A lovely and refreshing salad or appetizer, better if it's allowed to sit and marinate a few days. You can also pop it in a blender for quick and tasty hummus.

1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
3 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 tablespoon lemon juice
1 tablespoon lemon zest
1 teaspoon chopped fresh parsley
¼ teaspoon minced garlic
sea salt to taste

Steps:

  • Place chickpeas in a bowl. Add olive oil, oregano, lemon juice, lemon zest, parsley, garlic, and sea salt and mix well. Marinate chickpeas in the refrigerator, 8 hours to overnight.

2 cups garbanzo beans
2 garlic cloves
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon cracked pepper
3 tablespoons chopped fresh basil

Steps:

  • in a medium bowl whisk olive oil and balsamic vinegar [you can use any flavored vinegar you want].
  • add salt and pepper [you can adjust to your taste up or down] whisk again.
  • crush garlic and whisk into dressing.
  • add beans and basil.
  • stir and let set for at least 1 hour.

3 tablespoons extra-virgin olive oil, plus more for drizzling
1 onion, finely chopped
4 cloves garlic, finely chopped
1 Fresno or Holland red chile pepper, finely chopped
2 sprigs fresh rosemary, leaves picked and finely chopped
1 fresh bay leaf
Salt and freshly ground black pepper
1 (28-ounce) can chickpeas (garbanzo beans), rinsed and drained
1 1/2 cups chicken stock
1 (28-ounce) can whole or crushed San Marzano tomatoes
1 pound whole wheat or whole grain penne
Freshly grated Pecorino cheese, for serving
Finely chopped flat-leaf parsley, for serving

Steps:

  • Heat 3 tablespoons extra-virgin olive oil in a large skillet or medium Dutch oven, add the onions, garlic, Fresno chile, rosemary, bay leaf, salt, and pepper and cook to soften, 7 to 8 minutes.
  • Meanwhile, add about 2/3 of the chickpeas to a food processor, then quick-pulse into fine bits. Add the finely chopped chickpeas and remaining whole chickpeas to the pan and heat through. Stir in the stock and tomatoes. Break up the whole tomatoes and simmer the sauce to thicken a little. Cool and store for make-ahead meal.
  • Reheat over moderate heat and stir occasionally.
  • Bring water to boil for pasta, salt the water and cook to al dente. Reserve a cup of starchy pasta water just before draining. Drain the pasta and place back in the hot pot and toss with the sauce and as much starchy water as you need to combine. Serve the pasta in shallow bowls topped with a drizzle of extra-virgin olive oil and sprinkle of Pecorino cheese and parsley.

They also add nicely to homemade snack blends (e.g., chex mixes, Giada's Ceci, Pistachio and Almond mix and the like).EDITED 9-8-07 Given the comments about the beans remaining somewhat soft inside, and realizing people expect them to be crispy, yesterday I made a double batch, cooked as indicated and then turned the oven to 275 and left them in for another hour to hour and a half. They were perfectly crunchy.

2 cups cooked garbanzo beans (rinsed and dried) or 1 (15 ounce) can garbanzo beans (rinsed and dried)
1 tablespoon olive oil
sea salt

Steps:

  • Preheat oven to 375 degrees.
  • Spread garbanzo beans on half sheet pan, dribble olive oil over them and use your (clean) hands to mix.
  • Roast for 40 minutes, shaking the pan every 12 minutes or so, until quite brown and crisp.
  • (May leave in oven for another hour or two at 250 to 275 for additional crisping.).
  • Sprinkle with sea salt to taste.
  • Cool. Serve.
  • Can recrisp, if necessary, by heating for 5 minutes in a 375 degree oven.
