GRILLED CITRUS SALMON & ASPARAGUS RECIPE BY TASTY
Here's what you need: salmon fillets, olive oil, salt, pepper, lemon, lemons, garlic, fresh rosemary, fresh thyme, asparagus, fresh parsley

Steps:
- In a resealable bag or dish, add salmon, olive oil, salt, pepper, juice of one lemon, minced garlic, one thyme sprig, and one rosemary sprig.
- Seal, mix marinade around, being careful not to bruise the fish, and allow to marinate in the refrigerator for at least one hour.
- Preheat only half of the grill to medium-high heat for indirect grilling.
- Slice the two remaining lemons horizontally, so that you get six slices of lemon from each one, excluding the top and bottom.
- Bend each piece of asparagus until the woody end snaps off and discard it.
- Oil the grill with olive oil and place lemon slices over indirect heat (the side of the grill where the burners are not on).
- Lay salmon on top of the lemon slices and top with a sprig of rosemary on each fillet. Close the cover and grill for 20 minutes.
- Place the asparagus spears on the grill and brush with olive oil. Grill for 5 additional minutes.
- Sprinkle with parsley and serve.

- Preheat oven to 425°. Cut parchment or heavy-duty foil into six 15x10-in. pieces; fold in half. Arrange citrus slices on 1 side of each piece. Top with fish and asparagus. Spritz with cooking spray. Sprinkle with salt, pepper and parsley. Drizzle with lemon juice. , Fold parchment over fish; draw edges together and crimp with fingers to form tightly sealed packets. Place in baking pans., Bake until fish flakes easily with a fork, 12-15 minutes. Open packets carefully to allow steam to escape.

GRILLED SARDINES AND ASPARAGUS WITH CITRUS, CHILES AND SESAME

- Prepare a medium-hot grill. Break off the woody ends of the asparagus, and peel each stalk from the flower all the way to the end. Blanch the asparagus in salted water until bright green but slightly crunchier than you want. Spread them out on a baking sheet, and allow to cool.
- Brush the sardines with a small amount of olive oil, and season with salt and a big pinch of the sesame seeds. Toss the cooled asparagus with olive oil, and sprinkle with salt and sesame as well.
- Break up the chiles into manageable pieces, and grind in a coffee or spice grinder to a coarse texture. Rehydrate the chiles by mixing with a couple of tablespoons of boiling water.
- Pound the garlic with a mortar and pestle until it is a roughish purée. Chop the herbs. Mix the chiles, garlic and herbs with enough olive oil to make a thick but pourable sauce. Add a pinch of salt, and taste.
- Put the sardines on the grill, and cook until fairly brown and halfway done. Carefully flip them over, and grill on the other side. Larger sardines will take 3 or 4 minutes on each side, smaller ones about 2 minutes on each side. Grill the asparagus for about the same time.
- Spread the citrus on a platter, and lightly season with salt. Place the hot sardines and asparagus on top of the citrus. Spoon over some of the herby chile sauce, and sprinkle the rest of the sesame over the top. Serve the remaining sauce on the side.

- Place each salmon fillet in a piece of foil that is about 10 to 12 inches long or large enough to wrap around the salmon and make a "packet.".
- Generously season the salmon with dill weed, salt and pepper. Top each fillet with a slice of lemon, lime and orange. Wrap the foil, creating a packet, and place on the grill.
- Grill for 12 to 15 minutes or until salmon has cooked through. Cooking time will vary on thickness of the fillet and heat of the grill.
- Serve Citrus Salmon Fillets with a side dish, such as fresh veggies, brown rice or grilled garlic bread.

- Combine garlic, lemon thyme, salt and pepper, olive oil.
- Pour over salmon.
- Grill salmon for 6 to 8 minutes on each side, or until done.
- Juice 1 of each fruit.
- Segment the remaining fruit.
- In a bowl, combine 1/4 cup fruit juice and other remaining ingredients (except citrus segments).
- Taste and adjust seasonings.
- Saute spinach with olive oil.
- Plate spinach and top with salmon.
- Drizzle with vinaigrette and top with citrus segments.

- Place asparagus in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 4-5 minutes or until crisp-tender. Drain and set aside. In a skillet, saute onion and red pepper in butter until tender; set aside., In a large bowl, combine the cream cheese, mayonnaise, flour, eggs, cream, dill, basil and pepper until blended.
