- Add soup, water, dry gravy mix, thyme and bay leaves.

- Heat the slow cooker if necessary. Heat the oil in a non-stick frying pan and add the onion, carrots, celery and garlic and fry gently for a minute. Pour in the passata, add the parsley and stir, then transfer the lot to the slow cooker.
- To make the meatballs, tip the mince into a large bowl. Add the oats, paprika, garlic and plenty of black pepper, and mix everything together with your hands. Divide the mixture into 20 lumps about the size of a walnut and roll each piece into a meatball. Spray or run a non-stick pan with a little oil and gently cook the meatballs until they start to brown. Add them to the tomato base and cook on Low for 5 hours. Serve over rice or pasta if you like, or with a green salad.

- Combine sauces in your crock-pot and stir until combined.
- Add meatballs and stir until they are coated with the sauce.
- Cook on high for 3 hours.
- Serve as an appetizer or serve over rice for a main dish.
- For Homemade Meatballs:
- Preheat oven to 450 degrees F. Line 2 baking sheets with foil and set aside.
- Place all ingredients into a large bowl and gently mix together with your hands, careful not to over-mix. Just squish it all together a few times to combine.
- Using a cookie scoop or your hands, divide meat mixture into desired size meatballs. As long as they are uniform, they can be as large or small as you like.
- Bake in the preheated oven for 10-14 minutes, depending on the size. Be sure to check for doneness. Serve hot with your favorite sauce.
- TO FREEZE:
- Allow meatballs to cool completely on the baking sheets. Once cool, scrape the fat away from the meatballs and seal tightly in a freezer safe bag or air tight container and place in the freezer.

EASY SLOW COOKER BBQ MEATBALLS
Steps:
- Add the ground beef, breadcrumbs, onions, garlic, egg, and 1/2 of the spices to a large bowl. Reserve the remaining spices for the BBQ sauce.
- Using clean hands, combine the ingredients and form one large ball. Don't overwork the ground beef mixture. That will result in balls that fall apart.
- Form and shape the mixture into your desired size. I like 2 tablespoons in size.
- Spray the bottom of the slow cooker with cooking oil. Place the meatballs in the slow cooker.
- Cook the meatballs on High for 2 hours. (You can also do Low for 4 hours). Don't open the slow-cooker throughout the cooking process. This will slow down the cook time.
- While the meatballs cook, combine the BBQ sauce, remaining BBQ rub, liquid smoke, and Worcestershire sauce.
- Open the slow cooker. Carefully, drain any excess fat (if necessary). Pour the BBQ sauce over the meatballs. Do not stir. (If your meatballs aren't fully cooked they will fall apart if you stir.)
- Cook the meatballs for an additional 1 hour and 30 minutes on High (3 hours on Low).
- Open the slow cooker and stir. Use a meat thermometer to ensure the meatballs have finished cooking. Insert the thermometer and ensure a temperature of at least 160 degrees.
- Cool before serving.

- Grate the onion using the large holes of a box grater over a large bowl. You should end up with about ¼ cup.
- Chop the spinach and basil into very small pieces. Alternatively you can add the onion, basil, and spinach to a food processor and pulse until finely chopped but not pureed.
- To the same bowl, add the nutritional yeast, garlic powder, and salt, stirring to combine. Add the turkey and stir again, until all the ingredients are well incorporated.
- Add the olive oil to the base of a 6-quart slow cooker, spreading it around until the bottom is well coated.
- Using a small, 1.6-inch cookie scoop, scoop the turkey mixture into a single layer into the base of the slow cooker. Gentle scoop any remaining mixture on top, creating a second layer. If you don't have a cookie scoop, you can use a large soup spoon instead. Ground turkey is very sticky, so trying to roll them into balls by hand will likely result in a mess, so use the scoop or spoon method for best results.
- Pour the marinara sauce over the meatballs. Do not stir.
- Cover and cook on high for 4 hours or low for 6-8. Uncover and gently stir to separate the meatballs.
- Serve over pasta, spaghetti squash, or with crusty bread, topped with fresh basil, parmesan (traditional or dairy-free), and red pepper flakes if desired.
