PAN-ROASTED SALMON WITH JALAPEñO
Here is a simple, easy preparation for salmon that allows wild-caught fish, especially, to shine. The foaming butter amplifies the richness of the flesh, while the jalapeños keep it in check, as soy sauce does to the fattiest sushi. Some prefer to reverse the order of the cooking, so that the fish is served skin-side up, but I find that cooking it this way allows the butter to do its job more effectively and delivers a more beautiful plate of food as well. (Most of it is left in the pan when you're done.) Top with chopped fresh herbs, and serve with roasted new potatoes.

Steps:
- Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
- Heat a large, heavy sauté pan or cast-iron skillet over high heat. When the pan is hot, add the oil, and swirl it around. When the oil begins to shimmer, place the fillets in the pan, flesh side down, and allow to sear for about a minute, until the salmon has just started to pick up some color and releases easily from the pan.
- Use a spatula to turn the fillets onto their skin side, lower heat to medium and let them sizzle until the fish is caramelized around its bottom edges, approximately 2 to 3 minutes. (You may wish to use your spatula to press down on the fillets for the first 10 or 15 seconds to keep the skin from curling in the heat.)
- Turn heat to low, and add butter and diced jalapeño to the far side of the pan, then use the handle to tilt the pan away from you. Use a spoon to baste the fish with the sizzling butter and jalapeño. Continue basting, quickly and repeatedly, until the fish is golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of the salmon. Remove fillets from the pan, leaving the bulk of the butter and oil in it, and serve immediately, garnished with the chopped fresh herbs.

ROASTED SALMON WITH JALAPEñO, HONEY AND LIME
This is speedy weeknight salmon with a kick, thanks to sliced jalapeño, which flavors the honey glaze and cooks alongside the salmon. The chiles caramelize as they roast, becoming spicy and sweet. If you want to reduce the heat slightly, use two jalapeños instead of three. Serve with steamed white or brown rice, spooning the extra glaze over the salmon and rice.

- Heat the oven to 400 degrees. While the oven heats, combine the honey, jalapeños, vinegar and soy sauce in a small saucepan. Bring to a boil, then turn the heat to low and simmer for 10 minutes. Set aside.
- Pat the salmon fillets dry using paper towels. Brush a 9-by-9-inch baking pan (or other similar-size baking pan or dish) with olive oil, then place the fillets in the pan, arranging them evenly without crowding. Brush the fillets generously with olive oil and sprinkle with salt. Pour the glaze and jalapeños over the salmon, spooning some of the glaze onto the fish as it collects in the bottom of the pan.
- Roast the salmon for 6 minutes, then baste with the glaze. Return to the oven and roast until the salmon is cooked through but still slightly rare in the center, another 6 to 8 minutes.
- Spoon the glaze in the pan over the salmon, then squeeze the lime over the salmon, and sprinkle with salt and cilantro, if using. Serve hot with rice on the side, pouring any glaze that remains in the pan over the rice.
GRILLED GLAZED SALMON
This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

- In a small bowl, combine brown sugar, melted butter, lemon juice, dill, and cayenne pepper, mixing well.
- Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
- Set aside the remaining unheated sauce to use for basting the fish as you grill.
- Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
- Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
- Lightly brush grill grates with some oil and heat grill to medium.
- Carefully slide salmon off of the platter and onto the grill, skin side down,using a large metal spatula to help.
- Cover grill and cook fish, undisturbed, for 5 minutes exactly.
- Baste liberally with the reserved basting sauce, re-cover, and cook another 10-15 minutes- basting every 5 minutes.
- Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).
- Fish is ready when it begins to flake and is starting to appear as if milk is seeping out.
- Carefullly remove to a fresh,clean platter and pour the 1/2 cup sauce you had simmering on the stove over the top of the fish.
GRILLED SALMON WITH CILANTRO SAUCE
Steps:
- Preheat grill for high heat.
- Lightly grease one side of a large sheet of aluminum foil. Place salmon on the greased side of foil. Melt the butter in a saucepan over medium heat. Remove from heat, and mix in cilantro and jalapeno. When cilantro is wilted, drizzle butter mixture over the salmon.
- Place foil with salmon on the grill. Season with Old Bay. Cook 15 minutes, or until fish is easily flaked with a fork.

- Thaw fish, if frozen. Rinse fish pat dry. In saucepan melt jelly over low heat remove. Stir in next 7 ingredients. Place fish in shallow dish, pour mixture over fish. Cover and refrigerate 1 to 2 hours turning fish occasionally.
- Remove fish from marinade, reserve marinade. For charcoal grill, arrange medium hot coals around edge of grill. Test for medium heat in center of grill. Place fish on greased piece of heavy-duty foil in center of grill. Cover your grill and cook 15-18 minutes or until fish flakes.
- For gas grill adjust your grill for indirect cooking. Grill over medium heat as above. Bring reserved marinade to boiling reduced heat. simmer uncovered 10-15 minutes or until reduced to 1/2 cup. Drizzle over fish sprinkle fish with cilantro,peppers,and onions.
GRILLED SALMON WITH JALAPENO BUTTER
Spicy butter adds instant flavour to grilled salmon. This is a clipping from a decade old magazine. **Edit June 24/07 - after reading some of the reviews I had to revisit this recipe and try it grilled and it IS so much better that way. Add a little bit of garlic powder and salt & pepper to it first then grill about 5 to 6 minutes per side (Depending on how thick it is) Thanks for the tips - this has made a good recipe great :)

- For Jalapeño Butter:.
- Combine ginger, garlic and jalapeño peppers in a blender or food processor. Process until finely chopped. Add cilantro and process until combined. Stir in butter.
- On a piece of plastic wrap, shape butter into a 6 inch long log. Seal and chill until serving time.
- Sprinkle salmon with salt & pepper. Wrap salmon in foil and place on grill. Grill for 10 to 12 minutes, flipping package over half way. Fish is done when it flakes easily when tested with a fork.
- To serve, place a 3/4 inch slice of jalapeño butter on top of each serving of salmon.

- Food process all the glaze ingredients until finely pureed. Simmer 2-3 mins over med heat. Reserve 1/4 cup of glaze and put aside. Add 2 tablespoons of butter to the rest of the glaze over heat. Skin the fillets. Season with salt and pepper. Spread 1/2 tablespoon of glaze to each side of fillet. Prep aluminum foil boats for grilling. Place fillets presentation side down. Arrange on grill. Cook 6-8 mins then flip with tongs. Add glaze to fillet. Grill another 1-2 mins. Salmon is done when sides are lighter in color and middle is slightly translucent. Serve with reserved fresh glaze. Serve with green salad and lemon wedge.
