These are a summertime family favorite and are so easy to cook! Great dish that doesn't warm up the kitchen, though you could also make them in the oven.

- Preheat grill for medium heat and lightly oil the grate.
- Place 4 large sheets aluminum foil on a flat work surface. Place 4 pieces bacon in the middle of each sheet of aluminum foil; pile 1/4 of the potatoes on top. Drizzle 1 1/2 teaspoon butter and 1/2 teaspoon seasoned salt over potatoes. Wrap aluminum foil around potatoes to create a pouch.
- Place aluminum foil pouches on the preheated grill; cook until potatoes are tender and bacon is crispy, 10 to 15 minutes. Open pouches carefully.

- After potatoes are washed and cut, combine the ingredients for the ranch mix.
- Use just enough of the mix to thoroughly coat the potatoes and stir together in a large bowl.
- Spoon potatoes out onto individual aluminum foil squares and sprinkle with desired toppings. We did cheddar and bacon for one, and gorgonzola cheese and bacon for the other.
- Wrap the potatoes up in the foil so they are completely covered. We usually wrap each one in two pieces of foil.
- Bake, grill, or cook in a fire pit. It is ready to eat when you peel back some of the foil and potatoes are fork tender and break apart easily.

- Combine potatoes, onions and herbs in a large bowl.
- Combine oil, butter, garlic, salt and pepper in a small bowl.

- Preheat grill for medium heat.
- For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
- Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

- Grease a 24 x 18 inch piece of heavy duty foil with 1 tablespoon of the butter.
- Scrub and thinly slice unpeeled potatoes onto the center of the foil.
- Sprinkle with the onions, cheese, salt, paprika and pepper.
- Dot with remaining butter.
- Enclose the potatoes in the foil and seal with a double fold enclosing the potatoes completely leaving head space for the steam to build.
- Grill potato packet for 30 to 40 minutes, turning every 10 minutes or until potatoes are tender.

- Preheat grill to 450°F or medium low.
- Rinse and scrub potatoes. Pat dry.
- Cut 4 sheets of aluminum foil. Place each potato on a piece of foil and brush with oil and top with sea salt (optional). Wrap and repeat.
- Using tongs, place potatoes on the shelf of the grill or away from direct heat evenly spaced so they are not touching. Close the lid and grill 30 minutes. Rotate with tongs and grill an additional 30 minutes.

GRILLED POTATOES
Crispy grilled potatoes are easy and a perfect side to any BBQ recipe. Golden outside, tender inside, with no boiling or clean up required!

- Rinse and dry the potatoes (no need to peel). Cut crosswise into ½-inch slices (if your potatoes are smaller than a golf ball, you can halve or quarter them). Place in a large bowl.
- In a small bowl, stir together the rosemary, garlic powder, salt, pepper, and oregano.
- Drizzle the potatoes with the oil, then sprinkle the spices over the top. Toss to evenly coat.
- Preheat the grill to medium-high (about 375 to 400 degrees F).
- Place two large (about 22 to 24 inches long) sheets of heavy-duty foil down on a large baking sheet (you'll use the baking sheet for easy transport) so that the foil pieces are slightly overlapping down the center to create a wider sheet. Coat with non-stick spray. Spread the potatoes onto the foil in a single layer (if you prefer not to have the food touch the foil, you can add a layer of parchment in between). Place two more overlapping sheets of foil on top, then fold up the edges all the way around to seal and create a packet. Leave some space towards the top of the packet to allow the air to circulate.
- Using the baking sheet, carry the potatoes out to the grill, then with tongs slide the packet onto the grill. Cover then cook for 15 minutes.
- Carefully open the foil then use the tongs to flip the potatoes over. They should be deeply golden on the first side (if not, continue to cook them for 3 to 5 minutes more). Place the foil loosely back over the top, close the grill, and cook for 5 to 10 additional minutes, until the potatoes are tender when pieced with a fork.
- Slide the potato packet back onto the baking sheet, then transfer them to a serving bowl (or serve them right off of the foil). Serve warm, with a sprinkle of Parmesan and chopped fresh herbs as desired.

- Preheat the grill to medium, or oven to 400°F. Cut 1.5 lbs. baby potatoes into bite sized pieces, then place in a bowl and mix with 1/2 Tbsp. olive oil, 1 Tbsp. dried rosemary, a pinch of sea salt and pepper, and 7 whole garlic cloves or powdered garlic.
- Transfer the potatoes to a piece of foil, around 28 inches in length. Bunch the potatoes in the middle of the foil. Place 3 sprigs of thyme or dried thyme and 1 Tbsp. cubed butter on top of the potatoes.Bring the edges of the foil together and wrap, tightly sealing all the way around. If the foil isn't long enough to wrap properly, then double wrap with second piece of foil in the opposite direction.
- Place the foil directly onto the grill or, if roasting, place on a tray before putting in the oven.Grill or roast for 40 minutes, then remove from the grill or oven and open up the foil. Remove the thyme and add in the rest of the butter and season again, then return to the grill or oven with the foil open and cook for a further 15 minutes or until golden brown.Top with parsley (optional) , and enjoy!

- Prepare a clean grill for cooking on medium heat about 350 - 400 degrees F.
- Lay out one piece of foil about 12'' x 24'' and put the green beans in the middle of the foil, evenly spread out. Fold up ends of green beans to make a edge to contain water and olive oil. Sprinkle the seasonings over the beans, then drizzle with olive oil and water. Fold the ends of the foil in towards each other to form a packet.
