Steps:
- Heat a 12-inch cast iron skillet over medium heat.
- Spread each bread slice with Roasted Shallot Mayo. Add layers of grated goat cheese, a small handful arugula, and finish with more grated cheese, then top with bread. Repeat for the second sandwich.
- Add the sandwiches to the hot skillet and cook until golden brown and crisp and the cheese is melted, 4 to 5 minutes per side. Cut the sandwich in 1/2 before serving.
- Preheat the oven to 350 degrees F.
- Place the shallot and garlic on a square of aluminum foil. Drizzle lightly with olive oil and sprinkle with salt and pepper. Fold up and seal the foil. Place in the oven and roast for 1 hour. Remove and let cool.
- Add the shallot and garlic to a bowl. Add the mayonnaise and mix together until smooth.

- Heat grill to high; lightly oil grates. Season steaks with salt and pepper; grill 4 to 5 minutes per side for medium-rare. Transfer to a plate; let rest 10 minutes.
- Meanwhile, grill onion until tender and charred, 4 to 5 minutes per side. Transfer to a plate; separate into rings. (To store, refrigerate steaks and onion, up to 1 day.)
- Assemble sandwiches: Thinly slice steaks against the grain. Dividing evenly, spread top halves of bread with cheese, and bottom halves with mustard. Pile steak, onion, and arugula on bottom halves; close sandwiches. Cut each sandwich into quarters, and serve.

WARM GOAT CHEESE, BEET AND ARUGULA SANDWICHES

- Preheat broiler.
- Whisk together vinegar, mustard, and salt and pepper to taste, then whisk in 2 tablespoons oil. Toss beets with vinaigrette.
- Arrange bread on a large baking sheet and brush tops with remaining tablespoon oil. Season with salt and pepper and broil 6 inches from heat 1 to 1 1/2 minutes, or until edges are golden. Remove 4 slices from oven. Turn remaining 4 slices over on baking sheet and spread thickly with goat cheese. Broil 1 minute more and transfer to plates. Top goat cheese with drained beets, onion, arugula, and remaining bread, toasted sides up.
OVEN GRILLED "CHEESE" SANDWICHES WITH ARUGULA, RED ONION AND TOMATO
Steps:
- Preheat the oven to 500 degrees.
- Place a 10-inch nonstick pan with an ovenproof handle in the top third of the preheated oven. Allow the pan to heat for 3 to 5 minutes.
- Brush 1 of each of the bread slices with a slight coating of olive oil.
- Build the sandwiches by placing 2 slices of bread oil side down. Top each slice with half the cheese, spreading it evenly. Season with pepper and a few grains of salt. Top each sandwich with 1 of the remaining slices of bread, oil side up.
- Place the sandwiches in the heated pan and cook for 5 minutes. Turn them over and cook for 5 minutes more; remove the pan from the oven. Open the sandwiches and fill with the onion, tomato and arugula.

- Melt the butter in a large saucepan on medium low heat WITH the red pepper flakes. This allows the butter to be infused with the spice from the flakes. Allow to cook for about five minutes, careful not to let it burn.Carefully transfer the melted butter to a small bowl. Set aside the pan for the grilled cheese - don't wash it!Use a pastry brush or the back of a spoon to spread the butter on ONE side of BOTH slices of bread (you likely won't use all of this butter*).
- Heat the pan again over medium heat. Arrange one slice of bread buttered-side down on the pan.Add the crumbled goat cheese** and shredded cheese** to the bread, and drizzle one tablespoon of honey overtop. Top this with the other piece of buttered bread, buttered side out to form the sandwich.
- Cover with a lid to help the cheese melt. Cook until the bottom of each slice of bread is toasted and golden brown and the cheese is melted, likely 5-7 minutes.When done, drizzle the top of the sandwich with another tablespoon of honey. If some of your red pepper flakes stayed in the pan and not the sandwich, you can sprinkle more on before serving. Slice, serve, and enjoy!

- In a large bowl, whisk the vermouth with the olive oil and season with salt, pepper, and crushed red pepper flakes.
- Trim the root ends of the oyster mushrooms, leaving them attached in small bunches.
- Discard the shiitake stems and leave the caps whole.
- Stem the portobellos.
- Wipe off the cremini.
- Add all of the mushrooms to the vermouth marinade, then toss and let stand for 20 minutes, stirring them occasionally.
- Light a grill or preheat a broiler.
- Drain the mushrooms; reserve 1 tablespoon of the marinade.
- Grill the mushrooms or broil them over high heat until browned and tender, about 15 minutes.
- Thickly slice the grilled mushrooms.
- Add the vinegar and shallot to the large bowl and whisk in the reserved marinade to taste.
- Add the arugula and walnuts, season with salt and pepper and toss to coat.
- If you want more of a kick, add some more of the crushed red pepper flakes!
- Transfer the arugula salad to plates, top with the grilled mushrooms and crumbled goat cheese.
- Enjoy!

- Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
- Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.

- Butter one side of each slice of bread, then sprinkle with Parmesan cheese and press it into the butter so it will stay. It is okay if some falls off.
- On the opposite side of the butter spread 2 tbsp of pesto sauce, then add cheese. Top with 1/2 of a tomato sliced, 1/4 cup of arugula and 1/2 an avocado mashed. Place a second slice of bread on top (butter side out). Repeat this process until all 4 sandwiches are prepared.
- Place butter side down on a skillet and cook on medium heat until outside of bread is crispy and cheese inside is melted. Flip and repeat on the opposite side. This should take about 5 minutes per side depending on your bread and stove.
- Depending on the size of your pan and sandwiches you may have to cook the sandwiches in separate batches. If you do not want to do that you can always use a second pan. Once all the sandwiches are cooked enjoy warm!
