba to a bowl of ice water and let the noodles chill for a moment.
  • Serve the noodles by scooping small amounts of soba out of the ice water and bundling them up into small mounds on a zaru or large flat basket.
  • Serve immediately with the dipping sauce and condiments.
  • Once you've finished eating the cold soba, reheat the boiling liquid and serve it in a teapot to add to the remaining dipping sauce to make a broth.
